Suffolk County Police arrested a Central Islip man on July 7 for four robberies and an attempted robbery in
Suffolk County since May.

After an investigation, Major Case Unit detectives determined Andre Desvignes was responsible for robbing the following places:

• Bethpage Federal Credit Union, 233 South Research Place, Central Islip, on May 30.
• United States Postal Service, located at 136 Carleton Ave., Islip Terrace, on June 21.
• Bethpage Federal Credit Union, located at 233 South Research Place, Central Islip, on June 29.
• United States Postal Service, located at 136 Carleton Ave., Islip Terrace, on July 7.

Desvignes, 55, also attempted to rob Bethpage Federal Credit Union, located at 1350 Deer Park Ave., on July 5.
He was charged with four counts of Robbery 3rd Degree, and one count of Attempted Robbery 3rd Degree.

Spiced Pecan Grilled Peach Salad

From an enjoyable crunch to comforting creaminess and a satisfying chew, pecans deliver a perfect bite and texture. This Spiced Pecan Grilled Peach Salad and Grilled Pork Chops with Peach Pecan Salsa are loaded with fresh flavors for an easy, nutritious warm-weather meal.

Spiced Pecan Grilled Peach Salad

Spiced Pecan Grilled Peach Salad

YIELD: Makes 4 servings

INGREDIENTS:

Spiced Pecans:

1 large egg white

3 tablespoons dark brown sugar

1 teaspoon cinnamon

1/4 teaspoon cayenne pepper

1/4 teaspoon kosher salt

2 cups pecan halves

Salad:

1/4 cup, plus 2 teaspoons, extra-virgin olive oil or pecan oil, divided

1/4 cup white wine vinegar

1 teaspoon Dijon mustard

1/4 teaspoon garlic powder

salt and pepper, to taste

2 large peaches, halved and pits removed

6 cups mixed baby greens (such as arugula, spring mix and spinach)

4 ounces soft goat cheese

DIRECTIONS: 

To make spiced pecans: Preheat oven to 275 F. Line rimmed baking sheet with parchment paper and set aside. In medium bowl, whisk egg white, brown sugar, cinnamon, cayenne pepper and salt until well combined. Fold in pecans and mix until evenly coated in mixture. Spread in single layer on prepared baking sheet. Bake 45-50 minutes, stirring occasionally until pecans are fragrant and golden brown. Allow to cool completely.

To make salad: Heat grill to medium-high heat. In small bowl, whisk 1/4 cup olive oil, white wine vinegar, Dijon mustard, garlic powder, salt and pepper, to taste. Set aside. Brush cut sides of peach halves with remaining olive oil and grill until grill lines appear and peaches become tender, 3-5 minutes. Remove peaches and cut into slices. Divide greens among four plates. Top with grilled peach slices and goat cheese. Divide 1 cup spiced pecans evenly among salads and reserve remaining cup for snacking. Drizzle each salad with vinaigrette.

Grilled Pork Chops with Peach Pecan Salad

 

YIELD: Makes 4 servings

INGREDIENTS:

4 boneless pork loin chops (each 1-inch thick)

3/4 teaspoon, plus 1/8 teaspoon, kosher salt, divided

 freshly-ground black pepper, to taste

2 medium peaches, diced

2/3 cup raw pecan pieces

2 tablespoons red onion, diced

2 tablespoons chopped fresh basil

1 teaspoon minced jalapeno pepper

2 teaspoons lime juice

DIRECTIONS: 

Season pork chops with 3/4 teaspoon salt and black pepper, to taste. Heat grill or grill pan to medium-high heat. Grill pork chops until browned, about 5 minutes. Flip and cook 5-6 minutes until food thermometer inserted in center registers 135 F. Transfer to plate and rest at least 5 minutes until internal temperature rises to 145-160 F. Gently stir peaches, pecans, onion, basil, jalapeno, lime juice and remaining salt. Add salsa on top of each pork chop with remaining salsa on side.

