Pan Seared Salmon with Cucumbers and Crème Fraîche

If it’s simply too hot to cook outdoors, Pan Seared Salmon with Cucumbers and Crème Fraîche offers a reprieve from the heat by putting your stovetop to work. Mix fresh cucumbers, red onion, dill and creme fraiche for a cool, creamy side then sear salmon seasoned with salt and pepper for a savory summer dish.

When you’re ready to head outside and fire up the grill, Cedar Plank Salmon with Miso Soy Glaze combines light, flaky salmon with a sweet homemade sauce to highlight the flavors of the season. Plus, it’s served right off cured cedar planks for an added touch. 

Pan Seared Salmon with Cucumbers and Crème Fraîche

Pan Seared Salmon with Cucumbers and Crème Fraîche

YIELD: Makes 4 servings

INGREDIENTS:

Cucumbers and crème fraîche:

4 cucumbers, sliced 1/8-inch thick (about 4 cups)

1 small red onion, diced

2 tablespoons sea salt

2 tablespoons rice wine vinegar

1tablespoon dill, chopped

1/4 cup crème fraîche

Pan Seared Salmon:

1 1/2 pounds salmon fillet

salt, to taste

pepper, to taste

3 tablespoons grapeseed oil

DIRECTIONS: 

To make cucumbers and crème fraîche: In medium plastic container or flat-bottomed bowl, place cucumbers in single layer then sprinkle in some red onion and some salt. Repeat 4-5 times until all cucumbers and onions are layered. Cover and refrigerate 2-8 hours. Drain water from cucumbers and onions by pressing firmly (do not rinse). Add vinegar and toss to combine. Just before serving, stir in dill and crème fraîche.

To make pan seared salmon: Debone and cut salmon into four pieces; season lightly with salt and pepper, to taste. In large saute pan, heat grapeseed oil and sear salmon. When slightly golden-brown, flip salmon and cook just long enough to sear other side. Remove from pan and place on platter with cucumbers and creme fraiche.

Cedar Plank Salmon with Miso Soy Glaze

YIELD: Makes 2 servings

INGREDIENTS:

2 cedar planks

2 teaspoons honey

1 tablespoon white miso

1 tablespoon rice wine vinegar

2 teaspoons soy sauce

1 garlic clove, minced

1 pound salmon fillet, skin on, cut into two pieces

salt and pepper to taste

DIRECTIONS: 

To prepare cedar planks: Soak planks in water 1 hour. Heat oven to 375 F. Wash, oil and bake planks about 10 minutes to cure. Heat grill to medium-high heat for indirect grilling. 

In small bowl, mix honey, miso, rice vinegar, soy sauce and garlic. Cut salmon to fit planks. Season salmon with salt and pepper, to taste; spread miso mixture on flesh side. Let stand at room temperature 10-15 minutes. Lay salmon on planks skin side down. Place planks on grill adjacent to heat source and close lid. 

Cook 15-25 minutes, depending on thickness, until internal temperature reaches 125-135 F. Transfer salmon and planks to platter and serve.

Traditional Greek food, music and dancing will take center stage as the Greek Orthodox Church of the Assumption in Port Jefferson hosts its 62nd annual Greek Festival on church grounds tonight, Thursday, Aug. 24 from 5 to 10 p.m.,  Friday, Aug. 25 from 5 to 11 p.m., Saturday, Aug. 26 from noon to 11 p.m. and Sunday, Aug. 27 from noon to 10 p.m. 

A celebration of Greek culture, the four-day event will feature a variety of vendors, fireworks, church tours, live Greek music and dancing, games of chance and carnival rides by Newton Shows. Pay-one-price bracelets for the rides may be purchased in advance at www.newtonshows.com.

Authentic mouth-watering foods such as gyros, tyropita (cheese pie), moussaka, souvlaki, and spanakopita (spinach pie) will be served up, along with sweet desserts such as galaktoboureko, koulourakia, baklava and loukoumades, a fried dough pastry favorite.

One of the main attractions at the festival is the over-the-top sweepstakes that the church holds every year. This year 200 prizes will be awarded from cars — a 2023 Mercedes Benz CLA 250 C4 is first prize — to an Apple Watch, 10″ Samsung Tablet, Smart TV, Ring Security Camera, a fire pit, Nintendo Switch, Robot Roomba, espresso machine, Michael Kors handbag, Coach handbag, cash prizes and more. Tickets for the sweepstakes are $100 each and are limited to 4,499 tickets. The drawing will be held on Aug. 27 at 8 p.m.

The event is also an opportunity to see traditional Greek dance performances by the St. John’s Hellenic Dancers who will take to the dance floor on Saturday at 7 p.m. Fireworks will be held on Friday and Saturday nights at 9:15 p.m., weather permitting. 

Free shuttle buses will pick up attendees from Ward Melville High School, 380 Old Town Road, East Setauket to transport them to festival on Friday, Saturday and Sunday only. Parking is also available at BASF Corporation across the street from the church at 361 Sheep Pasture Road and at Head Start at 400 Sheep Pasture Road. Handicapped parking is available at the church. Admission to the festival is $2 per person; children under 12 can attend for free.

