A Cobbler Full of Summer Flavors

(Culinary.net) This summer, get a little wild in the kitchen and make something different. It’s alright to mix up the seasonal menu now and again by creating dishes out of the ordinary as a change up from the usual warm-weather favorites.

It’s true for many fruits that the summer months are their ideal season. However, eating fruit plain can be boring and bland on a hot day.

This summer, when heading to an event like a family reunion, picnic or just a day at home, try making this Oh-So-Berry Cobbler.

It’s served warm and is a perfect sweet treat when berries are at their freshest. Full of summer goodness, it’s a treat for everyone to enjoy with strawberries, blackberries, blueberries and a splash of lemon juice served with ice cream. 

Next time you’re thinking about grabbing a fruit tray from the supermarket for an upcoming gathering, think again. This cobbler is the perfect addition to any party menu or special occasion.

Oh-So-Berry Cobbler

YIELD: Servings: 8

INGREDIENTS:

2 cups strawberries, sliced

2 cups blackberries

2 cups blueberries

2 tablespoons lemon juice

3 tablespoons cornstarch

2 cups flour

1 teaspoon baking powder

1 teaspoon salt

1 cup butter, softened

1 1/2 cups brown sugar

2 teaspoons vanilla extract

nonstick cooking spray

ice cream

DIRECTIONS:

Heat oven to 350 F.

In large bowl, mix strawberries, blackberries and blueberries then add lemon juice and cornstarch; mix to combine. Refrigerate 20 minutes.

In medium bowl, whisk flour, baking powder and salt. Set aside.

In bowl of stand mixer, beat butter, brown sugar and vanilla extract on medium speed until blended. Gradually add flour mixture until crumbles form.

Spray 9-by-13-inch baking dish with nonstick cooking spray.

Pour berries into bottom of dish. Top berries with crumbles.

Bake 30-40 minutes, or until lightly browned.

Serve with ice cream.

Road conditions are a regular topic of conversation on Long Island. Many of us have experienced flat tires after hitting a pothole on local roads, but while we demand road repairs and have the right to them as taxpayers, sometimes we’re not as patient as we should be with the department of transportation workers who repair our roadways.

As soon as the warm weather arrives, crews begin to pepper the streets filling potholes and paving roads. While busy schedules have many rushing all over the Island at times, when a driver begins to see orange cones and, more importantly, a person holding a sign that says “slow” or “stop,” it’s imperative to follow directions.

According to the New York State website, in 2018 “there were 701 crashes in work zones on state roads and bridges, resulting in 13 motorist fatalities and 329 injuries to motorists, contractor employees and NYSDOT staff” in the state. The fatalities and injuries could have been avoided with some extra care while driving around road work zones.

A flagger’s directions by law hold the same authority as a sign. Imagine what many of the flaggers have to go through every day. For some standing on the edge of the work zone to slow down or stop traffic, not only puts their lives at risk but it also puts them in a situation where they can be harassed by drivers when all they are doing is their job to keep drivers and workers safe while navigating a disrupted roadway.

It’s pretty simple. When you see a work zone approaching, slow down and merge into the correct lane when it is safe to do so, and do not speed at the end of the closed lane to try to get into the other lane.

Speeding through a work zone also can mean a lighter wallet for a driver. New York State fines are doubled for speeding in these zones. A driver’s license can be suspended if a motorist receives repeat convictions of speeding violations in work zones.

With only a couple of months left until summer’s end, we’ll still see many workers on the road. Take care to slow down and keep more than the usual distance between you and the car in front of you to show respect for those who are putting their lives in our hands to keep our roads smooth.

For road maintenance workers, their livelihood should not mean risking their lives, because someone couldn’t be inconvenienced for a few minutes.

Phil and Patrick O’Brien, owners of the Port Jefferson Station-based clothing brand Anchor East Apparel, hosted their second beach cleanup at West Meadow Beach on July 18.

The brothers grew up on the water and are heavily involved in the boating community. As a result, they decided to actualize their appreciation for Long Island and the water through their brand. 

When they developed the line during the initial COVID-19 lockdown, they knew they wanted to use their brand to promote beach cleanups. Only a couple months after launching their business, they successfully held their second beach cleanup on Sunday.

Phil O’Brien said the idea struck them after his daughter cut her foot on a piece of glass on the beach. They realized that in order to ensure the safety of civilians, the beaches need to be cleaner. Although the beaches might look acceptable, the sand is actually covered in “little things” like discarded ketchup packets and broken beer bottles. “You’d be amazed at how much you find,” he said. 

