Sometimes when we buy seeds or plants there will be terms listed on the label or packaging that tell us that plants are raised in a certain way or have certain characteristics. Many gardeners will seek out special types of plants, such as heirloom or hybrid. What do these terms mean and how can the gardener use them to his or her best advantage?

Each autumn when I was a kid, my father used to select the best tomatoes he had grown the past summer and save the seeds. He’d remove them from the tomato and dry them on a paper towel. Come spring, he’d plant the seeds to get the new generation of tomatoes. He didn’t use the term then, but they were what was known as heirloom plants. Heirloom plants are ones grown from seed openly pollinated and produced by the parent plant. In general, heirloom plants breed true to the parent. We generally think of heirloom plants in terms of tomatoes, but the term refers to any older varieties of plants, generally passed down through the generations.

Hybrids

Hybrids are crosses between two different varieties of a plant in an attempt to get the best qualities of both. Seeds from hybrid plants do not breed true, so saving them for future generations is not really an option. Gardeners therefore must buy the hybrid seeds (or plants grown from them by plant breeders) each year.

Sports

Sports are unexpected mutations of a plant. Saving the seeds from sports is iffy at best. The seeds might not be viable, could produce the new characteristics or could produce the original plant. Generally, if a sport has desirable qualities, like an apple tree with a branch that produces larger, sweeter apples, the plant is reproduced vegetatively by cuttings since cuttings will breed true.

GMOs

GMOs are genetically modified organisms. A scientist in a laboratory has taken genes from one organism and added it to another. The foreign genes could come from any type of organism, other plants or even animals. Supporters of GMOs say that the resulting product is safe and has superior qualities, such as it may be more disease resistant, have a longer shelf life or the plant may produce a heavier crop. Opponents are concerned about unexpected consequences — is the product safe? What are the long-term results? You may see products in the supermarket marked non-GMO because of these concerns. Legislation passed last summer in the U.S. will require foods with GMOs to be labeled. Some foods that have been genetically modified include soybeans, corn and tomatoes.

Organic gardening

Organic gardening refers to any plant — heirloom, hybrid, sport or GMO — raised without the use of chemical pesticides and fertilizers. Organic gardeners use compost or other nonchemical fertilizers like compost tea, bone meal, holly tone, etc. To avoid pesticides, organic gardeners will sometimes hand pick pests like slugs, encourage birds to nest in the garden (to eat insects) and use companion planting, for example, surround tulips with daffodils, to keep the squirrels away. For farms to be certified organic, chemical pesticides and fertilizers cannot be used on the land for a number of years before the beginning of organic gardening.

Many ways to kill cancer involve tapping into a cell’s own termination system. With several cancers, however, the treatment only works until it becomes resistant to the therapy, bringing back a life-threatening disease.

Collaborating with researchers at several other institutions, Dr. Lina Obeid, the director of research at Stony Brook University School of Medicine, has uncovered a way that cancer hides a cell-destroying lipid called ceramide from treatments. The ceramide “gets co-opted by fatty acids for a different species of fats, namely acylceramide, and gets stored side by side with the usual triglycerides,” Obeid explained in an email about her recent finding, which was published in the journal Cell Metabolism. “It makes the ceramide inaccessible and hence the novelty.” The ceramide gets stored as a lipid drop in the cell.

“We describe a completely new metabolic pathway and role in cell biology,” Obeid said. Other researchers suggested that this finding could be important in the battle against cancer. “That acylceramides are formed and deposited in lipid droplets is an amazing finding,” George Carman, the director of the Rutgers Center for Lipid Research, explained in an email. “By modifying the ceramide molecule with an acyl group for its deposit in a lipid droplet takes ceramide out of action and, thus, ineffective as an agent to cause death of cancer cells.”

Carman said Obeid, whom he has known for several years, visited his campus in New Jersey to share her results. “All of us at Rutgers were so excited to hear her story because we knew how important this discovery is to the field of lipid droplet biology as well as to cancer biology,” he said. Obeid conducted some of the work at the Kavita and Lalit Bahl Center for Metabolomics and Imaging at Stony Brook University. The center officially opened on Dec. 1 of last year on the 15th floor of the Health Sciences Center and will move to the Medical and Research Translation Building when it is completed next year. “This study is exactly the kind of major questions we are addressing in the center that [the Bahls] have generously made possible,” she explained.

