Lemon Bars

Lemon Bars
YIELD: Makes 32 to 36 bars
INGREDIENTS:
Nonstick cooking spray
2 cups, plus 3 tablespoons, all-purpose flour, divided
1/2 cup powdered sugar, plus for topping
2 tablespoons cornstarch
1/4 teaspoon salt
3/4 cup butter
4 eggs, lightly beaten
1 cup granulated sugar
1 teaspoon lemon zest
3/4 cup lemon juice
1/4 cup light cream, half-and-half or milk
DIRECTIONS:
Heat oven to 350° F. Line 9-by-13-inch baking pan with foil; allow overhang. Grease foil with nonstick cooking spray; set aside. In large bowl, whisk 2 cups flour, 1/2 cup powdered sugar, cornstarch and salt. Using pastry blender, cut in butter until mixture resembles crumbs. Press mixture into bottom of baking pan. Bake 18-20 minutes.
To make filling: In medium bowl, whisk eggs, sugar, remaining flour, lemon zest, lemon juice and light cream. Pour filling over hot crust. Bake 15-20 minutes. Cool completely on wire rack. Grasp foil overhang and lift from pan. Cut into bars. Sprinkle powdered sugar over bars before serving.
Lime Cheesecake Bars

Lime Cheesecake Bars
YIELD: Makes 18 to 20 bars
INGREDIENTS:
1 1/4 cups all-purpose flour
1/3 cup sugar
7 tablespoons butter or margarine, softened and cut into 1/2-inch pieces
1 egg yolk, beaten
1/3 cup flaked coconut, packed
2 (8-ounce) packages plain cream cheese, softened
1 (14-ounce) can sweetened condensed milk
2 eggs
1/2 cup lime juice
DIRECTIONS:
Preheat oven to 400°F. With mixer fitted with flat paddle, combine flour and sugar; add butter and egg yolk; blend until combined. Mix in coconut. Press dough evenly into bottom of greased 13×9-inch glass baking dish. Bake 12 to 14 minutes. Reduce oven temperature to 350°F. With mixer, beat cream cheese until fluffy. Gradually beat in sweetened condensed milk until smooth. Add eggs; mix until just combined. Stir in lime juice. Pour batter over baked crust. Once oven has cooled to 350°F, bake 17 to 22 minutes or until center is set. Cool. Cover and chill 2 hours before serving.

I had an opportunity to sample six of the 12 highest ranking wines. Here are my tasting notes.
NV Crosskeys Vineyards, “Blanc de Noirs,” Brut, Shenandoah Valley, Virginia. (100% Pinot Noir) Citrus scented aroma with wondrous flavors of cherry, apples, and baked bread. Dry with notes of orange, gingerbread, and bitter almond with a creamy finish. A top-notch sparkling wine. Pair this bubbly with light fruit tarts or an apple crisp.
2022 October One Vineyard “Albariño,” Leesburg, Virginia. Pale golden color with a perfumed aroma of apricots, mango, kiwi, and white flowers. It’s dry with mouth-watering orange citrus notes and tasting almost like a green apple Jolly Rancher! Try it with fish tacos or vegetable tempura.
2022 Paradise Springs Winery “Petit Manseng,” Clifton, Northern Virginia. (Aged in “concrete eggs” for seven months.) Very aromatic with tropical fruit notes of pineapple, mango, and papaya. Dry with rich flavors of peach, pear, and dried apricot. Lemon and green apple aftertaste. Grilled halibut with a lemon-butter sauce works for me.
2019 Cave Ridge Vineyard “Fossil Hill Reserve” Red Wine, Shenandoah Valley, Virginia. (Blend of 60% Cabernet Franc, 20% Cabernet Sauvignon, 20% Petit Verdot) (Aged in both French and Hungarian oak barrels for 14 months.) Medium-full bouquet of dark fruit- black currants, cherries, and blackberries. Medium-bodied with flavors of black plums, tea, black olives, and vanilla. Still tannic with a pleasing aftertaste. Enjoy with a rack of lamb and spicy wild rice.
2019 Breaux Vineyards, The Fog “Nebbiolo Reserve,” Purcellville, Northern Virginia. (Aged 18 months in 85% French and 15% American oak barrels) Garnet red with a full bouquet and taste of black fruit, overripe cherries, balsam, spicy chocolate, and dried tobacco. Dry and warming with additional flavors of red licorice, cassis, and oak. The finish is balanced, and the aftertaste is quite long and pleasing. Pair with a blackened steak and gilled Romaine lettuce.
2017 Bluestone Vineyard “Petit Verdot,” Shenandoah Valley, Virginia. (Aged 22 months in American oak barrels). Deep, dark colored with an earthy, dark berry bouquet with flavors of black licorice, plums, dark chocolate, and vanilla. Additional hints of earth, nutmeg, smoke, and pencil shavings. Serve with smoky pulled pork and a side of grilled mushrooms.

