On April 30, the Town of Brookhaven celebrated Arbor Day by planting a Red Maple tree in front of Town Hall, following a longstanding tradition. Since 2016, the Town has been designated as a “Tree City USA” by the National Arbor Day Foundation.

The annual planting at Town Hall is part of Supervisor Romaine’s Green Energy & Sustainability initiative for Town facilities announced in his 2015 State of the Town Address. The plan focuses on Town-owned Buildings and Facilities, Traffic Controls, Street Lights and Town Vehicles. Arbor Day has been celebrated around the world since originating in Spain in 1805. The first American Arbor Day was on April 10, 1872 in Nebraska. In 1907, President Theodore Roosevelt brought the event to national attention when he issued an “Arbor Day Proclamation to the School Children of the United States.”

On Sunday, May 9, millions of people will celebrate the special women in their lives, particularly the mothers, grandmothers and stepmothers who often tirelessly care for those they love. 

Created by Anna Jarvis in the early 20th century and designated an official United States holiday in 1914, Mother’s Day is a special day in many families. Apart from birthdays, primary female caregivers may not always get the recognition they deserve, nor be entitled to a day to kick back and relax and let others take the helm. Mother’s Day entitles them to something special.

Even though the way people have been living has changed during the COVID-19 pandemic, Mother’s Day may be the first holiday on the calendar when the world can finally regain some sense of normalcy. But caution should still prevail during Mother’s Day celebrations. Thankfully, there are plenty of creative ways to celebrate mothers and mother figures this year.

Get involved together. An especially meaningful way to honor a mother who is always giving her time and love is to become involved in a difference-making organization. Joint volunteerism is a great way to spend more time together working toward a worthy goal.

Dine truly “al fresco.” Outdoor dining has become commonplace, and even before it was a safety measure, enjoying a meal on a sun-soaked patio or overlooking a body of water was popular. If you’re worried about limited restaurant space or crowds, plan a picnic at a scenic location, such as a botanical garden or county park. Include Mom’s favorite foods and enjoy the fresh air and delicious foods together.

Create a photo slideshow. Digital photos have eclipsed prints in many people’s hearts. But too often digital photos never get seen after they’re initially taken. That can change when you compile a slideshow of favorite photos from childhood and even present-day photos that Mom is sure to appreciate. Use sentimental music or Mom’s favorite songs as the soundtrack, and include some inspirational quotations or personal voiceovers. This is one gift that can be shared in person or over group meeting apps.

Enjoy her hobbies and interests. Devote a day or more to trying Mom’s interests and hobbies, whether they include hitting the links, knitting, singing in the church choir, or digging in her garden. 

Send an edible gift. If you can’t be there to celebrate with Mom in person, have a special meal delivered to her door. Then enjoy the same foods with her via Google Meet, Facetime or Zoom. Don’t forget a tasty cocktail so you can toast the special woman in your life.

Mother’s Day celebrations can be unique, heartfelt and customized based on family needs.

Girl Scouts help plant the American Elm tree donated by Covanta with Town and Covanta officials looking on. 

Supervisor Chad A. Lupinacci, Councilman Ed Smyth and Councilwoman Joan Cergol were joined by Covanta and Girl Scout Service Unit 12, Troop 239 for an Arbor Day tree planting ceremony and to unveil trees planted with Tree City USA grant funding at Columbia Street Park in Huntington Station Friday, April 30. 

 “Thank you to Covanta Huntington for your environmentally-conscious donation and to our Girl Scouts from Troop 239 for your commitment to Columbia Street Park and many of our green spaces,” stated Supervisor Chad A. Lupinacci. “The Town of Huntington is fortunate to have maintained our Tree City USA designation for over 20 years and thanks to your contributions, grant funding from the New York State Urban Forestry Council, and our Volunteer Parks Stewards like Alvin White, we will continue to plant trees, beautify and preserve our open spaces.” 

 “It’s great to be in Columbia Park, one of the “hidden gems” of the Town’s parks,” said Councilman Ed Smyth. “Our bigger parks get most of the attention, but it is worthwhile for our residents to explore the smaller parks that are often within walking distance of their homes.” 