Obeid discovered three proteins that are involved in this metabolic pathway: a ceramide synthesizing protein called CerS, a fatty acyl-CoA synthetase protein called ACSL and an enzyme that puts them together, called DGAT2, which is also used in fatty triglyceride synthesis. Her research team, which includes scientists from Columbia University, Northrop Veterans Affairs Medical Center and Mansoura University in Egypt is looking into implications for the role of this novel pathway as a target for cancer and obesity.

Indeed, obesity enables more frequent conversion of ceramide into acylceramide. “Fats in cells and in diets increase and predispose to obesity,” Obeid suggested. “This new pathway we found occurs when fatty acids are fed to cells or as high-fat diets are fed to mice.” In theory, this could explain why obesity may predispose people to cancer or make cancer resistance more prevalent for some people. According to Obeid, a high-fat diet can cause this collection of proteins to form in the liver of mice, and she would like to explore the same pathways in humans. Before she can begin any such studies, however, she would need numerous approvals from institutional review boards, among others.

Obeid and her collaborators hypothesize that a lower-fat diet could reduce the likelihood that this lipid would be able to evade cancer therapies.

These kinds of studies “provide the justification for looking at the effect of diet on acylceramide production,” Daniel Raben, a professor of biological chemistry at Johns Hopkins University School of Medicine, explained in an email. Further research could include “isocaloric studies with [high-fat diets] and [low-fat diets] in animals that are age and gender matched.”

Obeid was a part of the first group to describe the lipid’s role in cancer cell death in 1993. “We have been studying its metabolism and looking at how it’s made and broken down,” she said. “We found recently that it associates with these proteins to metabolize it.”

While the lipid provides a way to tackle cancer’s resistance to chemotherapy, it also has other functions in cells, including as a membrane permeability barrier and in skin. A therapy that reduced acylceramide could affect these other areas but “as with hair loss [with chemotherapy treatment], this will likely be easily managed and reversible,” Raben explained.

Obeid and Yusuf Hannun, the director of the Cancer Center at Stony Brook, are searching for other scientists to work at the Kavita and Lalit Bahl Center for Metabolomics and Imaging. “We are actively recruiting for star scientists” at the center, Obeid said. Other researchers suggested that the history of the work Obeid and Hannun have done will attract other researchers.

Hannun and Obeid are “considered the absolute leaders in the area of sphingolipid biochemistry and their clinical implications,” Raben said. “Simply put, they are at the top of this academic pile. Not only are they terrific scientists, they also have an outstanding and well-recognized reputation for training and nurturing young investigators.” Carman asked, “Who wouldn’t want to be associated with a group that continues to make seminal contributions to cancer biology and make an impact on the lives of so many?”

As for the next steps in this particular effort, Carman foresaw some ways to extend this work into the clinical arena. “I can imagine the discovery of a drug that might be used to combat cancer growth,” Carman said. “I can imagine the discovery of a drug that might control the acylation of ceramide to make ceramide more available as a cancer cell inhibitor. Clearly, [Obeid’s] group, along with the outstanding colleagues and facilities at Stony Brook, are positioned to make such discoveries.”

The latest version of “Beauty and the Beast,” which broke box office records when it opened last weekend, offers a visually stunning montage, as one magnificent set blends into the next in a familiar story that, not much of a spoiler here, tracks the well-known story.

The sets, cinematography and songs take center stage in this live-action remake, as Disney spared no expense to make the enchanted castle, the quiet village where every day is like the one before, and the journey through the forest between them as detailed and lavish as the animated version. The script and main actors, including Emma Watson as Belle and Dan Stevens as the Beast, are fine, but not extraordinary.

Disney may not have wanted to tinker too much with a classic film and its well-known dialog, leaving the original script largely unchanged. That is both for the better and the worse, as this current incarnation lacks a novel flavor, a new Disney humor and charm, or the opportunity to explore much more about the characters. There are a few welcome moments when the audience learns more about unfortunate events in Belle and the Beast’s past, but those are short-lived in a film that is over two hours.

