Brown Butter Pierogies with Roasted Sweet Potatoe

Cooler days call for comforting flavors the entire family can enjoy at the dinner table like roasted veggies paired with hearty favorites like cheesy pierogies  followed by an apple crisp paired with pears and walnuts that provide a sense of warmth and coziness. Make this autumn one to remember by creating new meals and memories along the way.

Brown Butter Pierogies with Roasted Sweet Potatoes

Brown Butter Pierogies with
Roasted Sweet Potatoes

YIELD: Makes 4 servings

INGREDIENTS:

1 bag (1.6 pounds) cheese pierogies 

2 cups sweet potato cubes

1 tablespoon olive oil

salt and pepper, to taste 

4 tablespoons salted butter

1 tablespoon balsamic vinegar

2 tablespoons lemon juice

1/2 cup pecans

fresh thyme leaves, for serving

DIRECTIONS:

Preheat oven to 400 F. Toss sweet potato cubes in olive oil, salt and pepper, to taste, and spread in even layer on baking sheet. Roast 25-30 minutes, tossing about halfway through, until potatoes are fork tender. 

In medium skillet over medium heat, brown butter 5-10 minutes. Avoid smoking or burning. Remove from heat. Allow to cool about 5 minutes then whisk in balsamic vinegar and lemon juice.

In large saucepan, bring water to boil. Cook pierogies according to package directions, about 3 minutes. Drain and toss in brown butter sauce. Add roasted sweet potatoes and pecans to brown butter pierogies and toss gently to coat. Top with fresh thyme leaves before serving.

Apple Pear Walnut Crisp

YIELD: Makes 4 servings

INGREDIENTS:

Walnut Crisp Topping:

1 1/2  cups California walnuts, divided

1/4 cup all-purpose flour

1/3 cup brown sugar

1/2 cup quick-cooking oats

1/2 teaspoon ground cinnamon

1/2 cup butter, chilled and sliced into 1-tablespoon pieces

 

Apple Pear Filling:

3 Granny Smith apples, peeled and sliced into 1/4-inch slices

2 D’Anjou pears, peeled and sliced into 1/4-inch slices

1/2  cup granulated sugar

2 tablespoons cornstarch

1 teaspoon cinnamon

1/8  teaspoon salt

1 tablespoon lemon juice

ice cream (optional)

caramel sauce (optional)

DIRECTIONS:

To make walnut crisp topping: In food processor, pulse 1 cup walnuts until finely ground. In small bowl, combine ground walnuts, flour, brown sugar, oats and cinnamon. Cut butter into mixture until coarse crumb forms. Coarsely chop remaining walnuts and stir into crumb mixture until incorporated. Set aside.

To make apple pear filling: Preheat oven to 350 F. In bowl, toss apples, pears, sugar, cornstarch, cinnamon, salt and lemon juice. Place fruit mixture in bottom of 10-inch cast-iron pan or baking dish. Sprinkle walnut crisp topping mixture over fruit. Bake 45 minutes, or until fruit mixture is hot and bubbly and topping is golden brown. Top with ice cream and caramel sauce, if desired.

The Greater Port Jefferson Chamber of Commerce (PJCC) hosted a ribbon cutting ceremony to celebrate the grand opening of the new offices for Edward Jones Financial Advisor Michael Sceiford on Sept. 26. The event was attended by members of the chamber, Port Jefferson Village Board, Port Jefferson Rotary Club, staff, family and friends.

Located at 640 Belle Terre Road, Building B, in Port Jefferson, the investment firm helps its customers prepare for retirement, save for education and be a tax-smart investor.

Chocolate-Pumpkin Cake

Fall is about cooler weather, football, sweaters and warm, delicious food. It’s about gathering around the table with loved ones to enjoy a snack or meal and making memories that will last a lifetime. This season, when you’re craving something sweet, try these fall desserts which pair savory pumpkin and decadent chocolate for a nontraditional flavor combination that’s hard to resist.

Chocolate-Pumpkin Cake

Chocolate-Pumpkin Cake

YIELD: Makes 9 servings

INGREDIENTS:

2 eggs

1/2 cup sugar

1/2 cup plus 1 tablespoon olive oil

2/3 cup pumpkin puree

1 cup flour

2 to 3 tablespoons cocoa powder

1/4 teaspoon salt

1/2 teaspoon baking powder

DIRECTIONS:

Preheat your oven to 350 F and line an 8×8-inch baking dish with parchment paper. Crack the eggs into a mixing bowl and add the sugar. Beat with a hand mixer until bubbles form. Slowly add the olive oil while whisking. Add the pumpkin puree. Sift in the flour, cocoa powder, salt, and baking powder. Whisk until well combined. 

