For me, the real inauguration of autumn is Rosh Hashanah, the Jewish holiday when apples and honey signify a sweet New Year. This is when I tie on my apron and bake apple upside down cake, apple  Bundt cake or apple dumplings. Occasionally I’ll do an apple crisp or tart apple pie with honey instead of brown sugar.  Whatever I make, the combination of apples and honey is a delicious treat.

Apple Honey Upside Down Cake

YIELD: Makes 8 servings

INGREDIENTS: 

1 large Granny Smith apple, peeled, cored and sliced

1 cup +1 tablespoon flour

1 teaspoon cinnamon

1 cup honey

1 cup + 1 tablespoon flour

1 teaspoon baking powder

1/4 teaspoon baking soda

1/4 teaspoon salt

1 large egg

2 tablespoons unsalted butter, melted

2 tablespoons orange juice

DIRECTIONS:

Preheat oven to 375 F. In a greased 9” x 9” baking pan. Arrange apple slices; sprinkle with the one tablespoon flour and cinnamon; drizzle with half a cup of the honey. In a large bowl thoroughly combine the cup of flour, baking powder, baking soda and salt. In a small bowl, whisk together  remaining half cup of honey, egg, butter and orange juice; add to dry ingredients and stir just until thoroughly blended. Pour batter over apples and bake 30-35 minutes, until top is browned and cake tester inserted in middle comes out clean. Cool on wire rack for 5 minutes; invert onto platter and serve warm with crème fraîche.

Apple-Honey-Spice Cake 

YIELD: Makes 10 servings

INGREDIENTS: 

1 cup + one tablespoon vegetable oil

3 cups flour

1 tablespoon baking powder

3/4 teaspoon baking soda

1/2 teaspoon salt

1 1/2 teaspoons ground cardamom

1/2 teaspoon ground allspice

1 teaspoon ground nutmeg

1/2 teaspoon ground ginger

3/4 cup honey

2/3 cup sugar

3 large eggs

2 teaspoons vanilla extract

3 tart apples, peeled cored and shredded

1/4 cup warm water

DIRECTIONS:

Preheat oven to 350 F. Grease inside of Bundt pan with the one tablespoon oil. In medium bowl combine flour, baking powder, baking soda, salt, cardamom, allspice, nutmeg and ginger. In another large bowl combine  honey, sugar, eggs, and vanilla. With mixer on medium-high speed, beat until light and fluffy, about 3 – 31/2  minutes. With mixer speed on low, beat in dry mixture just until completely blended; with rubber spatula fold in apples, then transfer batter to prepared Bundt pan. Bake until cake tester comes out clean and top of cake is golden, about 45-55 minutes. Cool on wire rack for 20 minutes, then invert onto cake platter. Glaze, if desired, and serve warm or at room temperature with a sweet dessert wine.

Old-fashioned Apple Dumplings

YIELD: Makes 6 servings

INGREDIENTS: 

2 pie crusts

6 Granny Smith apples, peeled and cored

1 stick unsalted butter, cut into 8 pieces

2/3 cup packed brown sugar

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

2 cups sugar

3 cups water

1 teaspoon vanilla extract

DIRECTIONS:

Preheat oven to 400 F. Butter a 9 x 13”  shallow baking dish. On a lightly floured surface roll the pie crusts to form a 16 x 24” rectangle, then divide into six 8-inch square pieces. Place one apple, stem end up, in center of each square, stuff the same end of each apple with 6 pieces of the butter and half the brown sugar. (This is best done by poking the brown sugar into the apple with your finger). Sprinkle remaining brown sugar around base of each apple; sprinkle top of each apple with cinnamon and nutmeg. 

With wet fingers pull one corner of pastry to top, then do likewise with diagonally opposite corner and pinch two corners together; repeat procedure with two remaining corners, then pinch all 4 corners together to completely enclosed in pastry. Place in prepared baking dish. 

In medium saucepan combine sugar, water, vanilla extract and remaining two tablespoons butter; bring to boil over medium heat, then reduce heat to low and simmer 5 minutes, until sugar is dissolved. Pour over dumplings and bake 55 minutes, until crust is light golden and apples are tender. Spoon sauce over apples and serve with vanilla ice cream.

Though Rosh Hashana and Yom Kippur, the High Holy Days, are late in our secular  calendar, they will soon once again be upon us. I am honored to have been asked to bring  words of greeting at this important time from my family, from Temple Isaiah and from  my own heart. 

One message contained in the High Holy Day liturgy is that at this time of year, our  destinies are determined. On Rosh Hashana it is written, and on Yom Kippur it is sealed,  who will live and who will die, and what will become of us in the year ahead. 

To be honest, this is not a statement that many of us believe literally. We may not think  that our destiny is pre-determined. But the message still is significant. We realize that there are times in our lives that do determine what happens to us. Even the liturgy we read states that our actions can help alter the outcome of what is to be. 

Whether or not we are participating in the Jewish holy days, let us all. as human beings,  realize the awesome nature of our ability to affect our own lives and the lives of those  around us. This can happen in many ways, and is different for each of us. Yet one  privilege we all share is exercising our freedom to vote. 

