With the polls open, residents have little time left to decide how to cast their votes. Last week’s candidate forum could help.

Former school board member Joe Sabia and incumbents Jerry Maline and Damon McMullen, who are all vying for two seats on the Northport Village Board of Trustees, discussed taxes, stormwater and more during a debate on March 8 at the Northport American Legion Post 694 Hall.

Maline and McMullen are each running for a third term.

Although Maline’s opening statement touched upon drivers speeding in the area and geese in village parks, residents were more concerned about why the village continues to pierce its tax levy cap in the annual budget.

Although the state mandates a fluctuating cap on how much municipalities can increase tax levies, a local board can override the cap and approve a budget above the limit with a supermajority of votes, or 60 percent. This year, the Northport board has proposed to pierce their 3.27 percent cap, for a new budget total of $20.4 million.

Maline said piercing the cap, and increasing taxes above the limit, would accommodate residents’ desires for village services.

“The facts are the facts,” Maline said at the event. “We don’t want to lessen your service. All the input I have from the residents [is] that you want the services to remain the same.”

The incumbent added that a lack of community participation makes it harder to come up with different ideas of addressing residents’ needs without increasing the budget.

“It’s a conglomerate of ideas, it’s not just ideas of people on the board,” Maline said.

For his part, McMullen said using reserve funding instead to offset a tax increase would negatively affect the village’s finances in the future.

Sabia felt the opposite. He proposed using reserve money to help keep taxes at bay and prevent the village from piercing the cap.

“My point would be to go through every single budget line item and every category in there and see what we can absolutely … reduce or make sure we’re not paying for duplicate services,” Sabia said.

While some residents continued pressing the candidates about taxes, other asked about the village’s rain garden plans.

In light of flooding in the area, the village has sought to establish a rain garden along Main Street. The garden would help catch the first inch to inch and a half of rainfall and filter out harmful chemicals in the process. According to McMullen, the village is currently waiting on a $500,000 grant to fund the garden, and is looking at ways to add catch basins for even more stormwater absorption.

“This is a method that’s been used around the country and it has been very successful,” he said of the rain garden.

Maline said he would continue to attend and participate in board meetings even if he is ousted from his seat. McMullen thanked residents for attending and said he hopes to upgrade the bathroom sinks in the village’s park, among other projects.

Sabia has his own agenda if elected, which includes maintaining handicap access to the parks, securing grants from the state to get more LED lights and maintaining the village’s sidewalks and roads. But his main focus remained on securing lower taxes for the village.

“You have to remember, we have a National Grid lawsuit against us. We have school districts that want more money from us,” Sabia said. “When you start to override the tax caps, it becomes a very, very dangerous thing because that means you’re raising your taxes higher than the rate of inflation.”

Voting is open until 9 p.m. at Northport Village Hall.

At the Paramount last weekend, what came before the headliner was almost more impressive.

Northport-based band Kodiak performed on the Huntington stage for the first time that night, opening for Billy Joel cover band Big Shot on Saturday, Feb. 27, and the teens rocked the house.

Before the show last weekend, Kodiak had played mostly open mic nights at their high school and some local bars around Northport, according to songwriter and lead singer Rich Orofino, 17.

In an interview at Orofino’s family home Monday, he and lead guitarist Matt Louis, 16, reflected on their big night while also looking toward their bright future.

“People are singing our lyrics in the crowd,” Orofino said. “That’s, like, the best feeling.”

Orofino and Louis, students at Northport High School, stressed how appreciative they were for the opportunity presented by the Paramount and Big Shot to be able to play the show, which will be remembered as a milestone for Kodiak.

Drummer Jonah Cohn, 17, and bass player Jack Burns, 18, round out the group.

The band has been together for about a year. They compared the sound of their eponymous debut album, released in 2015, to the indie rock band Real Estate. They mentioned Bob Dylan, The Who and Led Zeppelin as some of the bands they listen to.

Their second album, “Romantic Rebel and the Phony Reaper,” which they expect to be done in the next month or so, will have a harder, more electric-driven sound.

Because of that shift, Louis and Orofino had a hard time pinpointing Kodiak’s genre. But they’re okay with that.

