Town of Huntington Supervisor Ed Smyth, Receiver of Taxes Jillian Guthman and Town officials were joined by Covanta and local students to plant 200 donated trees at Koster Park in Huntington Station for Arbor Day on April 29. 

“It is so important to maintain our tree canopy; it adds shade, which reduces the need for artificial cooling, and it filters stormwater runoff to stop contaminants from entering our water supply,” said Supervisor Ed Smyth. “Thank you to Covanta and our anonymous donor, as well as the Girl Scouts, Boy Scouts and Huntington High School honor students for your dedication to preserving our green space, this is our largest Arbor Day turnout yet!” 

“I’m proud to celebrate Arbor Day with Supervisor Smyth, many of our local Scouts, students and Covanta with the planting of trees at Koster Park, one of the many hidden jewels of Huntington,” said Receiver of Taxes Jillian Guthman. 

“We are once again delighted to partner with the Town of Huntington and Supervisor Smyth to plant trees in honor of Arbor Day.  Initiatives like this one are so important to preserving Long Island’s natural resources. We are grateful to our municipal leaders for joining with us as great environmental stewards,” said Maureen Early, Senior Community Affairs Specialist for Covanta. Joining the event from Covanta were Asset Manager Dawn Harmon and Shari Kleinman from the Covanta Huntington Facility. 

Girl Scouts, Boy Scouts and students from the Huntington High School Honor Society helped plant bare root saplings at the park. 

“Members of the Girl Scouts of South Huntington are honored to be a part of the Town of Huntington Arbor Daytree planting at Koster Park. The girls will expand their knowledge about caring for the environment, using resources wisely and making the world a better place,” said Catherine Galli, Coordinator for Girl Scouts Service Unit 12 in South Huntington, who was joined by Troop Leaders Christine Reilly, Bonnie Millman, Kristie Mondo, LeeAnne Ramirez and Wendy Aull with Girl Scouts from Service Unit 12, including Junior Troop 161, Daisy Troop 32 and 74, and Brownie Troop 703 to help plant bare root saplings.  

Boy Scouts Troop 34 Scoutmaster Mike Fasciano and Assistant Scoutmaster Dominic Dutton were joined by Boy Scouts from Troop 34 for the tree planting.  

“The Cub Scouts are all about having fun with a purpose,” said Scott Wallick, Cubmaster for Pack 406 of South Huntington. “There is a reason for everything our boys and girls do in Cub Scouting, and today’s events will help them ‘think globally’ and ‘act locally’ to preserve and improve our environment. We are grateful to have been a part of the Town of Huntington’s Arbor Day tree planting.” Cub Scouts Pack 406 Assistant Pack Leader Jennifer Rodriguez was joined by Cub Scouts from Pack 406 to plant trees at the event. 

Joining the event from the Town’s Department of Planning and Environment to teach the students about the trees and demonstrate how to plant the bare root saplings were Christian Granelli, Elana Israel-Edgar, Dave Kaufman and Vincent Cerniglia.  

 From the Department of Parks and Recreation, Director Todd Jamison and Deputy Director Walter Edwards joined the event with Town Volunteer Parks Stewards David Lesser and Christopher Zonin. 

The ceremony involved the planting of a Caliper Pin Oak donated by Covanta and 200 additional bare root saplings consisting of 25 each of Flowering Dogwood, Highbush Cranberry, Buttonbush, Ninebark, Black Chokeberry, Virginia Rose, Witch Hazel, and Winterberry donated anonymously to the Town of Huntington to commemorate Arbor Day; the Town Board accepted the donations at their April 12 meeting.

This past Easter Sunday was my first without my wife Cindy. On the little dining room table that she brought home from Europe, beneath the candy-colored mini-chandelier acquired on the same trip, I set a holiday table. I reheated crab cakes, stirred up some homemade hollandaise, and sat down to a tasty, albeit solitary, meal.  

I celebrated Easter remembering how Cindy made it festive. She made every holiday festive, none more so than Christmas. She celebrated to the max: decorating, cooking, doling out family tales about her resourceful, hard-toiling immigrant ancestors from England, Holland, Germany, and Ireland. 

I come from a Jewish family with roots in Poland and Belarus; Easter and Christmas were terra incognita. I offered immigrant stories too, plus treats like halvah and matzo brei. Of gefilte fish, the less said the better. 

On Easter, Cindy baked ham, broiled asparagus, boiled potatoes, and prepared quiche. The ham she shared with her mother, Patricia, who had come to live with us in Stony Brook. The quiche, the designated vegetarian plate, was for me. The asparagus was for all. I made matzo brei, the traditional egg and matzo casserole.

The memories of those meals and other occasions warm my heart. My beautiful wife died of leukemia in February. Her mother passed away a year earlier from heart disease. I’ve inherited many of their rituals, including Easter brunch and Christmas celebrations. Now they’re my traditions, too.