The collective impacts to the environment to grow the food that sustains us is astronomical. Using more of the food you purchase is a worthwhile way to reduce your impact on the planet.
A recent article in Living Well (a Newsday supplement) points out that when it comes to produce it’s not just the typical vegetable target that you bought that’s edible, but often the entire plant. And the bonus is no food waste and your dollar is stretched a tiny bit further.
For example, you can eat all of a beet plant, not just the delicious roots. The stems and leaves are delicious when sautéed and the same whole plant approach can be taken with carrots and leeks. If you like collard greens or kale don’t throw away the “ribs” but sauté or roast them.
Another delicious use of the whole plant involves broccoli and cauliflower. The ribs and stems of both can be spiralized or disked and cooked. They taste as good as the heads themselves. No need to have any of these plant parts in your compost bin or worse yet in the garbage!

People share quite a bit about themselves when they’re reaching down to pet a pooch who stares them in the eyes, wags his tail and appreciates their attention.
Thoughts, ideas, and pieces of themselves come pouring out in a range of categories.
Shaggy dog tales: Friends, neighbors and strangers in a park often offer vignettes about their own dogs. They talk about how much they enjoy having them in the house, how their beloved pets are eating the furniture, and how delighted they are to return to the house to find creatures who, unlike their teenage children, are genuinely happy to see them.
Would that they could: Even as they pet my eager dog, they sometimes share wistful thoughts about how they’d like to have their own dog. They travel too much, can’t get up early enough or have friends and family members who are allergic. Some are still in mourning for their late canine friends and can’t imagine getting another one.
Dog whisperers: Then, there are those people who know what your dog is feeling and thinking far better than you, despite the fact that you have lived with your dog for years? They direct their not so-subtle observations to the dog. “Oh, you adorable puppy, you look so hot. Are you hot? Do you need water? Do you need a bath? Do you need a better owner than this eavesdropping oaf at the other end of your leash?” Or, perhaps, “Are you walking too far for your short legs? Do you wish your owner would get more of his exercise at the gym and less of it taking you for these marathon walks?” “Are you hungry? Do you need a snack? Is your mean old owner trying to lose weight himself so he’s not feeding you enough?” Sometimes, of course, those people are right and my dog is hot, tired, or hungry. Then again, he’s a dog attached to a stomach, so he’s always hungry.
Feel free to unload while my dog does the same: While my dog relieves himself, people share considerable information about their lives. One woman told me, in eerie overtones with the show “Dear Evan Hansen,” how she and her ex-husband felt the need to intervene with a daughter battling mental health issues. Fortunately, the daughter and her parents are doing well.
The keep away owners: Some dog owners use their dog or dogs as shields, walking them at rapid paces on tight leashes, making it clear that they, and their dogs, have no interest in catching up. They are out getting some air or exercise and they have no need to give their dogs a chance to sniff each other, or to compare thoughts on anything from the weather to the best way to get rid of that not-so-fresh dog smell.
The couple competition: Even as dogs have non verbal cues as they approach each other, so, too, do humans. Some couples, who are walking next to each other, break apart, as one person is eager to be the first to pet the dog. Like Groucho Marx, my dog is more interested in joining the clubs that might not want him as much, and maneuvers around the extended hand to try to win over the more reluctant walker. The eager petter will whine, “what about me?” My dog either ignores him or gives that person the dog equivalent of an exasperated eye roll.
The dog watchers: Yes, I know it sounds conspiratorial, but they do exist. People sometimes sit in their homes, watching carefully to see if a dog leaves an unattended, unwanted dropping on their lawn. Eager to catch their neighbors in the act, they have cameras at the ready to document the offending moment.
The fact collectors: Some people seem more interested in learning details about my dog than they do in hearing about me. They ask me to remind them how old he is — one day older than when you asked yesterday — how much he weighs, where I got him, how he sleeps, and what games he likes to play. With them, it might be better to skip the “How are you doing?” and go straight to “How’s your dog’s day going?”
Anumber of my relatives and friends were born in June, so that means lots of birthdays to celebrate. My dad was born in June, and so was my brother. My granddaughter’s birth, the first child of my middle son and daughter-in-law, lit up the month of June for me. She was the first girl in a long familial string of boys. Then there is my West Coast cousin and several friends who all made their appearance on Earth in the same month.
I’m not good at buying presents or mailing cards, but I do try my best to remember the dates and to extend happy wishes. I adore celebrations and the digital age has helped in that regard. I send texts and emails, and if I don’t think it will cause too much grief hearing my atonal voice, I call the person and sing a heartfelt “Happy Birthday.”