“You should never try to duplicate yourself,” Louis said of their evolving style.

Wisdom and maturity came through in shocking abundance while speaking to the guys. That maturity softened Linda Orofino to the idea of her son pursuing such a tumultuous and uncertain career as a musician, a few decades after her husband took his shot at stardom and fell short.

“I did not want my son to be a musician,” his mother said. But his dedication and talent have proved her wrong, she said. Her husband is proud too, she added, when he hears Kodiak perform.

Orofino estimated that he has written about 230 songs, and while he couldn’t name a favorite at first, he settled on “Embers,” off their first album, after some deliberation.

Orofino and Louis both said that music is their one and only priority right now. They don’t have other hobbies — this is all they’ve ever wanted to be.

“I’ve been writing songs since ninth grade,” Orofino said. “In tenth grade one of my best friends put my name down on an open mic list at the school and I just stepped on stage and played two of my songs and I got a standing ovation. That was, like, the greatest feeling on Earth and I just never wanted to not be on a stage from that point on.”

Anyone who has spent time in Northport could understand how artists from there find inspiration.

“There’s so much Northport in our music,” Louis said.

Orofino fully endorsed that sentiment. “There’s literally an osprey’s nest we sing about,” he said, motioning toward the back door of the home, which looks out on the Long Island Sound.

Kodiak will be playing a two-hour show at St. Paul’s Methodist Church in downtown Northport Village sometime in March or April, as a fundraiser for a Northport food pantry. The date has not yet been determined.

Saying Louise Pizzuto was born to teach is an understatement.

Pizzuto, 62, started working as a special education teacher at Mount Sinai Middle School in September 1988. After 28 years, the mother of two is retiring to spend more time with her family. The Mount Sinai Board of Education announced Pizzuto’s retirement from her current position in the high school’s Special Education Department. Her last day is June 25.

The Smithtown resident became an integral part of the school district early on in her career.

After seeing some special needs students continuously fail and repeat classes, only to drop out of school after the government passed the No Child Left Behind Act in 2001, Pizzuto pushed for courses to accommodate her students. No Child Left Behind set higher standards that her students couldn’t reach on their own.

“They [kept] raising the bar, but my students didn’t have their academic abilities raised,” Pizzuto said. “In order to meet [the requirements] and close the gap somewhat, we had to really start putting in place some programs.”

The addition of more leveled classes or self-contained classes allowed these students to be taught and learn at their own level. More residents started moving to the school district when these programs were established. They were also incorporated into the high school after it was established in September 1991. Pizzuto was no stranger to going above and beyond for those who needed her help.

“When given students with special needs, she would give up her lunch period to audit a class so that she could learn different methodology to teach her students,” said longtime friend Gloria Musto.

Pizzuto also dedicated whatever free time she had, before, during and after school, to help her students.

Before working in Mount Sinai school district, Pizzuto worked at Concord High School in Staten Island, and stumbled into special education because there was a shortage of special needs teachers at the time. She was able to get a second masters in special education while she worked at the high school.

Pizzuto’s daughter Amanda Pizzuto-Montemarano said her mother goes above and beyond for her students, recalling a time her mother took a student to the doctor for an examination. The student was abusing drugs at the time, and was getting sick. Pizzuto paid for the visit, and helped other students similarly, while giving them the tools they needed to succeed.

Although the high school wasn’t the only educational facility she worked for prior to Mount Sinai, Pizzuto said she fell in love with the program because of the kids she helped.

While her career at Concord differed from her experience in Mount Sinai, making a difference in people’s lives is always the priority for Pizzuto. As a special needs teacher, Pizzuto put her students before the lesson, and by learning their strengths and weaknesses, provided background information on a subject to help them learn the curriculum at their grade level.

Her daughter said going into retirement is a big step.

“She is going to miss teaching terribly,” Pizzuto-Montemarano said. “But now she has grandchildren and they’re going to have the greatest teacher, like me and my brother had.”

Pizzuto’s son Paul-Eric has dyslexia, and used to sneak books home from school. She started spending hours helping her son grasp material from school. He said growing up with a mother who was not only a teacher but a special education teacher, was a gift.