My mother-in-law Patricia Slattery, who went by Pat, grew up in the fifties on a farm in Huntington. She got a job working for lawyers while still in high school, surprising her parents. She married Larry Smith, a Navy vet returning from the Korean war, and the couple settled in Smithtown. In a way it was a homecoming, as Larry claimed descent from Smithtown founder Richard “Bull” Smith.  

He opened an auto repair shop. She stayed home to raise Cindy and her younger brother Lawrence, then went to work full-time in the 1980s. In the mid-2000s her car was hit from behind while she drove home from work. Pat suffered a stroke, never walked again, and spoke only with much effort.

Soon thereafter, Pat moved in. With nothing said out loud, Cindy became keeper of the Smith legacy. Her family’s approach to holiday celebrations was revelatory. As for me, I grew up in the Bronx and then Westchester, my home resembling a Larry David script co-written with Billy Crystal. You want a holiday? Come for Festivus. We’ll show you how to share grievances! Billy’s six Jewish relatives, hopping from photo album to photo album, alighted on ours. Hey, that’s Uncle Morty!

As Passover often coincides with Easter, Cindy took elements of one holiday and incorporated them into the other. Our first hybrid celebration almost didn’t happen. Cindy, an event planner par excellence, asked me to collect what was needed a week ahead of time. I dug into the boxes I brought from my previous life and found a menorah. What about the matzo? Well, the store was out.

Cindy: “Go find a store and buy matzo. What are you waiting for?”

I went, I shopped, I couldn’t find. The Passover shopping season was over.  Returning to Stony Brook, I opened the front door to the scent of baked ham and cooked matzo. Cindy must have hidden a box and found a recipe online.

“Happy Passover,” she said.

Chicken Quesadillas

Ola! When I sat down to write this column and realized it would be published on Cinco de Mayo, I couldn’t resist sharing with you some recipes for popular food from Latinx friends. My repertoire for this type of cuisine is not all that extensive, but here are 3 favorite recipes  that will help make Cinco de Mayo a delicious celebration.

Consuelo’s Shrimp Fajitas

YIELD: Makes 4 servings

INGREDIENTS: 

1 1/4 pounds fresh large shrimp

8 fajita flour tortillas

2 tablespoons olive oil

1 medium onion, sliced into rings

1 green bell pepper, cut into 1/2” strips

1 red bell pepper, cut into 1/2” strips

1 orange or yellow bell pepper, cut into 1/2” strips 

3 canned chipotle peppers in Adobo  sauce, diced

2 tablespoons chipotle sauce from can

3 tablespoons freshly squeezed lemon juice

2 teaspoons brown sugar

DIRECTIONS:

Peel and devein shrimp and remove tails. Warm tortillas In medium skillet and set aside to keep warm; heat oil over medium-high heat; add onion and bell peppers and saute, stirring occasionally, until starting to soften, about 2 to 3 minutes. Add shrimp and cook another 3 minutes, stirring occasionally, until they start to turn pink. Finally, add the chipotle peppers and sauce, lemon juice and brown sugar, stir and cook another minute. 

Place tortillas on individual plates, spoon shrimp mixture in center of each one and serve immediately with sour cream, red or green salsa, shredded cheddar cheese, shredded lettuce and guacamole.

Juanita’s Grilled Grouper Tacos

YIELD: Makes 4 servings

INGREDIENTS: 

1 pound grouper filets, washed, patted dry

One 24-ounce bottle ceviche marinade

1/2 small head green or red cabbage, cored and coarsely shredded

1/2 red onion, thinly sliced

1/3 cup chopped fresh cilantro

Juice of one freshly squeezed lime

2 tablespoons olive oil

Salt and freshly ground pepper to taste

1/2 teaspoon ground coriander

1/2 teaspoon ground cumin

1/2 cup sour cream

1/4 cup mayonnaise

8 flour tacos

DIRECTIONS:

In a nonreactive bowl combine fish and marinade; make sure that fish is completely submerged, cover and refrigerate for 2 t 4 hours. Drain fish and discard marinade. In a medium bowl thoroughly combine cabbage, onion, most but not all of the cilantro, 1 1/2 tablespoons of the lime juice, oil, salt and pepper, 1/2 a teaspoon each of the coriander and cumin; cover and refrigerate. 

In a small bowl whisk together the sour cream, mayonnaise and remaining cilantro, lime juice and spices; vigorously whisk, then cover and refrigerate. 