Luke Evans does a serviceable job as Gaston, conveying the narcissistic brute who seems more in love with his own reflection than he is with Belle or anyone else. The charm or the irresistibility the villagers feel for him is not evident to Belle or to the audience.

Josh Gad provides welcome comic relief as Gaston’s companion LeFou, fawning over him and calming him down when things don’t go his way. Gad takes his character further than the animated version of LeFou, becoming impish and playful.

Like the Broadway version of the classic animated film “Aladdin” and its “Never Had a Friend Like Me” song, “Beauty and the Beast” somehow equals and, in some ways, exceeds the original film with its “Be Our Guest” feature. While Belle prepares for her meal, the creatures of the castle surround her with food, song and spectacle.

While the script and the characters stay true to the Broadway and animated versions of the story, the visual details truly make the film memorable. The finale in the castle looks like the kind of details an eager bride would include if she had an unlimited budget, with symmetrical floral arrangements, magnificent lighting, perfectly spaced dancers and a cast of characters delighted to share in the space.

For parents, the scenes of peril with the wolves outside the Beast’s castle are familiar and filled with the same kind of potential for danger. Young children will likely be as concerned for the welfare of Belle and the Beast in the wolf scenes of this film as they would be watching the animated version.

The fight scene between the Beast and Gaston also involves some peril, with Gaston displaying a combination of cowardice and villainy. At the same time, the fight scene between the villagers incited by Gaston to battle and the members of the enchanted castle who are defending themselves also contains some of the few moments of humor in a film that otherwise takes its tale and the retelling of it seriously.

Some of the other cast members, including Emma Thompson as Mrs. Potts, have a tough act to follow, repeating familiar phrases and songs from Angela Lansbury. Thompson holds her own, regaling the audience with the lyrics from a tale as old as time.

The three-dimensional version of the film included a few noticeable effects, including when Belle and the Beast engage in a snowball fight. It also adds some depth to the image of the castle and the trek through the woods. The additional expense, however, didn’t seem especially necessary, given an elaborate attention to other visual details.

Italian Meatballs

It seems as though there are as many kinds of meatballs as there are ethnicities to create and cook them, and like most cuisines they make use of flavors that come from ingredients indigenous to the area from which they originate. Surely meatballs, along with so many other dishes, flavors and culinary creations, have become one of the favorite dishes brought to this country by immigrants and fused into what we’ve come to think of as our own cuisine.

Perhaps the most popular are Italian meatballs simmered in a savory tomato sauce; but there are also Swedish meatballs, flavorfully topped with their pale gravy. These are only a few of the many ways cooks over the centuries have rolled ground meat into tasty orbs. No matter your own ethnic origins, these little round treasures from far away places are sure to please your palate.

Italian Meatballs

YIELD: Makes 8 to 10 servings

INGREDIENTS:

2 pounds ground beef, pork or one pound of each

4 large eggs, beaten

2 cups unflavored dried bread crumbs

2/3 cup freshly grated Parmesan cheese

1 tablespoon each fresh flat leaf parsley, basil, and oregano (or 1 teaspoon each dried)

One clove garlic, minced

Salt and freshly ground black pepper, to taste

One 28-ounce can tomato puree

One 28-ounce can Italian plum tomatoes, pureed with their juice

3 tablespoons extra virgin olive oil

One whole onion, peeled

DIRECTIONS: Preheat oven to 400 F. Combine meat, eggs, bread crumbs, cheese, herbs garlic, salt and pepper. Mix thoroughly. Dipping hands into cold water occasionally, roll mixture into balls the size of a golf or Ping-Pong ball and place on baking sheet with half an inch between them. Bake until brown on top, about 15 minutes, turn and bake another 15 minutes.

Meanwhile, in a large pot, heat tomato puree and plum tomatoes to a simmer, add oil and onion and stir. Gently drop browned meatballs into sauce and stir to submerge them. Simmer or cook on low flame 2 to 3 hours, until sauce is somewhat reduced and thickened. When ready to serve, add salt and pepper to sauce, if needed, and remove onion. Discard or save for another use. Serve with pasta, crusty bread and a salad.