After only four hours, they accumulated a sizable pile of garbage, but not all of it was destined for the trash. The brothers dispatch recyclable material to be remade into bracelets, which they sell for $2 each. They donate 100% of the money made from bracelet sales to the Ocean Conservancy.

The O’Briens hope to make the cleanups a regular event, their goal being to hold three every summer. Ultimately, the brothers “plan to keep growing” and host beach cleanups all over Long Island, starting at the East End and making their way west.

Phil O’Brien said he hopes these cleanups will encourage people to more closely observe how they are impacting the beaches.

“We shouldn’t have to have companies promote this,” he said. “People need to be more aware.” 

The O’Briens have yet to establish a date for the next cleanup, but are likely going to have another one toward the end of the summer season. 

The Perfect Summertime Pie

Coconut Key Lime Cream Pie

YIELD: Servings: 6-8

INGREDIENTS:

1 package (11 ounces) vanilla wafers

1/3 cup butter, melted

2 cups heavy whipping cream

1/4 cup confectioners’ sugar

1/2 cup Key lime juice, divided

1 package (8 ounces) cream cheese, softened

1 can (14 ounces) sweetened condensed milk

1 teaspoon coconut extract

1 cup shredded coconut

1/4 cup toasted shredded coconut

lime zest

maraschino cherries

DIRECTIONS:

In blender, pulse vanilla wafers into crumbs. Add melted butter and pulse until combined. Press crumbs into bottom and up sides of greased 9 1/2-inch deep-dish pie plate. Refrigerate 30 minutes.

In large bowl, beat whipping cream until it thickens. Add confectioners’ sugar and 1 tablespoon lime juice; beat until stiff peaks form. Remove 1 cup; set aside.

In separate large bowl, beat cream cheese until smooth. Add sweetened condensed milk and coconut extract; beat until blended. Add remaining lime juice and shredded coconut; stir until combined. Add reserved whipped cream. Stir until combined. Pour into crust.

Refrigerate 4 hours.

Before serving, garnish with toasted coconut, lime zest and maraschino cherries.

Selfless and supportive. There are many 501c3 nonprofits in our communities, which hold a special recognition by the state and local governments. In the old days we referred to them as “charities.” 

Being charitable has never been more important, so I’m shining the light on one exceptional organization, The Social Brain, founded by Ira Dunne. 

A behavioral specialist with a master’s in therapeutic recreation, Dunne has transformed the lives of traumatic brain injury survivors on Long Island and their office center is right here in Port Jefferson Station.

“Traumatic brain injury survivors may be getting support during the week, but come the weekend, there is a void,” Dunne said. “Building social activities that accommodate their physical challenges has lacked organized support. That’s why we created the Social Brain.”

They just completed their first music therapy event, where clients interacted with a certified therapist and 15 different instruments. Dunne explained how singing of familiar songs builds cognitive skills, sparking memories. Manipulating instruments motivates and engages the individuals in a fun group setting. 

The Social Brain, a member of the Port Jefferson Station/Terryville Chamber of Commerce, recently held a hugely successful Bike and Helmet Safety Day at the chamber train car. 

TBR News Media covered the event where new helmets were given away to children and adults, and the importance of head protection was discussed. All helmets had been donated via the Social Brain website; thesocialbrain.org.

Fluffy Peanut Butter Pie

Fluffy Peanut Butter Pie

YIELD: Servings: 6-8

INGREDIENTS:

20 chocolate cream-filled cookies

1/4 cup butter, melted

1 package (8 ounces) cream cheese, softened

1 cup smooth peanut butter

1 can (14 ounces) sweetened condensed milk

3 tablespoons lemon juice

1 teaspoon vanilla extract

1 cup whipping cream

chocolate syrup

DIRECTIONS:

Remove cream filling from chocolate cookies; set aside. With rolling pin, finely crush chocolate cookies.

In medium bowl, combine finely crushed cookies with melted butter.

Press crumb mixture firmly into bottom and sides of 9-inch pie plate; chill while preparing filling.

In large bowl, beat cream cheese until fluffy. Add reserved cookie cream filling, peanut butter and sweetened condensed milk; beat until smooth. Stir in lemon juice and vanilla extract.

In medium bowl, beat whipping cream until stiff peaks form. Fold whipped cream into peanut butter mixture. Mix until combined.