Longtime friend and co-worker Michele Gaffney, of Baiting Hollow, said Pizzuto motivated her to get her masters in teaching when Pizzuto and her family moved to the Island. The two started working in the school district on the same day.

“She really optimizes what a teacher is,” Gaffney said. “She goes the extra mile. She’s just fabulous. Mount Sinai will never have another one like her.”

But Pizzuto hopes for the best.

“I told the principal when I handed them my retirement papers that I just hope that they replace me with another teacher that remembers the students before the curriculum,” Pizzuto said.

Don’t let its size fool you — the North Shore United Methodist Church in Wading River may be small, but the variety of outreach and support programs it has reaches across the Island.

“Sometimes there are certain people who are going through a difficult time and I think extending a hand and caring helps restore some hope that things are going to be okay,” said Diane Burkhardt, a member of the church for 11 years who is a retired Shoreham-Wading River middle school teacher. “People are so appreciative and thankful, which makes the whole experience gratifying and fulfilling. It makes you really appreciate what you have, which is humbling.”

Burkhardt said she is fortunate enough to be the team leader for the church’s outreach program, working on volunteer efforts like the Helping Hands Fund, which includes a food pantry that assists about 50 families in the Shoreham-Wading River area on a regular basis, and its back-to-school project, which provided school supplies to 30 children in need this past September.

Volunteers also deliver food to people’s homes, drive those in need to doctor’s appointments, help out with the church’s thrift shop, and deliver meals to and spend time with residents of Maureen’s Haven, a shelter service for homeless adults on the East End.

“Food is tangible, but what comes with it is the intangible quality of hope,” Burkhardt said. “I’m one of a dozen or so active members that are retired and put in a lot of hours because we feel we were all given gifts and skills that can be put to good use helping people.”

Linda McCall, of Center Moriches, has been attending North Shore United Methodist for four years and said she most enjoys spending her time helping those at Maureen’s Haven in Riverhead, while also volunteering through Helping Hands to provide gifts to children and meals to families around Christmas.

“It’s a very small church, and for such a small church we have so many outreach programs going that I found it almost impossible not to get involved,” she said. “It’s one of the things that keep me happy to be here on the Island. I moved here from Las Vegas, so I don’t have any family here, and the church has become my family. Volunteering fills my days with joy and happiness.”

Priscilla Hartman, a Shoreham resident who has been attending services for the last 35 years, said that as the church’s team leader for its membership care program, she finds it rewarding when she can help someone.

The program helps church members get to the pharmacy when they are temporarily ill, don’t have transportation or otherwise can’t leave the house. Volunteers also cook for them or clean their houses.

“It’s a great feeling when we’re helping a homeless person or someone who is down on their luck and seeing them get back on their feet,” she said. “I’m glad that my church is very ministry-oriented. I think it’s a good way for us to act. We’re a small church, but there’s nothing too large for us to take on.”

One example is the church’s partnering with Life and Hope Haiti, an organization founded by Lucia Anglade of West Babylon, who formed the Eben Ezer School in her hometown of Milot, Haiti.

Donna Eddy, who runs a craft group and is also involved with Maureen’s Haven and the thrift shop, said it’s these relationships people make with other community members and those they help that count in life and define who they are.

“I think we are all wired to need and to learn from each other,” she said. “You can’t love, have forgiveness, experience kindness, faithfulness and unselfishness unless you’re involved in the community. People need other people.”

And one person everyone at North Shore United Methodist agreed they need, is Burkhardt.

“She has an incredible amount of energy and her enthusiasm is infectious,” Pastor Hal Low said. “Nothing ever seems to daunt her. She’s an inspiration to others, including myself.”

Eddy agrees.

“She’s focused, driven and she makes you want to be the best that you can be and give all that you can, because that’s what she does,” she said. “She’s a wonderful model She gives selflessly her time, her energy. If you need something, Diane will be there. You can count on her.”

But Burkhardt doesn’t want to take any of the credit, because she said without the rest of the organization, there would be no outreach ministry.