Rabbi Joel Mosbacher of Temple Shaarey Tefila in New York City wrote the following  during a previous election year: “In our traditional morning blessings which we call Nisim B’Chol Yom, ‘Daily Miracles,’ we offer gratitude for being free. As American Jews, we do not take for granted the  tremendous gift that we have in being free and enjoying the freedoms that every  American has. This is a freedom that Jews have not always been afforded. What a gift we have to be Jews living in America today, with the right to express our opinions and raise our voices through voting.” 

With the gift of freedom comes responsibility. This message applies to all Americans and indeed to all free people. In this spirit, I want to encourage our exercising one of our  fundamental rights and privileges. Here are some easy steps to follow: 

Register to vote: Check to see if you are registered to vote and if you are not, register online today. 

Mark your calendars to vote: on Tuesday, November 8. 

Make a plan to vote: Finding your polling place by visiting nyc.pollsitelocator.com or vote.org. 

We give thanks for our freedom, and for being gifted with the privilege of voting. May  we all make good use of this precious gift, this year and in years to come. 

Best wishes to the Jewish community, and to entire community, for a shana tova u m’tuka, a good and sweet year; one of joy, health and freedom.

The Bronx Zoo’s First-Ever After Dark Haunted Experience

New for 2022, the Bronx Zoo is adding an after-hours event – Dinosaurs in Darkness: The Hatching. This is the zoo’s first-ever Halloween nighttime event for older audiences. Dinosaurs in Darkness transforms the fan favorite Dinosaur Safari into a thrilling nighttime experience each Friday and Saturday night from October 7-29 (including Monday Oct. 10). The Hatching is a scary Halloween walk-through experience that sends participants on an adventure that brings them up close with prehistoric creatures in a whole new way as they follow the story of a rare dinosaur egg, found intact after 66 million years, that is finally ready to hatch! What could possibly go wrong? This  is an after-hours event and is ticketed separately from Bronx Zoo admission. It is recommended for ages 13 and up. The tradition of Boo at the Zoo will operate at the Bronx Zoo during normal open hours each Saturday and Sunday from October 1 to 30 (including the holiday, Monday October 10). Outdoor activities will include the popular professional pumpkin carving demonstrations and displays; magic and mind reading shows; trick or treating on the Candy Trail; and the spooky extinct animal graveyard. Animal-themed costumed stilt walkers and Halloween animal puppets will headline the costume parade, and everyone can meet live vultures, owls, ravens and other birds each day on the zoo’s historic Astor Court. Finally, October and Boo at the Zoo is the last chance to catch the Dinosaur Safari. The experience will go extinct on October 30.

The Ward Melville Heritage Organization is currently accepting submissions for its annual Scarecrow Competition. This will be the 32nd year the spooky and silly six-foot creations will adorn the pathways of picturesque Stony Brook Village Center for visitors to enjoy and vote for their favorite.

You can pick up a registration form at any of the shops in Stony Brook Village, or you can download it digitally from the events section of the Stony Brook Village Center website. To enter this competition, please return the completed registration form to The Ward Melville Heritage Organization, P.O. Box 572, Stony Brook, NY 11790, with the entry fee of $30 by Sept. 23.

Vote for your favorite scarecrows by picking up a ballot at any of the shops and restaurants at the Stony Brook Village Center from Oct. 1 and 26. Deadline for voting is Oct. 26. Winners will be notified on Oct. 28 by 5 p.m. and will be announced during the Ward Melville Heritage Organization’s Halloween Festival on Oct. 31.

On Monday, Sept. 5, Americans took off from work in honor of the contributions made by laborers throughout their national history. This Labor Day was an opportunity to catch up with Martin Cantor, director of the Long Island Center for Socio-Economic Policy. During an exclusive interview, he discussed some of the labor trends on Long Island, the success of remote work and the role of unions today.

How would you describe the current state of the labor force on Long Island?

First, we still haven’t recovered all of the jobs lost during the [COVID-19] pandemic. We’re about 30,000 jobs shy. However, we have a strong labor force — I think we have about 1.5 million people in it. Still, our labor participation rate is not as it once was prior to the pandemic. There are still people on the sidelines.

What labor trends on Long Island do you find most troubling? Also, which trends are most encouraging?

The most troubling is that a lot of our workforce has not come back. The economy cannot expand unless our workforce participation rate increases, and that gives me concern. The other thing that gives me concern is that the Federal Reserve is going to aggressively go after inflation by increasing interest rates. With employee productivity at record lows, that could mean layoffs in the future.

Speaking of layoffs, do you believe there is already a labor shortage on Long Island?

No, I don’t think there’s a labor shortage. I think that if there’s any kind of a shortage, it’s people not wanting to come back to work. 

How does the cost of labor factor into these growing economic concerns?

Well, the cost of labor is very important, and that’s part of what caused the inflation. Not only did we have all of that extra money that the federal government put in, but we arbitrarily increased the minimum wage. That led to higher prices in the marketplace. 