Pour into crust. Chill 4 hours, or until set. Drizzle chocolate syrup over pie before serving.

Cover leftovers and store in refrigerator.

As the world slowly reopens from the COVID-19 pandemic and restrictions are lifted, the art world celebrates as well. Over at the Art League of Long Island in Dix Hills, a new exhibit is ready to be unveiled this weekend. Titled “Awakening,” the show is described as “an exploration of the world of the past 16 months as seen through the eyes of artists.” Juried by Kathleen Gurchie of Gurchie Designs, the exhibit opens on July 17 in a virtual gallery format and runs through Sept. 6. 

Artists were challenged to submit their best works “representing their expressions of our world as we re-awaken and acclimate to a new post-pandemic normal.” 

“The title, ‘Awakening’, reflects our joy at finally awakening from the long pandemic “sleep” and stepping slowly and carefully into public life again. But that is not all! We are awakening in many other ways, including social, political and environmental,” said  Susan Peragallo, Gallery Coordinator and Curator at the Art League. “Juror Kathleen Gurchie approached her task with thoughtful care and did a wonderful job selecting some of the most powerful and beautiful interpretations of that theme.”

Of the 221 works submitted by artists from across the United States, Ms. Gurchie selected 59 to show in the virtual gallery in a range of mediums including; oil, acrylic, watercolor, ink, collage, sculpture, digital, fiber, encaustic and monotype. Of those 59, six were singled out for awards. 

Awards of Excellence were give to Gerry Hirschstein of Old Bethpage for “Standing Twice as Tall,” pastel on canson paper; Margaret Minardi of Northport for “First Awake,” colored pencil drawing; and Beth Wessel of Huntington for her plaster sculpture titled “Joy.”

Honorable Mentions were handed out to Sooltan Madsen of Savannah Georgia for “Can You Spare a Fag,” oil on canvas; Regina Quinn of Gilboa, New York for “Salmon and Blue,” encaustic, oils and beeswax; and Philip Read of Long Island City for “On the Wings of a Dream”, drawing with watercolor.

“This skillful, wide ranging visual banquet can put a face to the complex mix of emotions from 2020’s extremes,” said Ms. Gurchie. “Sculptor Lloyd Lilly once told me ‘It’s in the tightest parameters of a system (ie: Awakening Theme) that our truest uniqueness shines forth.’ Additionally, it’s in viewing this, and experiencing that bond of commonality, that can help us to heal.”

“The timeliness and diversity of this show can do much more than entertain. It can lend you a perspective that you may not have considered. It can inform and help deepen your conversation,” she said. “It can show you that the indomitable human spirit, the timeless beauty and joy are very much present.”

Gordon F. Davis, 94, of Port Jefferson, NY passed away on June 29, 2021. 

Born Aug. 10, 1926 he was predeceased by his parents, Raymond and Gladys, brother Roger, twin sister Katherine, first wife Rose Marie, second wife Helen Marie and sons Michael, Kenneth and Timothy. He is survived by his loving son Daniel, Daniel’s wife Estine and granddaughter Shannon, daughter of the late Michael Davis.

After graduating from the Port Jefferson School District, he enlisted in the United States Navy at age 17, going on to serve in Okinawa, Japan. After his resignation from the Navy, he received his BS in Mechanical Engineering from the University of Missouri. 

Upon learning of his father’s failing health, he and his family returned to Port Jefferson, where he purchased the Long Island Heating Oil company — later named Long Island Comfort Corporation — and formed his own mechanical engineering company. 

While living in Port Jefferson, he served on the Port Jefferson School Board, Village and County Library Boards, Mather Hospital Board and was president of both the Port Jefferson Rotary Club and the Empire State Petroleum Association.  

A licensed pilot, his favorite pastime was flying across the country in his single engine aircraft, which led him and first wife Rose Marie to begin vacationing in, and ultimately retiring to, Fort Myers, FL where they lived until her death in 2001. After his remarriage to Helen, they divided their time between Fort Myers and Dublin, GA and permanently moved to Dublin to be closer to her family in 2017.   

Gordon was a lifelong member of the Presbyterian Church worshipping at the First Presbyterian Church of Port Jefferson and then the Cypress Lake Presbyterian Church in Fort Myers.  

A private graveside service will be held at a later date at the family plot at Sea View Cemetery in Mount Sinai, NY. 