I learned of the entitlement of birthdays when I started elementary school. Feeling left out, I watched as classmates offered cupcakes and blew out candles that their mothers brought to class, while I rued the fact that I was a summer baby: no classmates, no groupsto sing to me.
Little did I know then that my dad’s family never celebrated his or his siblings’ birthdays. Perhaps it had something to do with there being nine children and that they were dirt poor.
My unfortunate mother never knew when she was born. Her mother, who could have told her, died when she was an infant, and I guess no one else really cared. All she knew was that it was sometime during harvest season.
Well, I changed all that.
I came home from school one day, I guess about second grade, and professed outrage at never having a birthday party. My parents, innocently trying to eat dinner, seemed at first puzzled, then embarrassed at the oversight. They asked me what a party would entail, and I explained about the cake, the candles, the guests and the presents. And when it was time for my birthday, they made amends, that year and every subsequent year until I was married.
I appreciated their response, even going so far as to assign my mother a birthday in the midst of October, which I assumed was harvest time, and which we then celebrated annually—I believe to my mother’s delight.
Did you know that birthdays are a fairly recent consideration?
According to “The Atlantic,” only in the middle of the 19th century did some middle-class Americans celebrate birthdays, and not until the early 20th century, when my parents were born, did birthday celebrations start to be a nationwide tradition. The magazine ties together birthday observances with the beginning of the Industrial Revolution, during which the matter of time became more of a focus generally due to factory and labor hours.
The song, “Happy Birthday to You,” the most popular song in the English language according to the Guinness World Records, is only somewhat older than its 100th birthday.
Supposedly two American sisters, Patty and Mildred J. Hill, composed the melody in 1893, but that’s disputed.
As the 20th century unfolded, birthdays became a time to honor ordinary individuals, usually with cakes and candles, but in some circles, with fruit. It has also become a reason for families and friends to gather, both to appreciate one of its members and to reunite, however briefly. Birthdays ending in 0’s and 5’s are particularly special.
Today, birthdays are often regarded by those experiencing them as a time for evaluating their lives. Have they met their goals? How are they doing compared to their contemporaries? Do they look their age? Are they living the lives they desire?
It’s a day to be pampered by one’s friends and loved ones and to pamper one’s self. Some people go on trips. Others buy themselves presents that perhaps they have always wanted.
And some, at the end of their day, breath a sigh of relief, knowing that they don’t have to face another birthday for a whole year.
This weeks shelter pet is Cadbury, a healthy, fluffy, all white, domestic (male) rabbit that was brought to the Smithtown Animal Shelter as a stray.
Animal experts initially believed there was a possibility someone would come looking for him, but no one did. Cadburys captivating personality suits his majestic good looks. He is very inquisitive and boasts a natural sense of adventure. While Cadbury is cautiously beginning to make new furry friends at the shelter, he will instantly befriend anyone willing to share a sweet treat with him. He’s all personality!
Cadbury would thrive in a home that can provide space for him to run and exercise. Small cages are not recommended, especially for a boy his size. Boating, whether for fishing, leisure or sport, is a cherished pastime that brings joy to many residents all over the Island. However, with the thrill and relaxation that come with boating, there is an accompanying responsibility that must not be overlooked — safety! This is why National Safe Boating Week, observed from May 18-24 this year, holds such significance for our waterfront communities.
National Safe Boating Week serves as a vital reminder of the importance of adhering to safety protocols on the water. Statistics from the U.S. Coast Guard highlight that the vast majority of boating accidents are preventable. In 2023 alone, there were 3,844 boating incidents, resulting in 564 fatalities. Alarmingly, 75% of these deaths were due to drowning, and 87% of those who drowned were not wearing life jackets. There was also a total of property damage of $63 million.
These statistics are a valuable reminder that simple precautions can save lives.
Importance of life preservers
One of the simplest yet most effective safety measures is wearing a life jacket. Modern life jackets are designed for comfort and ease of use. Ensuring that each passenger on your vessel is properly outfitted with a life jacket is a basic yet critical step in boating safety. It is not just about compliance with regulations, it is about safeguarding lives.
Boating safety courses
Understanding how to operate your boat and navigate the waters is crucial. Boating safety courses are widely available and provide essential knowledge on navigation rules, emergency procedures and boat handling. These courses are not just for beginners. Even experienced boaters can benefit from refresher classes to stay updated on the latest safety practices and regulations.