 “I want to thank Covanta for donating such a beautiful American Elm tree and Girl Scout Service Unit 12, Troop 239 for planting additional saplings at Columbia Park,” Councilwoman Cergol said. “Planting trees is one of the best things we can do for the Town’s natural beauty and for the environment, and I’m proud to serve a Town that has been designated a Tree City USA community for 20 years and running.” 

 Maureen Early, Senior Community Affairs Specialist for Covanta, stated, “Covanta was delighted to partner with Supervisor Lupinacci and the Town of Huntington to plant trees in honor of Arbor Day. It’s efforts like this that remind us how important it is to protect our environment and work toward a more sustainable tomorrow. We thank our municipal leaders for being environmental stewards with us.” 

 Girl Scouts from Troop 239 in Service Unit 12 from South Huntington joined the ceremony to help plant the American Elm tree donated by Covanta to the Town of Huntington to commemorate Arbor Day; the Town Board accepted the donation at their April 13 meeting.  

 Participating in the Arbor Day ceremony were Girl Scout Cadettes Zahara Amorde, Julia Dean, Kate Sperduti, Lily Fleischer, Abbrianna Mandarino, Kate Adams, Morgan Franz, Ava Tulipano, and Allie Lynde, as well as Girl Scout Juniors Sophia Amorde, Nadia McKelvey, and Ava Rodriguez. The Scouts also helped plant additional bare root saplings at the park. Troop Co-Leaders Gina Barone and Christine Reilly attended the event. 

 Girl Scout Troop Co-Leader Gina Barone stated, “It was a privilege and pleasure for Troop 239 to participate in the Town of Huntington Arbor day tree planting event.  Girl Scouts have been passionate proponents of conservation throughout our organization’s 100-plus year history and our troop strives to embody the value of environmental stewardship in our Huntington community.  We are committed to continuing to live the Girl Scout law of “using resources wisely” and protecting the Earth both globally and locally.  Thank you for supporting our mission and for allowing us to be a part of such an inspiring program!” 

 Volunteer Park Steward Alvin White, who serves as the parks steward for Columbia Street Park, also attended the Arbor Day event. 

 The event also celebrated grant funding that allowed additional trees to be planted at the park in late 2020. The Town of Huntington has maintained its designation as a Tree City USA for over two decades. In September 2020, the Town applied for and received $1,000 in Tree City USA grant funding from the New York State Urban Forestry Council to plant five (5) trees at Columbia Street Park in Huntington Station, a site recommended in a Planting Location Evaluation from a tree inventory previously conducted with a Tree Inventory Grant funded by the NYSDEC Urban and Community Forestry Program.

A total of twelve (12) trees were planted under the project; seven (7) trees were funded by an EOSPA-recommended match of $1,900. Most of the trees were planted as street trees to provide shade and a welcoming park aesthetic in 2020, when an event could not be held due to the COVID-19 pandemic.

Aside from a five-year stint in Suffolk County, Long Island, I’ve spent all my life in the shadow of Philadelphia, on the Jersey side. South Jersey is full of delightful perks — sprawling farmland that earned us the Garden State nickname; the Shore; Wawa convenience stores; and a melding of diverse cultures.

My Italian-American family has been here for several generations now, long enough to have lost our immigrant relatives and their knowledge of the language. Two things do remain: our family recipes, and the mashed-up, incomprehensible names we have for Italian foods. (Perhaps the most well-known is “gabagool,” our word for capicola made famous in The Sopranos.) 

Each year on Palm Sunday weekend, my grandfather, whom I called Poppy, would visit with football-sized parcels wrapped in aluminum foil under each arm. Inside were stromboli-like breads stuffed with Italian meats and cheeses and rolled up like a jelly roll. Poppy called it gozzadiel. His wife, Eleanor, made them annually for everyone they knew.

It’s been more than a decade since Poppy passed away and the gozzadiel deliveries halted. I could never get the recipe out of Eleanor because she never had one — like most Italian women, she baked with her senses, not measurements. “Just make a pizza dough and put the salami, ham and cheese on it,” she told me good-naturedly. That was all I got, and then eventually she passed, too.  