Swedish Meatballs

YIELD: Makes 4 to 6 servings

INGREDIENTS:

4 tablespoons unsalted butter

½ cup minced onion

1 cup unflavored bread crumbs

1 cup milk

1 pound ground beef

½ pound ground pork

One egg

One onion, minced

Salt and freshly ground black pepper

¼ cup flour

¾ cup cream

DIRECTIONS: In a large skillet melt two tablespoons of the butter and sauté the onion until golden brown. In a large bowl, soak the bread crumbs in the milk, add the meat, egg, onion, salt and pepper, and mix thoroughly. Dipping hands occasionally in cold water, shape the mixture into meatballs the size of a golf or Ping-Pong ball and roll in 3 tablespoons of the flour. Reserve one tablespoon of the flour for later.

Melt remaining butter in skillet and brown the meatballs on all sides over medium heat. Shake the pan or nudge the meatballs with a spatula so they retain their round shape. When browned and cooked through, remove and set aside to keep warm. Combine the reserved flour with the cream and with a wire whisk stir gradually into the pan juices. Simmer 3 to 4 minutes, stirring frequently until thickened. Pour over meatballs and serve hot with noodles.

Middle Eastern Meatballs

YIELD: Makes 8 servings

INGREDIENTS:

1 pound ground lamb

½ cup minced onion

3 tablespoons finely chopped fresh mint or 1 teaspoon dried

1 teaspoon ground cinnamon

1½ teaspoons grated lemon zest

Salt and freshly ground pepper, to taste

½ teaspoon finely minced dried rosemary

1 teaspoon ground cumin

½ teaspoon dried coriander

1 cup plain good quality Greek yogurt

DIRECTIONS: Preheat oven to 450 F. Mix lamb, onion, mint, cinnamon, lemon zest, salt and pepper, rosemary, and ½ teaspoon cumin. Roll into 16 meatballs and bake, turning once, about 15 minutes per side, until browned. Meanwhile mix yogurt with remaining half teaspoon of cumin and coriander. Add salt and pepper, to taste. Serve with rice or couscous, sliced tomato and cucumber and baked eggplant.

Eileen Sanger, the beautiful, vivacious plein air oil painter with a passion for life, talks about her art, her future plans and how she managed to not let personal loss define her life. How would you describe your art?

I consider myself to be a modern impressionist. I paint color, light and shadow creating a fleeting moment in time. I use small and large shapes, layering color, and using current themes such as ocean scenes, farm scenes, boats, etc. It’s about what my eyes can see and what I feel.

Who has inspired you along the way?

I have been inspired by Monet, Sorolla, Sargent and even Fairfield Porter. I have also learned from my friend Don Demers, a nationally recognized marine painter. But I have to say that my interest in becoming an artist began with my third grade art teacher, Mrs. Weber, who saw potential in my art and persuaded my mother to let me take lessons. From that point on, I have had either a pencil or a brush in my hand.

Why do you prefer plein air painting?

Painting outdoors opens all my senses and brings out an emotional content. My heart actually beats faster when I am about to begin the painting which reveals the emotion behind the brush, and then intuition takes over.

What is the best thing that art has brought you?

Art has always been the gateway to my soul and true self. It has brought me a sense of purpose and has filled my life with joy. I have met some wonderful artists with whom I have shared the same feelings. It has brought me to new places to paint.

If you could interview one artist, whom would that be?

Claude Monet! I would love to get into his head!

‘To the Water’ by Eileen Sanger

I know that you have been most generous in sharing your art with local charitable organizations. Can you explain why?

I believe that art should be shared and it makes me feel good to contribute in some way. I believe in paying forward.

If there was one word to describe yourself, what would it be?

Survivor! I have had three near death experiences and some significant love losses in my life, but I don’t believe in reliving the past. I look at every experience as a learning lesson and move on. I am an optimist!

After your husband passed away, you chose to move to Riverhead. Why did you choose the North Fork?