In lieu of flowers, the family requests memorial contributions to the First Presbyterian Church of Port Jefferson, PO Box 397, Main and South Streets, Port Jefferson, NY 11777.

Post-pandemic thoughts for parents, teachers and administrators

Huge sighs of relief can be anticipated when local public schools reopen their doors this September — exclamations of relief not only from children and teenagers eager to resume in-person learning full time alongside their friends, not only from teachers exhausted from long hours shaping lessons onto distance-learning platforms, not only from parents, weary from assisting struggling students glued to laptops, iPads  or iPhones at home while juggling or, worse yet, resigning from paid jobs, and also from business owners glad to have their employees back.  

But will pre-pandemic and post-pandemic classroom learning be the same, and should it be? Should “distance learning,” supported by expanded technological resources, be granted a larger role within the classroom, with less teacher-led instruction? Which medium of delivery ensures a greater payoff of maximum learning for the resources invested?

Two Three Village residents, educators at the top of their profession — Jacqueline Grennon Brooks, professor emerita of Teaching, Learning and Technology, Hofstra University, and her spouse Martin Brooks, executive director of Tri-State Consortium, an association of over 40 school districts in New York, New Jersey and Connecticut — agree that the key to whether or not learning takes place is not how information is delivered but if knowledge is constructed. Whether it is a teacher or a book or a computer that provides a formal lesson, the students must connect the lesson to what they already know or have experienced for true learning to occur.

“Content alone is insufficient as a motivator for student learning: It must be combined with purpose … seen as meaningful by learners. Students learn best when engaged in learning experiences rather than passively receiving information,” according to the authors.

That theory of learning, called “constructivism,” suggests that you cannot directly impart knowledge, but you can facilitate experiences in which students construct knowledge. Jacqueline and Martin Brooks agree that the job of the teacher is to create meaningful experiences that enable the learner to do just that.

“There are kids who struggle to learn if what is being taught is not offered in a way that is particularly relevant to them. In order to figure out ways for them to have ownership of their learning, skilled teachers, interacting in person with these students, focus not only on content but concentrate on approaches that lead to critical and creative thinking.” 

What many parents and children learned during the pandemic is that at-home distance learning in front of a laptop, iPad, or iPhone cannot replace in-person classroom experiences created by skillful teachers. Virtual classrooms also denied children the opportunity to develop social skills through interaction with their peers. When schools reopen in September, students, parents and teachers will welcome the opportunity for true learning to begin again.

Fourth of July is a time meant to be spent with friends and family while barbecuing some of the best American meals.

It’s also the one holiday a year where lighting off fireworks from morning to night time is completely acceptable — even encouraged. 

This countrywide celebration of America may be enjoyable for most but for others, such as combat veterans and first responders suffering with post-traumatic stress disorder, it can be an extremely stressful day. And when fireworks are set off on other days, it can be even more unnerving for them and others. 

Is celebrating this national holiday at the cost of our own heroes? 

According to a National Health and Resilience in Veterans Study, 87% of veterans have been exposed to at least one potentially traumatic event and experience on average of 3.4 such events throughout their service. The National Institutes of Health also recorded that an estimate of 400,000 first responders in America have at least some symptoms of PTSD.

The degree of exposure varies from person to person, therefore affecting the magnitude of their illness.

The sounds of fireworks — loud, sudden and reminiscent of traumatic events — may trigger PTSD, making it difficult for some who experience symptoms to enjoy their holiday. Lighting off fireworks throughout the month or late at night could additionally put a veteran or first responder into a bad spot. 

Even weeks after the Fourth of July is over, sleeping troubles or nightmares may persist.  

Paws of War, located in Nesconset, rescues and trains shelter dogs to become service dogs for Long Island veterans and first responders. With the mental pressure of dealing with the holiday, a service dog can also serve as a calming aide to those coping through a PTSD episode.

One way to make sure a veteran doesn’t become triggered is to involve them in lighting the fireworks so the shock of hearing the fireworks won’t be unexpected. Many veterans choose to light fireworks for their family. 

There are many other ways to celebrate the Fourth of July and summer that don’t involve setting off fireworks. Fishing, boating, visiting historical parks, watching patriotic movies and barbecuing are just some of the alternate options that families can do together to celebrate. However, if you’re still itching for fireworks, sparklers are noise free and easy to bring anywhere you go.

So next Fourth of July, being sensitive to veterans and first responders could turn their nerve-racking holiday into a happy one.