I’m not denigrating the minimum wage [$15 an hour on the Island] — it’s only $31,000 a year. It’s very difficult for one person to pay for rent, food and electricity living on the minimum wage, but it did have an economic impact.

Do you think that the gradual development of remote work will have a positive long-term effect on the labor force?

Well, it depends where you are. The quick answer is yes. Two things have happened during the pandemic. Number one: Employers learned to have a different business model that didn’t require everybody to come into the office. They were able to reduce the amount of space that they needed to rent. 

The other thing was that employees found they could have a better quality of life by working remotely. They didn’t have to commute two hours a day to get into the City. On the other side of the coin, Goldman Sachs just announced that there’s no more remote work and everybody has to come into the office in New York City.

Do you think a schism is emerging between those who work from home and those who go to the office?

I wouldn’t call it a schism, but I will tell you that how people work and how businesses operate have changed. I think that congestion pricing in the City is a big influencer on all of that. 

If people don’t want to ride the trains, they usually drive in and have to pay more money. They might insist on working remotely. They also might insist on getting higher wages from employers. Some businesses might relocate out of the City because it is too expensive and too onerous for their employees.

So I think you have several things that will impact where people work and how people work.

How has the relationship between workers and public transit evolved here on Long Island?

I will tell you this: The Long Island Rail Road is [operating] at about 50% less than its prepandemic ridership. I took the train about three weeks ago, and the train was empty. Even when I jumped on the train at Penn Station at about 4:30 — which is normally packed — the train was empty. 

What accounts for the popularity of labor unions today?

People have felt this was a very difficult time during the pandemic. Some people have taken a look at life’s choices and are saying, “Hey, I’m not getting paid enough to do this stuff.” They want better benefits, a proper workplace environment and a salary commensurate with their skills. That’s why unionization is at one of its highest points in years.

What is your long-term forecast for the regional economy on Long Island?

Our regional economy is doing well. Historically and even currently, Long Island has always been able to fend off bad economic times. I think we are doing fine and we will be doing fine.

Lifeguards to Stay on the Stands for an Additional Two Weekends

Suffolk County Executive Steve Bellone today announced an extended summer season at Smith Point County Park. While Suffolk County beaches are not typically staffed with lifeguards post Labor Day, this year lifeguards will stay on the stands for an additional two weekends to ensure the safety of beachgoers.

Suffolk County beaches and parks provide cherished memories and experiences every summer for both our residents and the countless visitors who flock to our word-class shorelines. This year, more than 300,000 people visited Smith Point County Park.

“While Labor Day marks the unofficial end to summer, in Suffolk summer is not over, and the joy that summer brings will continue to brighten our days,” said Suffolk County Executive Bellone. “Lifeguards will remain on the stands for an additional two weekends, and I encourage all residents to take advantage of our world-class beaches while the warm weather is still with us.”

 “Keeping Suffolk County residents safe while they use our beaches has always been a priority and we’re happy to extend the Smith Point beach season this year,” said Suffolk County Parks Commissioner Jason Smagin.

Lifeguards will remain on the stands from 10:00 AM to 5:30 PM on Saturday, September 10th, Sunday, September 11th, Saturday, September 17th and Sunday, September 18th at Smith Point County Park.

Additionally, Suffolk County campgrounds, parks and outer beaches will continue to welcome campers and park goers beyond the holiday weekend.

The Smithtown Senior Citizens and Smithtown Recreation Departments are looking for crafters for the Tender Years Treasury event on Saturday, December 3 from 10 a.m. to 1 p.m. at the Senior Citizens Department, located at 420 Middle Country Road in Smithtown.

The Tender Years Treasury is an award-winning program for children, hosted by the Senior Citizens Department and the Recreation Department. Senior residents of the Town of Smithtown create handmade items for this event. These items are then available for purchase at $5 and under. Popular items available include jewelry, scarves, hats, wreaths, ornaments, pot holders, key chains, etc. There is no charge for crafters tables, and all monies collected belong to the crafter.

Hear ye! Hear ye! Casting of “street characters” for the 26th annual Port Jefferson Charles Dickens Festival on Dec. 2, 3 and 4 will be held at the Port Jefferson Village Center, 101 East Broadway, Port Jefferson on Thursday, Sept. 1 at 6:30 p.m. Actors, singers, prop people, dancers, puppet performers and sound people needed. All ages welcome. Costumes are provided and community service hours will be given to students. Amid picturesque weather, a convoy of fire trucks, tractors, music and dance groups and assorted vehicles marched through the streets of Port Jefferson for this year’s annual Fourth of July parade. 

Hosted by the local fire department, the procession included a large collection of first responders. Joining PJFD were fire departments and ambulance corps representing Terryville, Setauket, Mount Sinai and Centereach, among many others. 

Also in attendance were dance groups that twirled and danced between fire units. In a strong display of patriotism, various community groups, volunteer organizations and hospital employees made appearances as well.

Hundreds of spectators lined the village blocks to watch the spectacle as it unfolded during the late morning. The parade lasted nearly two hours in its entirety.