I found a small, historic chapel to renovate and love the peace and tranquility in my “little piece of heaven” chapel. The fact that it sits in the middle of wine country and has bucolic views offers wonderful opportunities to paint plein air.

What else are you passionate about?

My other passion is food and wine. I love cooking and coming up with creative recipes. It was my love of food that brought me to work at The Crushed Olive in Stony Brook. I would hand out my recipes, which received such good feedback that it was suggested that I write “The Infused Palate.” It is a collection of my recipes using the flavored olive oils and balsamic vinegars now selling in forty-eight olive oil stores. ‘A Summer’s Day’ by Eileen Sanger

What is the most important aspect of you that you would like people to know about you?

Wow, that’s a tough one! I guess that I am a passionate, caring and moral person. I enjoy life and always make plans so that I have something to look forward to.

What is the most important lesson you have learned in life?

My dear, deceased mother has taught me that life is 5 percent living, but your attitude and how you approach life is 95 percent. What a fabulous woman she was! I miss her every day, but she had taught me to always live in the moment.

What excites you the most about your future?

This month, I will be sixty-five and I am retired. I eventually will move to North Carolina with my new love, where I would love to start an art organization where I can teach and show my art and the art of others. I will continue to paint until I die since art soothes me and reaches my soul. It will be a part of me forever.

Hedge mazes — they’re pretty and they’re fun and one is coming to Mount Sinai’s Heritage Park this year, courtesy of the Mount Sinai Garden Club. According to member Walter Becker, the garden maze will be very unique. “To the best of my knowledge this is the only hedge maze on Long Island,” said Becker in a recent interview.

A-mazing history

There’s a long history of garden mazes going back to Europe during the Renaissance period (14th to 17th century), especially in Britain and France. Some were just designed to provide a unique walkway. Later on, it became popular to include blind alleys to confuse those wandering through the maze. Still others are destination mazes where one walks through the paths trying to find the center. Some destination mazes have small gazebo’s in the center or some other architectural feature, such as a small bridge, a water feature like a birdbath or a statuary. A bench or small table and chairs is ideal for a smaller maze.

While most mazes are round or rectangular, they can be almost any shape. Some have plants that are quite tall — tall enough that the average adult can’t see over them — while others are so small that you can easily see across them. Usually garden mazes are made from evergreens so that it can be used throughout the entire year.

Setting the plan in motion

The Mount Sinai Garden Club is planning to install a hedge maze at Heritage Park (known locally as The Wedge) as early as the end of March. “The entrance and the exit of the maze are going to be on the same side,” explained Becker, making it be easier for parents “to keep track of their children playing in it.” When installed next to the new putting green, the maze will be 48 by 36 feet and is being donated by members of the garden club.

A tremendous amount of research and planning was put into the design of the maze. The group wanted evergreen plants that could be pruned to a specific height, that would be sturdy and pest and blight resistant. For example, Becker said, “boxwoods were expensive and they were prone to a blight,” so they were ruled out. They also wanted plants that required minimum maintenance and that were not invasive.

After looking at many shrubs, they finally settled on the Hinoki cypress, Chamaecyparis obtuse, “an evergreen with soft needles, which takes drought conditions and does well in full sun.” A native of Japan, it is a slow-growing conifer that does well in acidic soil, another plus for Long Island’s growing conditions. It’s hardy in U.S.D.A. zones 4 to 8 (Long Island is zone 7) with an eventual height of nine feet high and a width of five feet. The garden club may decide to prune it back to six feet depending on usage.

What gave Becker the idea for a maze? During a recent trip to Colonial Williamsburg, he particularly enjoyed seeing children playing at the Governer’s Palace Maze. They would run in and around, entertaining themselves and even making up games. “It allows kids to have some fun,” he said.

While the garden club members are the prime movers and have donated both time and funds for the installation, many others have helped as well. Thanks are extended to the Mount Sinai Civic Association, the Heritage Trust, Town of Brookhaven Parks Department, Echo Landscape, Jake Ziskin with Blades of Glory Landscape, Schlect Nurseries, Bob Koch Tree Service and DeLea Sod Farms for all their assistance, guidance and donations.