A few weeks ago, as Palm Sunday approached, my late-night thoughts wandered to the upcoming Easter traditions and to the gozzadiel we mention wistfully each spring. I began to Google intensely from my bed, grasping at straws: “Italian meat bread.” “Rolled Easter bread.” “Gozzadiel in English.” I got lots of recipes, but none of them were right. Google doesn’t speak our broken Italian.

Finally, I landed on a Neapolitan rolled bread called casatiello. Using my rudimentary Italian skills from high school, I spoke the word aloud into the dark. “Ca-sa-ti-ello … Ga-za-diel.” Close enough! But a proper casatiello features chunks of meat, and whole hard-boiled eggs affixed to the top with crosses of dough. Eleanor’s bread had layers of meat, not chunks. And there were no eggs atop ours. But it was a start. And this year, so help me, I was going to make it.

Mind you, I am not one of those crazy people that made a sourdough starter in the heat of last year’s lockdown. I love to cook, but I’m no social media influencer. I know how to follow directions and call my mother. Mostly, I just improvise.

So I did what Eleanor told me — I went to ShopRite and bought a refrigerated pizza dough, nervously plopped it into a bowl with olive oil, covered it up and said a prayer. A few hours later, my husband and I stared at the puffy, risen mound as if it were an infant. “Let’s do this,” he said.

Using a pepperoni bread recipe as a guide, we rolled out the dough in a rectangle as thin as we could, then covered it with my mom’s recommendations of Di Lusso Genoa salami, BelGioioso provolone, and imported ham. More cheese. More prayers. A careful, tight rolling and an eggwash, and finally, the trip to the oven. I read that the inside should reach 160 degrees, which took some trial and error — it needed 30 minutes at 400 degrees, and another 10 minutes covered with foil at 350 degrees (I was nervous).

The result was a perfectly golden behemoth. The next day, we gathered around my parents’ table as my father made the first cut to reveal a beautiful spiral and, miraculously, the exact flavor of our beloved gozzadiel. My dad raised his eyebrows and declared, “This could raise them from the grave. You nailed it!”

I was unprepared for the visceral flood of nostalgia that washed in with those first bites and transported me to another time. This was a true food memory, the kind that happens at tables like mine all over the world to bind families, friends, and communities. And it was glorious.

In celebration of it 65th anniversary, “The Ten Commandments” heads to select theaters nationwide on Sunday, March 28, courtesy of Fathom Events, Turner Classic Movies and Paramount Pictures.

Because Passover excludes the use of leavening, eggs play a major role in many dishes. And because with all those eggs the cholesterol police are going to get after you anyway, you might as well use them in some scrumptious Passover desserts. Many are easier than you would imagine and tantalizing to your sweet tooth. So take your pick from the following recipes and enjoy every bite.

Fig, Orange and Almond Passover Cake

YIELD: Makes one cake

INGREDIENTS: 

10 eggs separated

1 cup sugar

1 1/2 cups matzo cake meal

1 teaspoon ground cinnamon

Zest of 1 medium orange

1/3 cup orange juice

1/2 teaspoon allspice

1 cup chopped almonds

12 dried figs, chopped

DIRECTIONS:

Preheat oven to 350 F. Grease a 10” tube or bundt pan with vegetable oil. In medium or large bowl beat egg yolks with sugar until lemon-colored; add cake meal, cinnamon, zest, orange juice, allspice and almonds. In large bowl beat egg whites till peaks are stiff; fold into batter, then fold in figs. Pour batter into prepared pan and bake 50 minutes. Unmold cake and let it cool. Serve with coffee, tea or sweet wine.