Pour the batter into your prepared baking dish and level it out. Bake for 15 minutes, or until a toothpick inserted in the center of the cake comes out clean. Let cool for at least 15 minutes. Remove the cake from the dish using the parchment paper and slice to serve.

YIELD: Makes 12 servings

INGREDIENTS:

Nonstick cooking spray

1 1/2  cups all-purpose flour

1/2 teaspoon salt

1/2 teaspoon baking powder

1/2 teaspoon baking soda

2 teaspoons pumpkin pie spice

1 cup canned pumpkin

1/3 cup brown sugar

1/3  cup granulated sugar

1/2 cup vegetable oil

3 eggs, at room temperature

1/2 tablespoon vanilla extract

1 cup semi-sweet chocolate chips

1 cup mini semi-sweet chocolate chips

DIRECTIONS:

Preheat oven to 350 F. Spray 8-by-4-inch loaf pan with nonstick cooking spray and line with parchment paper. Set aside.

In large bowl, whisk flour, salt, baking powder, baking soda and pumpkin spice. Set aside. 

In medium bowl, combine canned pumpkin, brown sugar, granulated sugar, oil, eggs and vanilla extract. Stir together. Stir wet ingredients into dry ingredients; mix until combined. Fold in chocolate chips. 

Pour batter into loaf pan. Bake 45-50 minutes until toothpick inserted in center comes out clean. Cool at least 10 minutes in pan before removing to wire rack to finish cooling.

Sweet Tea

MEET SWEET TEA!

Sweet Tea is a delightful one year-old Female Pit Mix who arrived at the Smithtown Animal Shelter after being found wandering around busy roads and trying to get into passing cars. Her time as a stray left her a little underweight, and there were some signs that she had a recent litter.

After initially being somewhat unsure of herself in her new surroundings, she has shown the shelter staff just how friendly and loving she can be! Sweet Tea is a small ball of energy and an absolute pleasure to be around. She enjoys meeting anyone who will give her some attention, and she responds positively to training. Sweet Tea would do well in a home with older children, and she’ll likely get along with most other dogs that can tolerate her social behavior.

If you are interested in meeting Sweet Tea, please fill out an application to schedule time to properly interact with her in a domestic setting, which includes a Meet and Greet Room, the dog runs, and a Dog Walk trail.

MEET JITTERBUG!

This week’s featured shelter pet is Jitterbug, a white and tan female terrier mix currently up for adoption at the Smithtown Animal Shelter. 

Approximately three years old, sweet Jitterbug is a Southern Belle who was adopted from Florida and then surrendered to the shelter on Sept. 16 due to a penchant for escape. 

Jitterbug is a social butterfly who loves to meet new people. This young lady is spirited and full of boundless energy. She needs help with some manners, but is otherwise a delightful young girl.

If you would like to meet Jitterbug, please call ahead to schedule an hour to properly interact with her in a domestic setting.

Each year the Adirondack Glassblowing Studio (ADK) produces thousands of gorgeous hand-blown glass pumpkins to create beautiful outdoor fall decor. ADK Glass partners with numerous non-profits nationwide on weekends throughout the fall season. 

During the weekend of September 29 to October 1, ADK Glass and the Town of Smithtown will host a Glass Pumpkin Patch Fundraiser at Hoyt Farm Nature Preserve at 200 New Hwy, Commack from 10 a.m. to 5 p.m. in support of Nesconset-based Paws of War. 

Attendees at Hoyt Farm will enjoy a walking path lined with straw bales covered with hundreds of colorful glass pumpkins and experience the fall foliage on Hoyt Farm’s Nature Preserve. Twenty percent of proceeds from the weekend event will support Paws of War in furthering their mission of “Helping Both Ends of the Leash.”  

Paws of War is a 501(c)(3) nonprofit organization whose mission is to train and place service animals and companion dogs to support and provide independence to U.S. military veterans that suffer from the emotional and physical effects of war. 

The organization also provides animal rescue for U.S. troops who have befriended an animal while serving overseas. The organization also serves as a community center where veterans and first responders come together daily to build bonds and support each other.