“I’m part of a whole congregation and I couldn’t do anything alone,” she said, adding that other churchgoers also help by recycling cans and bottles to raise money for lunches for the children in Haiti for instance. Members are also currently providing dinner to children whose parents are both in the hospital while the father is ill, and have been helping transport a man in Bellport, previously of Maureen’s Haven and a home in Middle Island, to and from Sunday services since 2011.

Burkhardt said that she frequently recalls things Shoreham resident and longtime churchgoer Doris Olson used to tell her when she was heavily involved in outreach in her younger years.

“Whenever I’m dealing with someone that can maybe be hard to deal with, she always said, ‘God made that person, too,’ and that brings me right back in touch with what I’m really doing and why I’m going it,” Burkhardt said. “Every day, try to be a blessing to someone else.”

Festival of Trees returns to the Village Center

The Greater Port Jefferson-Northern Brookhaven Arts Council, in conjunction with the Village of Port Jefferson, will host the 20th Annual Charles Dickens Festival this weekend, Dec. 5 and 6, throughout the Village of Port Jefferson. The Village will magically transform into the Dickensian era, with streets filled with roaming characters such as Father Christmas, the Dickens Mayor, Scrooge, the Town Crier and the beloved chimney sweeps.

All events are open to the public and most attractions are free of charge. Begin your Dickens adventure with a Grand Opening Celebration Parade on East Main Street, Saturday morning at 11 a.m.

The festivities will feature many returning favorites, including ice skating at the Village Center, a cappella performances by choirs and harmony groups, Nutcracker performances, magic shows by The Great Wizard of the North, and many fine musical performances by area musicians. In addition, this year’s festival will feature Theatre Three’s 32nd annual production of “A Christmas Carol.”

Returning for its second year is the Festival of Trees, located on the second floor of the Port Jefferson Village Center. The festival was the brainchild of Jill Russell, who handles public relations for the Village. “I first saw it years ago in Oklahoma City, where I grew up. They [also] had something called Festival of Trees. It was almost like an international festival of trees. Different countries were represented,” said Russell in a recent phone interview.

Eighteen beautifully decorated trees will grace the second floor, decorated in various themes. New entries this year include the First United Methodist Church, Ace Hardware, the Fox and the Owl Inn, The Greater Port Jefferson Chamber of Commerce, Antique Costumes and Prop Rentals by Nan, Theatre Three and Olde Town Gardens, whose tree will feature a train.

Returning favorites include, among others, Jolie Powell Realty, Port Jefferson Rotary, Stony Brook Confucius Institute, Pediatric and Adolescent Medicine, Bridgehampton National Bank, Danfords Hotel and Marina, Friends of the Port Jefferson Free Library, the Greater Port Jefferson-Northern Brookhaven Arts Council and Red Sled. In addition, top sponsors Empire National Bank and Maia Salon Spa and Wellness will also showcase a tree in the festival.

The trees were set up last weekend and the designers came in on Sunday and Monday to decorate. The event has really taken off. “We still get people asking ‘How do you get a tree?’ It is wildly popular,” said Russell. “It goes through the month of December, and it is so beautiful and people enjoy it so much because they come to ice skate, they come to see the trees — both things feed off of one other; they go look at the gallery exhibit. It just breathes a whole new life to the Village Center. With the ice rink and the Festival of Trees, it has been really incredible.”

“Already, in year two, it has become competitive — with not what you do to your tree but how you embellish the tree and the surrounding area and how you create a theme,” she laughed. “It’s been fun.”

New to the Dickens Festival this year will be an event titled Let There Be Light, a dazzling light show projected on Village Hall. Animated characters will appear in the front windows surrounded by swirling Christmas decorations, giant snowflakes and sparkly stars. The presentation will be available for viewing during the weekend from 6 to 7:30 p.m., on the half hour, for 15 minutes of dazzling fun and will be shown each weekend leading up to Christmas — weather permitting. The Harbormaster building will be transformed into Cookieland, where children can decorate their own holiday-oriented cookies and houses.

As in past years, East Main Street will become Dickens Alley, and Fezziwig’s Ball, featuring live music on traditional instruments led by a dance caller, will take place at the Masonic Lodge. An impressive model train display will be featured on the corner of East Main and Main on Dec. 5, from noon to 5 p.m. and Dec. 6, from noon to 4 p.m., while the Port Jefferson Free Library will feature new programming and the fabulous Dickens Cottage next to the main building.

