Meet Jazz

This cool customer is Jazz, a twelve year old Yorkie mix up for adoption at Little Shelter in Huntington. While some may consider him a senior, he’s still lively and has plenty of dance moves to accompany any music you choose, whether it’s swing, big band, easy listening or the jive. Lighthearted, as well as light on his feet, he is the most delightful sidekick and companion. Chatty and charismatic, he’ll soon have you convinced to let him move in, share your blanket, and make him pancakes for breakfast! Meowy

Meet Meowy

This special senior has the staff at the Smithtown Animal Shelter all by the heartstrings. Estimated to be around 14 years old, this black and white tuxedo gets along with dogs, children and other cats. Found as a stray with a severe abscess on her hind end, Meowy is all healed up, but it left a little weakness in her sphincter giving her occassional fecal incontinence where she sleeps. We know that this is not ideal, but there is a home out there that will love her despite this. She loves to be petted , eats up any attention you will give her, and will sit on your lap for hours. She is a good girl for grooming and vet visits. This love muffin would make a great addition to any home. 631-360-757

Meet Peanut Butter

Peanut Butter is as delicious as her name…This adorable female, tan Dachshund mix is approximately ten years young and by all definitions, is absolutely perfect. This poor baby was surrendered to the Smithtown Animal Shelter through no fault of her own.  She adores being in the company of people and will not hesitate to greet new friends with hopes of receiving a good petting in return. This sweet girl has a fondness for snuggles and has a lot of unconditional love to give one lucky family.

Peanut Butter’s ideal home can include a calm doggie sibling, possibly cats and kids preferably over the age of twelve. Little Peanut Butter deserves to have the happy ever after she was cheated out of. Let’s all help share Peanut Butter’s story, in hopes of giving her the very best life imaginable.

Free Rabies Vaccinations

The Suffolk County Department of Health Services and the Town of Brookhaven will offer free rabies vaccinations for dogs, cats and ferrets on Saturday, June 1, from 10 a.m. to 1 p.m. at the Brookhaven Animal Shelter located at 300 Horseblock Road, Brookhaven. The clinic is available to all county residents, however, the quantity of vaccine is limited and available only while supplies last. All dogs must be on leashes and all cats and ferrets must be in carriers. 631-451-6953

Fluffy Peanut Butter Pie

YIELD: Servings: 6-8

INGREDIENTS:

20 chocolate cream-filled cookies

1/4 cup butter, melted

1 package (8 ounces) cream cheese, softened

1 cup smooth peanut butter

1 can (14 ounces) sweetened condensed milk

3 tablespoons lemon juice

1 teaspoon vanilla extract

1 cup whipping cream

chocolate syrup

DIRECTIONS:

Remove cream filling from chocolate cookies; set aside. With rolling pin, finely crush chocolate cookies.

In medium bowl, combine finely crushed cookies with melted butter.

Press crumb mixture firmly into bottom and sides of 9-inch pie plate; chill while preparing filling.

In large bowl, beat cream cheese until fluffy. Add reserved cookie cream filling, peanut butter and sweetened condensed milk; beat until smooth. Stir in lemon juice and vanilla extract.

In medium bowl, beat whipping cream until stiff peaks form. Fold whipped cream into peanut butter mixture. Mix until combined.

Pour into crust. Chill 4 hours, or until set. Drizzle chocolate syrup over pie before serving.

Cover leftovers and store in refrigerator.

YIELD: Serves 2

INGREDIENTS:

4 tablespoons creamy peanut butter

3 tablespoons lime juice

2 tablespoons water

4 teaspoons hoisin sauce

2 teaspoons soy sauce

2 teaspoons sriracha sauce

2 French baguette rolls (6 inches each)

1/2 cup sliced cucumber

1/2 cup sliced white onion 1

/2 cup sliced red bell pepper

1/2 cup sliced purple cabbage

1/2 cup fresh cilantro

DIRECTIONS: In small bowl, combine peanut butter, lime juice, water, hoisin sauce, soy sauce and sriracha sauce. Mix well. Spread sauce on both sides of bread; then layer with cucumber, onion and bell pepper. Top with cabbage and cilantro leaves.