A call for volunteers

“This is a huge undertaking,” said Becker, noting that volunteers are welcome and needed for the initial planting as well as long-term maintenance of the maze. On Sunday, March 26 (weather permitting)) the group will begin the construction of the maze by spray painting the layout on the ground. During the week of March 26, excavating and soil preparation will take place. On Saturday, April 1, 140 shrubs are scheduled to be delivered to Heritage Park. Volunteers are needed to help unload the shrubs and mulch and to help with planting. The plants are in five-gallon pots and are about three to four feet tall. In addition to adult volunteers, young people (over age 12) are welcome.

Volunteers are asked to bring their own tools and dress accordingly and are asked to register at the garden club’s website before the event. Becker also noted that although the garden club is based in Mount Sinai it is open to members of the surrounding communities as well. Once the plants are installed and mulch laid down, the maze will be closed for a short period of time to allow the plants to settle in. A formal opening will be held at a to-be-determined date.

Can you plant a garden maze in your own yard? Well, it is possible if you have enough room. Recommendations include at least a 25-foot across space, but consider a tiny maze with dwarf plants and fairy sculpture as a charming alternative.

Lipoic acid may have a significant effect on multiple chronic diseases

Lipoic acid, also known as alpha lipoic acid and thioctic acid, is a noteworthy supplement. I am not a big believer in lots of supplements for several reasons: Diet contributes thousands more nutrients that work symbiotically; in the United States, supplements are not regulated by the FDA, thus there is no official oversight; and research tends to be scant and not well-controlled.

So why would I write about lipoic acid? It is a supplement that has scientific data available from randomized controlled trials, which are the gold standard of studies. In Europe, lipoic acid is classified as a drug, unlike the United States, where it is a supplement (1).

Lipoic acid is an antioxidant, helping to prevent free radical damage to cells and tissues, but also is a chelating agent, potentially removing heavy metals from the body. Lipoic acid is involved in generating energy for cells; it is an important cofactor for the mitochondria, the cell’s powerhouse. It may also boost glutathione production, a powerful antioxidant in the liver (1). We produce small amounts of lipoic acid in our bodies naturally. Lipoic acid may be important in chronic diseases, including Alzheimer’s, multiple sclerosis and diabetic peripheral neuropathy. Let’s look at the evidence.

Diabetic peripheral neuropathy

Diabetic peripheral neuropathy, or diabetic neuropathy, involves oxidative stress and occurs in up to half the population with diabetes. One in five patients, when diagnosed, will already have peripheral neuropathy. The most common type is distal symmetric polyneuropathy — damage to nerves on both sides of the body in similar locations. It causes burning pain, numbness, weakness and pins and needles in the extremities (2).

The best studies with lipoic acid focus on peripheral neuropathy with diabetes. In a double-blinded, randomized controlled trial (SYDNEY I), results showed that the total treatment score had improved significantly more for those receiving 600 mg lipoic acid by intravenous therapy compared to the placebo group (3). Also, individual symptoms of numbness, burning pain and prickling significantly improved in the group treated with lipoic acid compared to placebo.

The study involved 120 diabetes patients with stage 2 neuropathy. Its weakness was its duration; it was a very short trial, about three weeks. The author concluded that this therapy would be a good adjunct for those suffering diabetic neuropathy.

In a follow-up to this study (SYDNEY II), the design and the results were the same (4). In other words, in a second double-blinded, placebo-controlled trial, the lipoic acid treatment group showed significantly better results than the placebo group. There were 180 patients with a similarly short duration of five weeks.

Why include this study? There were several important differences. One was that lipoic acid was given in oral supplements, rather than intravenously. Thus, this is a more practical approach. Another difference is that there were three doses tested for lipoic acid: 600, 1,200 and 1,800 mg. Interestingly, all of them had similar efficacy. However, the higher doses had more side effects of nausea, vomiting and vertigo, again without increased effectiveness. This suggests that an oral dose of 600 mg lipoic acid may help treat diabetic peripheral neuropathy.