Horse and carriage rides will thrill the young and young-at-heart, and the trolley will help transport visitors to various venues throughout the Village for the entire weekend. The Port Jeff Jitney bus will transport visitors to and from downtown, from the free parking areas found outside the Village.

 This year’s honoree is Pat Darling Kiriluk, the creator of a holiday tradition and highlight of the festival — Santa’s Workshop, located at the corner of W. Broadway and Barnum Avenue. Join Santa and his elves and wind through three whimsically decorated rooms. Twinkling white lights, elaborate confection displays, and giant nutcrackers are just a few of the signature elements that bring the magic of Christmas to life. The workshop will be open weekends from 1 to 5 p.m. through Dec. 14.

Brookhaven Highway Superintendent Dan Losquadro had a busy year filled with rain, sleet, snow and, now, a re-election bid. We think he handled them all fairly well and deserves a second term.

Just two years removed from being elected, Losquadro is just getting started at the Highway Department level after stints in the Suffolk County Legislature and New York State Assembly. After coming into office with the inheritance of a mounting debt and crumbling infrastructure, we feel the highway superintendent has been proactive and pragmatic in finding solutions to the county’s problems, while remaining transparent throughout his office’s shortcomings.

In one of the most tangible litmus tests, Losquadro has remained accessible with his office’s attempts at putting a dent in a backlog of road repaving and repair projects, while also admitting there was no way he could tend to every single one. That kind of honesty demonstrates his willingness to work with the public and trust in those he serves.

The winter was brutal and full of snowfall, and it didn’t stop there.

We even saw a horrific tornado barrel through the North Shore in August. All the while, we were pleased with Losquadro’s handling of the storms, hitting the pavement quickly and remaining accessible throughout.

He has also worked to bring the Highway Department into the current century, ushering in new technology and implementing new methods of doing business.

Losquadro’s opponent, Democrat Jason Kontzamanys, has based much of his opposition campaign on knocking the county’s debt and vowing to watch after the taxpayer’s dollar. While we agree with the sentiment of his argument, we don’t feel that is something the current superintendent fails to recognize or act upon.

There is always debt in government, but Brookhaven has stood out with a Moody’s bond rating of Aa2. If Moody’s has given the town a favorable rating, then the town is not in dire financial straits.

Businesses that don’t carry debt are few and far between, and while we recognize the town has mounting debt, we also feel Losquadro is privy to the financing of that debt and works to deal with it accordingly as much as a highway superintendent can.

Losquadro is just getting started. He had a tough winter with very little criticisms, especially from the ground level of his constituents, and we feel he should get another term under his belt.

He is not only the first African-American Speaker of the New York State Assembly, but also the first speaker to visit various districts on Long Island, as far as one long-standing North Shore lawmaker can remember.

Assembly Speaker Carl Heastie (D-Bronx) visited Setauket on Oct. 20, and met with residents and North Shore government officials, including Suffolk County Legislator Kara Hahn (D-Setauket); Brookhaven Councilwoman Valerie Cartright (D-Port Jefferson Station); and state Assemblyman Steve Englebright (D-Setauket).

“This happens about once every … well, it never has happened,” Englebright joked. “It’s pretty amazing.”

While touring the area was on Heastie’s agenda, his visit was also about getting better acquainted with the needs and concerns of residents in areas like Setauket, he said.

“When members get up and speak in conference, when they talk about what’s important to them or where they want us to concentrate or try to do things in the budget … [visiting the districts gives] me a better idea of what they’re speaking about,” Heastie said in an interview.

Heastie was elected Speaker of the NYS Assembly on Feb. 3. Since his election, Heastie has tackled a variety of issues including education, homelessness, financial stability for families and minimum wage, among other areas of concern.

The speaker also has ties to the greater North Shore community, as he graduated from Stony Brook University in 1990 with a degree in science. State Sen. John Flanagan (R-East Northport) was recently named the Senate majority leader, making the North Shore’s presence strong in the state Legislature.