Don’t drink and drive
Alcohol is a leading contributing factor in fatal boating accidents. Like driving, operating a boat under the influence impairs judgment, balance and coordination, significantly increasing the risk of an accident. Our community must recognize that boating under the influence is not only illegal but also endangers everyone on the water. Designating a sober captain is a responsible choice that can prevent tragedies.
Be prepared
Being prepared for emergencies can make a significant difference in the outcome of a boating trip. This includes having a well-equipped first-aid kit, signaling devices and a fire extinguisher on board. Additionally, boaters should file a float plan with a friend or family member, detailing the trip’s destination, purpose and timeframe. This simple step can expedite rescue efforts in case of an emergency. Regular vessel safety checks are essential, too.
We share the responsibility of promoting and practicing boating safety. Even after National Safe Boating Week, let us commit to making our waterways safer for everyone. By embracing safety measures, educating ourselves and others and fostering a culture of responsibility, we can ensure that boating remains a joyous and safe activity for everyone. It is, after all, one of Long Island’s main attractions.

Meet Meowy
This special senior has the staff at the Smithtown Animal Shelter all by the heartstrings. Estimated to be around 14 years old, this black and white tuxedo gets along with dogs, children and other cats. Found as a stray with a severe abscess on her hind end, Meowy is all healed up, but it left a little weakness in her sphincter giving her occassional fecal incontinence where she sleeps. We know that this is not ideal, but there is a home out there that will love her despite this. She loves to be petted , eats up any attention you will give her, and will sit on your lap for hours. She is a good girl for grooming and vet visits. This love muffin would make a great addition to any home. 631-360-757

Peanut Butter is as delicious as her name…This adorable female, tan Dachshund mix is approximately ten years young and by all definitions, is absolutely perfect. This poor baby was surrendered to the Smithtown Animal Shelter through no fault of her own.She adores being in the company of people and will not hesitate to greet new friends with hopes of receiving a good petting in return. This sweet girl has a fondness for snuggles and has a lot of unconditional love to give one lucky family.
Peanut Butter’s ideal home can include a calm doggie sibling, possibly cats and kids preferably over the age of twelve. Free Rabies Vaccinations