Dementia and Alzheimer’s

In a recent randomized, placebo-controlled trial involving Alzheimer’s patients, results were significantly better for lipoic acid (600-mg oral dose) in combination with fish oil, compared to fish oil alone or to placebo (5). The amount of fish oil used was 3 grams daily containing 675 mg docosahexaenoic acid and 975 mg eicosapentaenoic acid of the triglyceride formulation.

The duration of this pilot study was 12 months with 39 patients, and the primary end point was a change in an oxidative stress biomarker, which did not show statistical significance. However, and very importantly, the secondary end point was significant: slowing the progression of cognitive and functional decline with the combination of fish oil and lipoic acid. Minimental status and instrumental activities of daily living declined less in the combination treatment group. This was encouraging, although we need larger trials.

However, another study showed 900 mg lipoic acid in combination with 800 IU daily of vitamin E (alpha tocopherol strain) and 500 mg vitamin C actually mildly reduced an oxidative stress biomarker but had a negative impact on Alzheimer’s disease by increasing cognitive decline on a minimental status exam (6). What we don’t know is whether the combination of supplements in this study produced the disappointing effects or if an individual supplement was the cause. It is unclear since the supplements were tested in combination. The study duration was 16 weeks and involved 78 moderate to severe Alzheimer’s patients.

Multiple sclerosis

In a study involving rats, giving them high doses of lipoic acid resulted in slowing of the progression of multiple sclerosis-type disease (7). The mechanism by which this may have occurred involved blocking the number of inflammatory white blood cells allowed to enter the cerebrospinal fluid in the brain and spinal cord by reducing the enzymatic activity of factors such as matrix metalloproteinases.

I know this sounds confusing, but the important point is that this may relate to a human trial with 30 patients that showed reduction in the enzyme MMP (8). Thus, it could potentially slow the progression of multiple sclerosis. This is purely connecting the dots. We need a large-scale trial that looks at clinical outcomes of progression in MS, not just enzyme levels. The oral dose used in this study was 1,200 to 2,400 mg lipoic acid per day.

Interestingly, the 1,200-mg dose used in the human trial was comparable to the high dose that showed slowed progression in the rat study (9). This only whets the appetite and suggests potential. So, we have lots of data. What do we know? In diabetic neuropathy, 600 mg oral lipoic acid may be beneficial. However, in Alzheimer’s the jury is still out, although 600 mg lipoic acid in combination with fish oil has potential to slow the cognitive decline in Alzheimer’s disease. It also may have a role in multiple sclerosis with an oral dose of 1,200 mg, though this is early data.

Always discuss the options with your physician before taking a supplement; in the wrong combinations and doses, supplements potentially may be harmful. The good news is that it has a relatively clean safety profile. If you do take lipoic acid, know that food interferes with its absorption, so it should be taken on an empty stomach (1).

Before you begin cooking the corned beef, you will need some good old-fashioned pants-slapping music. Naturally, the Irish Rovers or Clancy Brothers would be a great choice. Now, the best songs to listen to include “The Unicorn,” “The Orange and the Green,” “Goodbye Mrs. Durkin,” “Black Velvet Band,” “Donald Where’s Your Trousers,” “Bridget Flynn,” “Lilly The Pink,” and “Harrigan.”

To help celebrate Saint Patrick’s Day, here’s the scoop on corned beef.

The term corned beef has nothing to do with American corn, but rather an English term from the seventeenth century, for curing and preserving a brisket of beef in salt, which at one time was in the form of pellets (or grains of salt), called corns. Today “corning” is the term used to describe the process of curing a brisket of beef by steeping it in a pickling solution.

Corned beef, a staple of all Saint Patrick’s Day celebrations, is generally cooked by steam, although some cooks prefer to boil, bake or even microwave it (ouch, when you see the electric bill.) I have found that steaming the corned beef in a tall pot used for steaming clams minimizes shrinkage, maintains moisture and cooks in less time than other methods. Be certain the bottom of the steamer pot is filled with water, plus the pickling spices, which are often packed with the corned beef. (You can use a tablespoon of pickling spices, available in the supermarket if needed.) Do not trim off any fat pre-cooking; it adds to the moisture. Cook according to the package or your butcher’s advice. To keep the corned beef tender after cooking, let it rest for five minutes before serving. Now, remove any excess fat. To avoid stringy, cooked meat, be certain to slice against the grain.