Although Heastie had limited time to mingle, Englebright guided Heastie around various areas in Setauket, touring the community’s coveted Greenway  Trail, and introducing him to the history of the region and the role it played in the birth of the United States, starting with Patriot’s Rock in Setauket, where the famous Battle of Setauket was fought.

Officials from Stony Brook University library were on hand to deliver the speaker a copy of a famous letter George Washington signed at West Point during the Revolutionary War.

“I used to teach political science and American history,” Heastie said. “So I’m kind of a history buff. It’s just something that was a little different than other parts of the tour, so this was nice — particularly with it being so close to the college that I graduated from.”

After learning about Long Island’s link to the Culper Spy Ring, dating back to the Revolutionary War era, the speaker stopped at the Bethel African Methodist Episcopal Church, followed by a visit to Gallery North in Setauket.

Throughout the visit, Englebright and other North Shore leaders used their time with the speaker to reiterate some of the region’s most pressing issues, including preservation and environmental sustainability. Englebright also reaffirmed Heastie’s desire to tour the districts as a means of helping those he represents and serves as speaker.

“He’s very interested in visiting the various districts and learning of what his members are working on,” Englebright said. “I’m one of his senior members, and I’m very grateful he wants to come out and see what are the things I’m really focused on in the district.”

When dance master Jerome Robbins inspired Arthur Laurents, Leonard Bernstein and Stephen Sondheim to come up with “West Side Story,” they in turn went to The Bard for his “Romeo and Juliet,” morphing the Guelphs and Ghibellines — that’s the Montagues and Capulets of Verona — into the street gangs, the Jets and Sharks. The “star-crossed lovers” became Tony and Maria. This gift to musical theater hit the boards at the Engeman two weeks ago, and the boards are still rattling.

The entire production is built around dance. The pirouettes, arabesques and jetes were neatly comingled with the modern interpretive method to produce a mathematically perfect, yet emotionally penetrating terpsichorean feast.

At the head of all this was the choreography skills of Jeffry Denman and his two assistants Lauren Cannon and Trey Compton, who also acted as fight choreographer. This talented team gave the audience a night of dance the excellence of which your scribe has not seen in his near decade of writing “criticism.”

They say that the “devil is in the details” but not in this production. Imagine if you will a six-foot-high chain link fence running from upstage center down to stage left … suggesting urban schoolyards. This “prop” was climbed on, jumped on and over by male dancers of the Jets and Sharks in their attempts to escape … in tempo. They actually scaled the fence, landing on the other side on the beat — an incredible act of choreography.

Overall direction was in the always capable hands of Igor Goldin (“The Producers,” “Evita”). If one prescinds from the dance numbers, his blocking and interpretation efforts were carried through with exemplary professionalism.

Outstanding among the dancers were Scott Shedenhelm of the Jets and Karli Dinardo in the role of Anita. Shedenhelm was at his best in “Gee, Officer Krupke,” by far the funniest and most clever number in the show. Dinardo scored talent-wise in “America.”

The leads were handled skillfully by Zach Trimmer as Tony and Samantha Williams as Maria. Both have fittingly tender voices; he a more lyrical tenor, she a mellow, yet strong soprano. They excelled as the star-crossed lovers.

The leader of the Jets, Riff, was played by Sam Wolf who pits himself and his gang against Bernardo, played by Nikko Kimzin and his Sharks. The battles of Sharks vs. Jets is the dance armature of the play, and these two lead their factions brilliantly in dancing, acting and singing.

Among the musical numbers, the “Jet Song” really set the theme of pride and struggle. “Dance at the Gym” by the whole company brought out the animosity that almost erupted in violence. The tender “Tonight” by Wolf and Williams presented the balcony scene in all its romance. The mordant “America” that also showcased the patent talent of Ashley Perez Flanagan as Graciela, hit hard musically at the state of society in both the USA and Puerto Rico.

Trimmer and Williams also performed romantically in “One Hand, One Heart.” And there was that Officer Krupke number that was most memorable.

The cast also included Mike Baerga, Josh Bates, Christian Bufford, Mark T. Cahill, Nick Casaula, Victoria Casillo, Joey Dippel, Jon Drake, Roy Flores, Eric Greengold, Joan Heeringa, Melissa Hunt, Gregory Kollarus, Leer Leary, Rick Malone, Ashley Marinelli, Kelly Methven, Kaitlin Niewoehner, Joseph Rosario, Tori Simeone and Marquez Stewart who all did a fabulous job.