Greater Port Jefferson Chamber of Commerce hosted a ribbon cutting for Hair, Lash & Brow Bar in the Village of Port Jefferson on Aug. 6. 

The well-attended celebration included members of the chamber, Town of Brookhaven Councilmember Jonathan Kornreich, staff, family and friends who came out to wish new owner Julianna Cordi the best of luck in her new venture and included a catered party, special themed cake, favors, and a champagne toast.

Located at 138 East Main Street, the full-service salon offers everything from blow-outs, hair cuts and color to hair extensions, lash extensions and spa facials.

Members of the Three Village Chamber of Commerce, Brookhaven Town Councilmember Jonathan Kornreich, mascot Dee Dee the Chickadee, staff, friends and family joined Brooke Ramirez in celebrating the grand opening of her second retail location of Wild Birds Unlimited in Suffolk County with a ribbon cutting on Aug. 2. 

Ramirez (pictured with scissors) is also the owner of the Wild Birds Unlimited nature shop at 911 Montauk Highway in Oakdale, having been the manager of that store prior to her purchase in 2021. After successfully growing the business in Oakdale over 16 years, she has built another “nest” in East Setauket to “bring people and nature together” on the North Shore. 

Located at 4046 Nesconset Highway, East Setauket in the Kohl’s shopping center, Wild Birds Unlimited employs “certified specialists” who will help you shop for bird baths, feeders, houses and a large selection of birdfood for your backyard friends. In addition, the store offers a large selection of nature-themed gift items for the home and yard as well as personal care products. MEET TATER!

This week’s featured shelter pet is Tater, currently up for adoption at the Smithtown Animal Shelter, 410 E. Main St., Smithtown. This 5-year-old male tabby was found as part of the shelter’s TNR program in 2018. He was blind from birth and adopted as a kitten. Grilled Chicken Sandwich with Pesto

I was telling my friend John the other day how my garden has gone rogue and is now spilling over the raised beds onto the lawn. Tomatoes, peppers, string beans and basil — all out of control and growing like weeds. I guess that could be a good thing too. Now there’s plenty to share with neighbors. Here are two delicious recipes to try if you have a bumper crop of tomatoes and basil.

Grilled Chicken Sandwich with Pesto

YIELD: Makes 4 servings

INGREDIENTS:

1/2 cup olive oil, divided

2 tablespoons lemon juice

1 clove garlic, minced

1/2 teaspoon kosher salt

1/2 teaspoon freshly ground pepper

1 pound thin-cut chicken cutlets

1/4 cup basil pesto, divided

1 large tomato

8 slices crusty sourdough bread

4 ounces Brie, thinly sliced

1 cup packed baby arugula

DIRECTIONS: 

Heat grill to high. Combine 1/4 cup olive oil, lemon juice, garlic, salt and pepper; pour into plastic zipper bag. Add chicken, seal and marinate at least 30 minutes. Grill chicken 2-3 minutes, turn and grill another 2-3 minutes, or until chicken registers internal temperature of 160 F. Remove and reserve. 

Spread each piece of bread with 1/2 tablespoon pesto. Slice tomato into eight slices. Place chicken on four bread slices. Top with Brie slices, arugula and two tomato slices. Top with remaining bread slices, pesto side toward tomato. Brush outside of each sandwich with about 1/2 tablespoon of remaining olive oil. 

Place on grill, reduce heat to medium and grill 2-3 minutes per side, or until bread is nicely toasted and cheese is melted. Remove from heat, cut each sandwich in half and serve.

Pasta Salad with Tomatoes

Pasta Salad with Tomatoes

YIELD: Makes 8 servings

INGREDIENTS:

8 ounces regular or whole-wheat rotini or rotelle pasta, cooked according to directions

1/4 cup balsamic vinegar

4 tablespoons finely chopped fresh basil, divided

salt and pepper, to taste

3 tablespoons extra-virgin olive oil, divided

4 cloves garlic, minced and divided

1 medium green bell pepper, finely chopped

10 to 15 cherry tomatoes, cut in half

1 slice whole-wheat or multigrain bread

DIRECTIONS: 

In bowl, cover and chill pasta. In large mixing bowl, combine vinegar, 2 tablespoons basil, salt, pepper, 2 tablespoons oil and half of minced garlic. Whisk to combine well. Add pasta, bell pepper and tomatoes, and toss gently until well coated.

In food processor or blender, pulse bread to produce coarse crumbs. In medium skillet, heat remaining oil over medium-high heat. Stir in breadcrumbs and garlic. Saute 1 1/2-2 minutes until browned and crisp. Remove from heat and let cool. 

Top pasta with garlic crumbs and remaining basil before serving.

‘Invisible Threads’

Coinciding with National Radio Day, the Cinema Arts Centre, 423 Park Ave., Huntington will host a special screening of the award-winning documentary Invisible Threads — From Wireless to War on Aug. 20 at 7 p.m. While Nikola Tesla, Guglielmo Marconi and a mysterious German wireless plant compete for radio supremacy off the east coast of Long Island, the unseen casualties of war threaten to divide a nation. The charity screening will benefit the Cinema Arts Centre  and the Tesla Science Center at Wardenclyffe, and will feature a live Q&A with filmmaker Joseph Sikorski and Marc Alessi, Executive Director of the Tesla Science Center.