Chocolate-Hazelnut Passover Torte

YIELD: Makes one torte

INGREDIENTS: 

5 large eggs, separated 

3/4 cup sugar

8 ounces high quality bittersweet chocolate

8 ounces unsalted butter, melted and cooled, 

1 cup skinned hazelnuts, very finely chopped

DIRECTIONS:

Preheat oven to 375 F. Line bottom and side of greased 9” spring form pan with aluminum foil. Place pan of water on bottom shelf of oven. In large bowl beat egg yolks with sugar until they turn pale yellow; add chocolate, butter and hazelnuts and mix well. In large bowl beat egg whites until stiff, then fold into chocolate mixture. Pour batter into pan. Bake 45 to 50 minutes; remove from oven and let sit a few minutes in pan, then unmold, invert onto a plate and peel off foil. Sprinkle with powdered sugar if desired and serve with fresh berries.

Passover Sponge Cake with Strawberries

YIELD: Makes one cake

INGREDIENTS: 

Matzo flour

8 large eggs, separated

1 1/2 cups sugar

1 cup sifted matzo cake meal

Dash salt

Grated zest and juice of 1/2 lemon

3 cups heavy cream

2 quarts fresh strawberries, washed and hulled

DIRECTIONS:

Preheat oven to 350 F. Grease two 9” cake pans and dust with matzo flour. In large bowl beat egg yolks until pale yellow; add sugar and beat again. Stir in matzo cake meal, salt, lemon zest and juice. In large bowl beat egg whites until stiff, fold into batter and distribute evenly between two prepared cake pans. Bake 45 minutes, set on a rack to cool, then remove from pan. While cake is cooling, whip cream, then coarsely chop one quart of the strawberries and mix them into half the cream. Spread mixture over one of the cake layers; top with second cake layer and use remaining cream to frost top and sides of cake. Halve remaining strawberries and use to decorate top of cake. Serve with hot tea or coffee.

Passover Pistachio Macaroons

YIELD: Makes two dozen

INGREDIENTS: 

3 cups shelled unsalted pistachios

1 cup sugar

3 egg whites

DIRECTIONS:

Preheat oven to 325 F. Line two cookie sheets with parchment. In a food processor grind the nuts but don’t puree them. In a medium bowl combine the ground nuts and sugar; fold in the egg whites; refrigerate about 10 minutes. Leaving an inch or so in between, drop batter by the tablespoonfuls onto cookie sheets. Bake 11 to 14 minutes or until macaroons start turning golden brown. Serve with fresh fruit or sweet wine.

When talking about Ireland and its culture and symbolism, many different images come to mind. Affectionately known as the Emerald Isle, Ireland is perhaps best known for its bright green hue. Irish flags and even harps are symbolic of the nation, but there is perhaps one symbol that most widely represents the country: the shamrock. 

A shamrock, by definition, is a young sprig of clover. However, plant experts actually have said that shamrocks are a distinct species of the clover plant, believed to be the white clover. The word “shamrock” is derived from the Irish “seamróg,” which translates as “young clover.” Over the centuries, this diminutive plant has come to symbolize Ireland and many things Irish. The shamrock also is a popular symbol of St. Patrick’s Day. 

The shamrock and Irish culture are so intertwined thanks to Ireland’s patron saint, St. Patrick. Legends attest to St. Patrick using the three petals of the shamrock to illustrate the mysteries of the Holy Trinity to the Celtic pagans. Each leaf represented the Father, Son, and Holy Spirit.

The shamrock of Ireland has three leaves, not four as many people believe. The number three had significance in Ireland long before St. Patrick began to convert the masses. According to Blarney.com, the number three was believed to have magical properties and was a recurring theme in Celtic folklore. Because the Celts were familiar with the shamrock, it became easy to convert their knowledge of the shamrock to the magic of the trinity. The three leaves are also said to stand for faith, hope and love. 

The four-leaf clover is a separate entity and a rarity. That is why the fourth leaf is deemed to be “lucky.” But that lucky clover is not the traditional Irish symbol.

Thanks to their connection with Ireland, shamrocks are often gifted by the Prime Minister (Taoiseach) to the President of the United States in the White House each St. Patrick’s Day. They are presented in a special Waterford crystal bowl featuring shamrocks in the design. This practice started in 1952.

Shamrocks also can be seen on Irish clothing designs, the Erin go Bragh flag and the uniforms of several Irish sports teams. Of course they also are seen during St. Patrick’s Day celebrations. The shamrock and Ireland will always be linked.