Piercing live music was led by James Olmstead on keyboard with assistance from Craig Coyle; Robert Dalpiaz and Joel Levy on reeds; the indomitable Joe Boardman on trumpet with Steve Henry and Pete Auricchio; Brent Chiarello and Frank Hall on trombone; bass was Russell Brown with the reliable Josh Endlich on percussion. This ensemble was at its best in the staccato numbers of both Jets and Sharks such as “Dance at the Gym” and especially in “The Rumble.”

The Engeman spares no opposition when it produces a massive piece of entertainment like “West Side Story.”

All elements of the production including costume design by Tristan Raines, set design by DT Willis, lighting by Zack Blane and sound design by Laura Shubert were masterfully integrated into a sophisticated, articulated and authentic whole.

Many critics a few years back tried to see a “social significance” dimension latent in this show. On TV one described it as “… a slice of New York life.” Nonsense, of course. It was Shakespeare with a life of its own as true musical theater.

The John W. Engeman Theater, 250 Main St., Northport, will present evening performances of “West Side Story” on Thursdays, Fridays and Saturdays at 8 p.m., and matinees on Saturdays at 3 p.m. and Sundays at 2 p.m. through Nov. 8. Every Mediterranean country, in addition to California, and even Chile and Argentina, grow olives and produce various types of olive oil, including the much-praised “extra-virgin oils.” They are available in local supermarkets, as well as gourmet shops, and even stores specializing in these green-gold colored offerings.

Extra-virgin oil comes from a cold, first-pressing of olives, crushed using the traditional millstone method. The oil that comes from this first cold-pressing qualifies as extra-virgin if it contains not more than 0.8 percent of oleic acid. This cold-pressing method also produces an olive oil that retains both its intense natural aroma and a delectable flavor. Extra-virgin olive oil must also meet other high standards of flavor, color, and aroma. The color of an extra-virgin olive oil usually ranges from a deep golden to dark green; color however, is no indication of quality.

Extra-virgin olive has a low smoking point and is not recommended for frying and especially not deep-frying. Add it after cooking to finish a dish and add a rich, deep, fruity-olive flavor. In a shallow bowl, I like to add one cup extra-virgin olive oil, a head of mashed roasted garlic, grated parmigiano-reggiano cheese, fresh black pepper, a hint of salt and hot pepper flakes. I mash it all up and spread over freshly toasted bread with a glass of red wine.

Balsamic vinegar is not wine vinegar, but rather vinegar made from the juice of freshly pressed grapes that is filtered and boiled, with no fermentation taking place during the process. After the juice has been reduced, it is aged in various types and sizes of barrels, for many years. Some of the barrels used are oak, chestnut, ash, cherry, and even mulberry, each imparting a different flavor and subtle nuance. These red-brown, pungent vinegars with a robust, sweet-sour flavor have been made in Modena, Emilia-Romagna, Italy for than 1,000 years.

Balsamic vinegars are great in salads, to dress grilled vegetables and meat. Older versions are great lightly drizzled over some fresh chunks of Parmigiano-Reggiano cheese or even sweet strawberries for a special treat.

September is a wonderful time of the growing season. Your plants have matured and yes, your fruits, vegetables and herbs are ready to harvest and enjoy, not only now, but in the cold winter months ahead. There are a number of ways to preserve what you’ve nurtured all season long. Here are some ideas.

Canning
Canning (or putting up, as my grandmother used to say) involves cooking produce, storing it in sterile jars and sealing them so they are airtight. Grandma’s cupboard included “put up” green beans, corn and peaches, especially the white peaches from a tree in her backyard. The jars do not need refrigeration as long as they haven’t been opened.
If you are interested in canning, because of the longevity of the fruit and vegetables,one to five years, take a class first, as it is very important that the contents are preserved correctly and therefore safely. Cornell Cooperative Extension and other local organizations periodically hold such classes. Ball’s “Complete Book of Home Preserving,” edited by Judi Kingry and Lauren Devine, has 400 recipes with details on safely preserving your produce.
A reminder: Be very careful with any chemical products you use on produce for human consumption. My preference is to go completely organic, but if you do use chemicals, read the package directions for timing — how long before harvest can you use the product safely. And remember, label each package or jar with contents and date preserved.