Grease grill grates, then pre-heat to medium-high; add fish to hot grates, grill, turning once, for about 6 to 8 minutes, until charred on the outside and opaque on the inside. Flipping once, add tortillas to grill to warm, about 30 seconds, slightly charred. Place fish in center of each tortilla, top with cabbage mixture and add sour cream-mayonnaise mixture. Nestor’s Chicken Quesadillas

YIELD: Makes 4 servings

INGREDIENTS: 

3 tablespoons olive oil 

2 bell peppers (any color), cleaned and thinly sliced into rings

1 medium onion, chopped

Salt and freshly ground pepper, to taste

1  pound chicken tenders

1 teaspoon chili powder

1 teaspoon ground cumin

1 teaspoon zataar

4 medium flour or corn tortillas

2  cups shredded Manchego cheese

1 1/2 cups shredded Monterey Jack cheese

1 ripe avocado, peeled and sliced

4 scallions, clean and sliced

DIRECTIONS:

In a large skillet over medium high heat, warm one tablespoon oil and add peppers, onion, salt and pepper; cook 5 minutes or until, soft. Remove from skillet and set aside to keep warm. Season chicken with salt, pepper and spices, and heat another tablespoon oil over medium heat. Add chicken and, stirring occasionally, cook until golden, about 8 minutes; remove and set aside to keep warm. 

Reduce heat to medium-low; heat remaining tablespoon oil; place one tortilla in skillet, add 1/4 each of pepper and onion mixture, chicken, cheeses, avocado and scallions to top half of tortilla. Fold other half over filling and cook, turning once, until golden on both sides, about 3 to 4 minutes per side. Repeat procedure with remaining 3 tortillas. Cut into wedges; serve with sour cream, salsa and a green salad.

Cold Mango Soufflé

Yield: Serves 4

Ingredients:

4 small mangoes, peeled, pitted, chopped

2 tablespoons water

1 tablespoon powdered gelatine

2 egg yolks

1⁄2 cup superfine sugar

1⁄2 cup milk

11⁄4 cups heavy cream

Grated rind of one orange

Toasted flaked or coarsely shredded coconut, to decorate

Directions:

Place a few pieces of mango in the base of each of four 2⁄3-cup ramekins. Wrap a creased collar of nonstick parchment paper around the outside of each dish, extending well above the rim. Secure with adhesive tape, then tie tightly with string.  Pour the water into a small heatproof bowl and sprinkle the gelatine over the surface. Leave for 5 minutes or until spongy. Place the bowl in a pan of hot water, stirring occasionally, until the gelatine has dissolved. 

Meanwhile, whisk the egg yolks with the superfine sugar and milk in another heatproof bowl. Place the bowl over a pan of simmering water and continue to whisk until the mixture is thick and frothy. Remove from the heat and continue whisking until the mixture cools. Whisk in the liquid gelatine.

Puree the remaining mango pieces in a food processor or blender, then fold the puree into the egg yolk mixture with the orange rind. Set the mixture aside until starting to thicken.

Whip the heavy cream to soft peaks. Reserve 4 tablespoons and fold the rest into the mango mixture. Spoon into the ramekins until the mixture is 1 inch above the rim of each dish. Chill for 3 to 4 hours, or until set.

Carefully remove the paper collars from the soufflés. Spoon a little of the reserved cream on top of each soufflé and decorate with some toasted flaked or coarsely shredded coconut before serving.

Supervisor Ed Smyth and Town Clerk Andrew Raia will co-host a cultural celebration of Eid in the Town Board Room at Huntington Town Hall on Friday, May 6, 2022 at 4:30pm.

“We join Huntington’s Pakistani, Indian, Arab, and Turkish-American communities and all who observe this annual cultural celebration reflecting on acts of kindness, gratitude and generosity,” said Supervisor Ed Smyth.

“Eid Mubarak to all those celebrating this festive holiday, I hope you can join us on May 6th,” said Town Clerk Andrew Raia. “I wish all of our residents observing Eid happiness and a meaningful reflection on everything that is important in your lives.”

The unifying celebration will honor members of the greater Huntington community who exemplify the event theme of charity, generosity and inclusiveness. The festival will include a traditional “nasheed,” or vocal performance, face-painting, henna tattoos and refreshments.

Eid al-Fitr celebrates the end of Ramadan, a month of fasting and reflection, in the Muslim community. Eid festivities are celebrated across the globe, in many countries as a public holiday, with the common thread of charity, hospitality and gatherings of family and friends.

Brunch Fruit Tart
Recipe adapted from homemadeinterest.com

INGREDIENTS:

Crust:
4  cups granola mixture
1/2  cup butter, softened
4 1/2  tablespoons honey
nonstick cooking spray

Filling:
2 1/4  cups vanilla Greek yogurt
8  ounces cream cheese, softened
1/2  cup granulated sugar
1  teaspoon vanilla extract
1  package gelatin

Toppings:
strawberries, sliced
blueberries
kiwis, sliced

DIRECTIONS:

To make crust: Preheat oven to 350 F.

In large bowl, combine granola, butter and honey. Grease 11-inch tart pan with nonstick cooking spray. Line bottom of tart pan with parchment paper.

Press granola mixture into tart pan. Place tart pan on baking sheet and bake 10 minutes. Cool completely.

To make filling: Using mixer, combine yogurt, cream cheese, sugar, vanilla extract and gelatin until whipped completely.

Pour yogurt mixture into tart crust. Refrigerate at least 1 hour.

Top with strawberries, blueberries and kiwis.