The Ward Melville Heritage Organization (WMHO) kicked off the season with their annual Summer Soirée fundraiser at the Three Village Inn on June 22. The event honored outstanding members of the community including Olivia and Harlan Fischer, Katharine Griffiths, Sally Lynch, Nicole Sarno, and awarded posthumously, philanthropist Judi Betts and featured a live auction.

The primary purpose of the fundraising efforts was to support the restoration of the 20’ wooden eagle that is affixed to the pediment above the Stony Brook Post Office. This beloved local and national treasure has flapped its wings every hour on the hour for over 80 years.

'Summer Sunset' by Joseph Reboli

Mia

This week’s shelter pet is Mia, a four-year-old pit bull mix who came to the Smithtown Animal Shelter in 2020 after she was hit by a car (minor fractures in her no foot and some scrapes). Despite being scared and injured, she started bonding with the staff immediately.

Mia is a volunteer favorite as she is equal parts goofball and cuddle buddy. She can entertain herself for hours with any toy, loves going for walks and enjoys being snuggled on the couch. Mia does wish to be your only pet and she has “stranger danger”, meaning she needs proper introductions to new people. Once she has gotten to know someone, they are her friend for life.

July 4th celebrations are much anticipated each year. Whether they include an intimate barbecue with a close-knit group of friends or a massive block party with everyone from the neighborhood, there’s a strong chance that food will be part of the party.

As various menu items will hit the grill, hosts and hostesses may wonder which desserts to serve to make their events complete. While there is seemingly nothing more American than apple pie, cookies also can be sweet ways to help wrap up the festivities. 

Sugar cookies are a universal favorite, and in this recipe for “Fourth of July Cookie Cups” they’re shaped into cups filled with a buttercream frosting. Enjoy this star-spangled showcase, courtesy of “Live Well, Bake Cookies” (Rock Point) by Danielle Rye.

Fourth of July Cookie Cups

YIELD: Makes 24 cookie cups

INGREDIENTS:

Nonstick cooking spray, for greasing pan

11⁄2 cups all-purpose flour, spooned and leveled

1 teaspoon cornstarch

1⁄2 teaspoon baking powder

1⁄4 teaspoon salt

1⁄2 cup (1 stick) unsalted butter, softened

3⁄4 cup granulated sugar

1 large egg, at room temperature

1 teaspoon vanilla extract

Red, white and blue sprinkles, for topping

   Vanilla Buttercream Frosting

1⁄2 cup (1 stick) unsalted butter, softened

11⁄2 cups powdered sugar

1 tablespoon heavy whipping cream or milk

1 teaspoon pure vanilla extract

DIRECTIONS: 

To make the cookie cups: preheat the oven to 350 F. Spray a 24-count mini muffin pan with nonstick cooking spray and set aside. In a large mixing bowl, whisk together the flour, cornstarch, baking powder, and salt. Set aside. In the bowl of a stand mixer fitted with the paddle attachment or in a large mixing bowl using a handheld mixer, beat the butter and granulated sugar together for 1 to 2 minutes, or until well combined.

Mix in the egg and vanilla extract until fully combined, making sure to stop and scrape down the sides of the bowl as needed. Mix in the dry ingredients until just combined. Evenly distribute the cookie dough among all 24 cups in the mini muffin pan, a little more than 1 tablespoon of cookie dough per cup. Press each ball of cookie dough into the cups and smooth it out.

Bake for 11 to 13 minutes, or until the edges of the cookie cups are lightly browned and the tops are set. Remove from the oven, and make an indentation in each cookie using the back of a measuring spoon. Allow to cool in the muffin pan, then carefully remove from the pan and set aside.

To make the vanilla buttercream frosting: In the bowl of a stand mixer fitted with the paddle attachment or in a large mixing bowl using a handheld mixer, beat the butter for 1 to 2 minutes until smooth. Add the powdered sugar, 1⁄2 cup at a time, mixing in each addition until well combined. Add the heavy whipping cream and vanilla extract, and continue mixing until fully combined, stopping to scrape down the sides of the bowl as needed. Pipe the frosting into the cooled cookie cups and top with the sprinkles.

Store the cookie cups in an airtight container at room temperature or in the refrigerator for up to 4 days.