Turning your fruits into jams and jellies is another great way of preserving your harvest. Jellies, jams and preserves can be made from most edible fruits. Jellies are clear and made from juice, while jams and preserves use the whole fruit. Marmalade adds the peels, which can add tartness in contrast to the sweet jelly that surrounds it.
Unusual jellies include mint; rose, made from the petals or hips; thyme; tea; lavender; peony; carnation and scented geranium. Many of the edible flowers can be made into syrups too, or turned into candies, such as violet candy.
There are countless recipes available. A really simple recipe uses fruit, such as strawberries, sugar, pectin and water. The resulting jam is stored in containers in the freezer. It lasts about a month in the refrigerator once defrosted.

Drying
One of the easiest ways of preserving is by drying. Herbs, for example, do very well this way. Harvest your herbs, making sure they are clean with no insects. Remove any dead leaves. Tie each bunch of herbs bouquet-style and hang them upside down in a cool, dry place. You can then remove and use the leaves as needed or remove all the leaves and store in a plastic bag or storage container. Herbs are not the only plants that can be dried. Virtually all fruits and vegetables can be too. There are various methods ,including drying in the sun, drying in the oven or drying in a dehydrator. Generally, these are rehydrated before use, but not necessarily. Dried apple chips are crunched on as is or can be added to salads. Dried sunflower seeds, salted or plain, don’t need rehydration either. Raisins can be rehydrated with water or your favorite alcoholic beverage (for adults only), like rum or brandy. Use them in rice pudding or homemade ice cream.
Dried string beans, onions and carrots can be used in soups and stews. The University of Georgia Cooperative Extensive has a 12-page pamphlet on drying fruits and vegetables that can be downloaded from their website (www.nchfp.uga.edu/publications/uga/uga_dry_fruit.pdf). It gives detailed information including how much water is needed to rehydrate each, how long each needs to be dried in a dehydrator and much more.
One of the benefits of drying is that you don’t need special equipment (like a large freezer) to store the produce — just package in an airtight container and store on a shelf in a cool, dry place.

Oil
If you know that you’re going to be using certain herbs in salads, carefully wash and dry the leaves, removing any brown leaves and stems. Store the leaves in a container — I prefer glass — covered with salad oil of your preference. When ready to use the herbs in a salad, take out the required amount, dice and toss into either the salad itself or your salad dressing.

Freezing
If you have a large freezer, freezing is another easy way to keep your fruits fresh and tasty for winter. Take berries, strawberries, blueberries, raspberries, etc., wash them gently and remove any stems. Let them sit on paper towels or clean dishcloths until dry. Then spread them out on a cookie sheet. Put the cookie sheet in the freezer for a few hours. When the berries are completely frozen, transfer them to a freezer bag or plastic storage container and keep in the freezer until ready to use. This is also an easy way to preserve herb leaves. Remove the leaves from the stem, spread out on a cookie sheet and freeze.
Herbs can also be frozen using ice cube trays. Mince the herbs and fill each cube until it is almost full. Cover with water and move to the freezer. When the herb ice cubes are frozen, transfer them to a freezer bag or plastic storage container and keep frozen until ready to use. Using ice cube trays gives you portion control and makes it easy to take out just what you need. This method is particularly useful for herbs to be added to soups and stews, or mint to be added to iced tea.
When freezing vegetables, it’s best to blanch — dip in boiling water — them first to stop the ripening process, submerge them in cold water and freeze as quickly as possible.

Pickling is a very old method of preserving vegetables and yes, even fruits can be pickled. While cucumbers are the most common, onions, peppers, green beans and even watermelon (the white part) can be pickled for future use. I particularly like horseradish pickles, that is, cucumbers with horseradish included in the brine, and pickled beets; see below for my simple recipe. The principle behind pickling is that acidic vinegar prevents the growth of most bacteria.
