ADOPT CRANBERRY SAUCE!

This week’s featured shelter pet is Cranberry Sauce, one of several cats abandoned when their parents moved and now safe at the Smithtown Animal Shelter. She is a little love bug that will brighten your day.

According to the shelter’s staff, this little lady is all love all of the time.  She follows you around and demands attention. She is a stage 5 clinger and you won’t mind one little bit!

Cranberry can be adopted alone or with one of her housemates. She has an overactive thyroid and will need a home that can manage that

A Sweet Sauce to Savor

(Culinary.net) There are few things better than festive holiday celebrations. Everyone is gathered around the table, ready to eat and enjoy the company. The atmosphere is joyful, the decorations are beautiful and the food is absolute perfection.

From warm casseroles to hearty proteins, most spreads are made of an array of colors with mouthwatering sides and desserts. However, there are some dishes the holidays just can’t happen without. One is a classic, traditional Sweet Cranberry Sauce. It’s popping with color and texture. Plus, it makes everything it tops taste just a little bit better.

This sauce is perfect for nearly any holiday celebration but is also a sweet treat that can be served over vanilla ice cream for dessert. It’s fruity with a hint of citrus and flavorful with a dash of ground cinnamon and a bit of ginger.

This recipe works well into the holiday season. It’s a timeless dish but with a fresh and tangy twist that’s perfect for both gatherings with many guests or simple nights at home with those leftovers you just can’t resist.

Sweet Cranberry Sauce

Prep time: 2 minutes

Cook time: 10 minutes

Servings: 8

Ingredients:

12 ounces cranberries

1 cup granulated sugar

1/4 cup orange juice

1/2 cup water

1 1/2 tablespoons ginger paste

1/8 tablespoon salt

1/4 teaspoon ground cinnamon

2 tablespoons orange zest

vanilla ice cream (optional)

Directions:

In large skillet over medium heat, combine cranberries, sugar, orange juice, water, ginger paste, salt, ground cinnamon and orange zest.

Bring to simmer. Stir until thickened to desired consistency, 15 minutes.

Cool 30 minutes. Transfer to bowl. Cover and refrigerate 30 minutes. Serve alone or over vanilla ice cream, if desired.

Cranberry Sauce

INGREDIENTS:

1 package (12 ounces) fresh or frozen cranberries

2/3 cup sugar

1 seedless orange, peeled and sectioned

2 McCormick Bay Leaves

1 McCormick Cinnamon Stick

DIRECTIONS: Place all ingredients in 4-quart slow cooker. Cover. Cook 3 hours on high, stirring every hour. Uncover. Stir well. Cook, uncovered, 30 to 45 minutes longer on high or until slightly thickened.

Oatmeal Apple Cobbler

INGREDIENTS:

Apple Filling:

5 medium Gala apples, peeled, cored and thinly sliced

1 cup firmly packed brown sugar

1/4 cup all-purpose baking mix, such as Bisquick

1 teaspoon McCormick Ground Cinnamon Oatmeal

Cobbler Topping:

1 cup all-purpose baking mix, such as Bisquick

1/2 cup quick-cooking oats

1/2 cup firmly packed brown sugar

1/3 cup granulated sugar

1/4 teaspoon salt

1/2 teaspoon McCormick Ground Cinnamon

1/2 cup (1 stick) cold butter, cut into pieces

DIRECTIONS: Spray inside of slow cooker with nonstick cooking spray. For the Apple Filling, toss apple slices, brown sugar, baking mix and cinnamon in large bowl. Place in slow cooker. For the Cobbler Topping, mix all ingredients, except butter, in medium bowl. Cut in butter with fork until crumbly. Sprinkle over Apple Filling. Cover. Cook 3 hours on high. Serve with a scoop of vanilla ice cream.

Sausage Stuffing

YIELD: Serves 12

INGREDIENTS:

1/4 cup (1/2 stick) butter

2 cups chopped celery

1 cup chopped onion

1/2 pound mild (sweet) Italian sausage, casing removed

1 cup Kitchen Basics Original Chicken Stock

2 teaspoons McCormick Rubbed Sage

1 teaspoon McCormick Crushed Rosemary

10 cups cubed French bread (1-inch pieces)

DIRECTIONS: Melt butter in large skillet on medium heat. Add celery and onion; cook and stir until softened, about 5 minutes. Add sausage; cook and stir until no longer pink, about 5 minutes. Spray inside of slow cooker with nonstick cooking spray. Add stock and herbs; stir to blend. Stir in bread cubes and sausage-vegetable mixture. Cover. Cook 45 minutes on high. Uncover and stir. Cook, uncovered, 30 minutes longer. Source: McCormick