YIELD: Serves: 4

INGREDIENTS:

 

1 tablespoon olive oil

2 cloves garlic, minced

2 teaspoons curry powder

1/4 cup scallions, chopped

1 cup creamy peanut butter

2 teaspoons rice wine vinegar

1 3/4 cups apple juice

1 3/4 cups coconut milk

1/4 cup brown sugar

1/4 teaspoon cayenne pepper (optional)

Chicken:

2 tablespoons olive oil

1/2 small yellow onion, chopped

1 1/2 pounds boneless, skinless chicken breast, cut into 1-inch strips

1 medium apple, peeled, cored and chopped

salt, to taste pepper, to taste

cooked rice (optional)

DIRECTIONS: To make sauce: In medium to large saucepan, heat oil over medium heat. Add garlic, curry powder and scallions. Saute 1 minute. Add peanut butter, vinegar, apple juice, coconut milk, brown sugar and cayenne pepper. Bring to simmer, reduce heat and cook over low heat, stirring frequently, about 10 to 15 minutes. Meanwhile, in large skillet, heat oil. Add onion and stir fry about 2 to 3 minutes until onions start to become opaque. Add chicken and apples, and stir until chicken is cooked completely. Add peanut sauce and cook until heated evenly, about 2 to 5 minutes. Season with salt and pepper, to taste. Serve warm over rice, if desired.

No Bake Peanut Butter Bars

Here are some delicious quick desserts when you just have a craving for something sweet.

No Bake Peanut Butter Bars

YIELD: 16 bars

INGREDIENTS:

1/2 cup salted butter, melted

1 cup graham cracker crumbs (about 8 full sheets)

1 cup powdered sugar

3/4 cup and 2 tablespoons creamy peanut butter (not natural style)

1 cup semi-sweet chocolate chips

DIRECTIONS: Line a 8-by-8 or 9-by-9 square baking pan with aluminum foil. Set aside. In a medium bowl, mix the melted butter, graham cracker crumbs, and powdered sugar together until combined. Stir in 3/4 cup of peanut butter. Spread into prepared baking pan. In a small bowl, microwave 2 tablespoons of peanut butter with the chocolate chips until melted. Stir until smooth. Spread over peanut butter layer. Chill until completely firm, at least 3 hours. Allow to sit at room temperature for 10 minutes before cutting. Bars stay fresh for 5 to 7 days stored in the refrigerator. Serve chilled. (Setting them out for a few hours at room temperature for serving is OK.) Bars can be frozen up to 2 months. Thaw overnight in the refrigerator.

INGREDIENTS:

1 refrigerated ready-to-use pie crust

1 pound apples, cored and sliced

2 tablespoons cold butter

1/4 cup granulated sugar

1 teaspoon cinnamon

DIRECTIONS:

Heat oven to 425 F. Remove pie crust from refrigerator and warm to room temperature, about 15 to 20 minutes. Unroll crust and place it on large baking sheet. Arrange sliced apples on crust, leaving about two inches of space around edge. Chop cold butter into small bits and scatter over apples. Mix sugar and cinnamon together and sprinkle over apples. Fold two-inch section of open pie crust over apples — this will not cover apples, but contain them inside crust. Bake 20 to 25 minutes until crust is golden brown and apples are just soft.

INGREDIENTS:

¾ cup canned almond pastry filling

1 refrigerated premade pie crust

4 medium plums, sliced

DIRECTIONS: Spread canned almond pastry filling on pie crust (rolled out to 12 inches on parchment-paper-lined cookie sheet), leaving 2-inch border; top with plums, fold in edges, and bake at 400 F for 30 to 35 minutes or until crust is golden and filling is bubbling.