Our understanding of type 2 diabetes management is continually evolving. With this, we need to retire some older guidance. Here, we review a few common myths and the research that debunks them.
Myth: Fruit should be limited or avoided.
Fact: Diabetes patients are often advised to limit fruit in any form — whether whole, juiced, or dried — because it can raise your sugars. This is only partly true.
Yes, fruit juice and dried fruit should be avoided, because they do raise or spike glucose (sugar) levels. This includes dates, raisins, and apple juice, which are often added to “no sugar” foods to sweeten them. The same does not hold true for whole fruit, whether fresh or frozen. Studies have shown that patients with diabetes don’t experience sugar level spikes, whether they limit whole fruits or consume an abundance (1). In a different study, whole fruit was even shown to reduce the risk of type 2 diabetes (2).
In yet another study, researchers considered the impacts of different types of whole fruits on glucose levels. They found that berries reduced glucose levels the most, but even bananas and grapes reduced these levels (3). That’s right, bananas and grapes, two fruits people associate with spiking sugar levels and increasing carbohydrate load, actually lowered these levels. The only fruit tested that seemed to have a mildly negative impact on sugars was cantaloupe.
Whole fruit is not synonymous with sugar. One reason for the beneficial effect is the fruits’ flavonoids, or plant micronutrients, but another is their fiber.
Myth: All carbohydrates raise your sugars.
Fact: Fiber is one type of carbohydrate that has distinct benefits. It is important for reducing risk for an array of diseases and for improving their outcomes. This is also true for type 2 diabetes.
Two very large prospective observational studies, the Nurses’ Health Study (NHS) and NHS II, showed that plant fiber helped reduce the risk of type 2 diabetes (4). Researchers looked at lignans, a type of plant fiber, specifically examining the metabolites enterodiol and enterolactone. They found that patients with type 2 diabetes have substantially lower levels of these metabolites in their urine, compared to the control group without diabetes. There was a direct relationship between the amount of metabolites and the reduction in diabetes risk: the more they consumed and the more metabolites in their urine, the lower the risk. The authors encourage patients to eat more of a plant-based diet to get this benefit.
Foods with lignans include cruciferous vegetables, such as broccoli and cauliflower; an assortment of fruits and whole grains; flaxseed; and sesame seeds (5). The researchers could not determine which plants contributed the greatest benefit; however, they believe antioxidant activity drives this effect.
Myth: You should you avoid soy when you have diabetes.
Fact: In diabetes patients with nephropathy (kidney damage or disease), soy consumption was associated with kidney function improvements (6). There were significant reductions in urinary creatinine levels and proteinuria (protein in the urine), both signs that the kidneys are beginning to function better.
This was a four-year, small, randomized control trial with 41 participants. The control group’s diet comprised 70 percent animal protein and 30 percent vegetable protein, while the treatment group’s diet consisted of 35 percent animal protein, 35 percent textured soy protein and 30 percent vegetable protein.
This is very important, since diabetes patients are 20 to 40 times more likely to develop nephropathy than those without diabetes (7). It appears that soy protein may put substantially less stress on the kidneys than animal protein. However, those who have hypothyroidism and low iodine levels should be cautious about soy consumption; some studies suggest it might interfere with synthetic thyroid medications’ effectiveness (8).
Myth: Bariatric surgery is a good alternative to lifestyle changes.
Fact: Bariatric surgery has grown in prevalence for treating severely obese (BMI>35 kg/m²) and obese (BMI >30 kg/m²) diabetes patients. In a meta-analysis of 16 randomized control trials and observational studies, the procedure led to better results than conventional medicines over a 17-month follow-up period for HbA1C (three-month blood glucose), fasting blood glucose and weight loss (9). During this period, 72 percent of those patients treated with bariatric surgery went into diabetes remission and had significant weight loss.
However, after 10 years without proper management involving lifestyle changes, only 36 percent remained in diabetes remission, and many regained weight. Thus, even with bariatric surgery, altering diet and exercise are critical to maintaining long-term benefits.