Between the Irish music, the parade up Fifth Avenue and eating chunks of Irish soda bread, I enjoy beer on Saint Patrick’s Day. Everyone has their favorite and the most popular Irish beers are Beamish, Galway Hooker, Guinness, Harp, Murphy’s, O’Hara’s and Smithwick’s. However, my favorite is Guinness Foreign Export Stout, available only in four-packs. Guinness Stout is relatively low in carbonation and should ideally be served at 55 degrees Fahrenheit.

If you prefer wine, my suggestions for white wines are chenin blanc, gewürztraminer, pinot blanc, riesling and sylvaner. Red wines are barbera, Bardolino, Beaujolais, Chianti and pinot noir. Equally fine is rosé, white zinfandel and a blanc de noirs sparkling wine.

Corned Beef and Cabbage

Corned beef and cabbage may be the go-to dish to celebrate St. Patrick’s Day, but you certainly don’t have to be Irish to love it. In fact, I have seen people who normally wouldn’t go near a vegetable with a 10-foot pole devour cabbage on St. Patrick’s Day, and I once knew a vegetarian who confessed that she renounced her vows once a year to eat corned beef.

As with so many holiday meals, the leftovers can be great with definitely a sandwich the next day — thin slices of corned beef between slices of good rye bread slathered with mustard or an open-faced sandwich topped with Russian dressing, sauerkraut and melted Swiss cheese for a mouth-watering Reuben. Corned beef and a few boiled potatoes from the original meal can morph into corned beef hash topped with a nice runny-yolked egg or eggs Benedict on a bed of corned beef hash and capped with hollandaise sauce.

And don’t forget the Irish soda bread. Breakfast, lunch, dinner or in between, it’s that other St. Patrick’s Day traditional fare that you don’t have to be Irish to love.

YIELD: 6 to 8 servings with leftovers

INGREDIENTS:

4 to 5 pounds corned beef brisket plus accompanying spices

One medium cabbage, cut in thick wedges

6 to 8 pared or scrubbed medium potatoes

6 to 8 pared carrots

2 whole peeled onions

DIRECTIONS: Rinse corned beef under cold water. Place in a large pot and cover with cold water. Bring to a boil, then cook for two minutes. Reduce heat and remove scum from top of water. Add spices provided. Simmer 3 to 4 hours or until it is tender but can still be picked up with a fork without falling apart. Add vegetables and cook over low heat until they are tender but not soggy. Remove vegetables and set aside to keep warm. Remove meat and slice across the grain. Serve with horseradish or mustard and Irish soda bread.

YIELD: Makes 4 servings

INGREDIENTS:

2 to 3 tablespoons vegetable oil

2 to 3 cups diced cooked corned beef

2 to 3 cups diced cooked potatoes

One small onion, minced

Salt and freshly ground black pepper, to taste

DIRECTIONS: Heat oil in a medium skillet. Combine next four ingredients. Then add the mixture and spread evenly over pan. Cook over low heat without stirring until brown on the bottom. Slide or flip onto plate. Serve with eggs, pickles or salad.

Irish Soda Bread

YIELD: 6 to 8 servings

INGREDIENTS:

2½ cups flour

2 tablespoons sugar

1 teaspoon baking soda

1 teaspoon baking powder

½ teaspoon salt

3 tablespoons unsalted butter at room temperature

1/3 cup raisins or dried currants

¾ cup buttermilk

DIRECTIONS: Preheat oven to 375 F. Grease a cookie sheet. In a medium bowl, sift together the flour, sugar, baking soda, baking powder and salt. With pastry blender or two criss-crossed knives cut the butter into the dry mixture until it resembles fine crumbs or meal. Stir in raisins or currants and just enough buttermilk so that dough leaves sides of bowl. Turn dough onto lightly floured surface and knead one to two minutes or until dough is smooth. Shape into round loaf and place on cookie sheet. With a floured knife cut a half-inch deep X into top of loaf. Bake for 40 minutes or until golden brown. Serve with butter and any of the above-mentioned recipes or toast it and serve with butter or jam for breakfast.
