After placing at nationals, Port Jefferson residents Garrett Thibodeau and Sandi Woodhead earn spots on Team USA

Smith Point lifeguards are known as some of the nation’s best. The beach has not had a drowning within the protected area since the beach officially opened in 1959.

Now two of their squad have a chance to prove they are among the best in the world, competing in the International Surf Rescue Challenge in Australia. Lifeguards Sandi Woodhead and Garrett Thibodeau, both Port Jefferson residents, will be among the competitors representing Team USA at the games in September.

“It means everything,” Thibodeau said. “I’m so honored to be able to represent the United States and compete against the best competitors in the world.”

Both Woodhead and Thibodeau will compete in the beach sprint, taplin relay, rescue race and beach flags events. The pair qualified for the international contest after participating on Smith Point’s team in the 2015 Nautica/Brown and Brown USLA National Lifeguard Championships in Daytona Beach, Fla., this past weekend.

Smith Point, an eight-time national champion, finished second at the national games for small beaches. Individually, Woodhead finished second in beach flags, while Thibodeau came in fifth. Woodhead also came in first place in the landline rescue event.

She was pleased with how she finished.

“I would have liked to have done better, because I always challenge myself,” Woodhead said. “But I am happy with how I performed and I am definitely proud of how well my team did.”

Their coach and longtime teammate, Mike Barrows, said the Port Jefferson pair both performed well but he expects an even better performance from Thibodeau in the future.

“Garrett was a bit disappointed in his performance,” he said. “However, he did not rest [before] USLA nationals and trained right through it. With proper rest, I’m
assured he could have won a national beach flags title. They will both be ready and race really well in Australia.”

Making it to nationals is no easy task. Woodhead said that out of the 98 lifeguards employed at Smith Point, about two dozen are chosen for the competition. Each morning, the lifeguards must run a 5K in soft sand and perform workouts when they are off the tower.

“If you show that you are excelling in these workouts, the captains and chiefs will take notice, and bring you if they believe you will do well on a national level against thousands of other ocean lifeguards,” Woodhead said.

Thibodeau, who is in his 13th year competing, said he has noticed an increase in attention to the games. The beach flags finals occurred at 8 p.m. under floodlights before a large crowd and was streamed live online. Thibodeau said the growing interest helps to pump him up before his events.

“While I always take my events seriously, knowing that there’s going to be more people watching heightens the energy level, and I feed off of that,” he said. “Imagine playing any sport in an empty stadium compared to a packed stadium with fans cheering. The level of play is going to rise.”

Open and Youth National teams coordinator Skip Prosser said the growing attention to the sport is the result of the hard work and effort of a number of people.

“Any excitement or progression in the level of popularity of the sport is surely the work of all those who have ever been involved, specifically those individuals who have worked for many years on the promotion of the sport and continue to do so, without any official USLA title,” he said. “It is with great hope that when my appointment ends, that I can look back and say that I made a difference.”

As a result of the increased interest, Thibodeau has noticed a higher level of competition at the events. As he heads off to Australia with Team USA next month, however, he said the international games have always been a monster all their own.

“You don’t have the luxury of warming up and getting into your groove,” he said. “You’re going against the best from the very first run. You need to be on point out of the gate, or you could be out.”

He came from humble beginnings to make one of the most critical but grave decisions in United States history.

Born on May 8, 1884, to a poor Missouri farming family, Harry S. Truman’s roots were far removed from those of Franklin Delano Roosevelt. While he was a capable student, his poor eyesight prevented an appointment to the U.S. Military Academy at West Point. He never attended college, and was expected to help with the family business. But to get away from the boredom of agriculture, he enlisted in the National Guard and, though he would have been exempted from Selective Service, re-enlisted at age 33, when President Woodrow Wilson declared war in April 1917.

At once, Truman’s superiors and peers voted that he become an officer, and the future president was proud to take on the role. His soldiers saw him as an organized and bright leader who took care of his men. After training in Oklahoma, Truman and his artillery battery traveled to New York City, where the Missouri soldiers were some of the first Americans to be transported on the USS George Washington, a confiscated German passenger ship that was used to transport a portion of the 2.5 million Americans who fought on the Western Front. While in New York, Truman was not overly impressed with Manhattan and, in fact, liked Paris better when he visited that city after the World War I armistice.

Once in France, Truman learned how to fire the French 75-mm field gun, the best artillery weapon produced during the conflict. He was promoted to captain and the head of an artillery battery, and proved to be an honest man, speaking objectively to superior officers about the needs of his men. Near the front, Truman trained with Gen. John J. Pershing and led his battery in the 1918 Muesse-Argonne offensive. He was one of the 600,000 soldiers used to punch a hole into the tired lines of the German military. It is possible Truman’s guns fired some of the final shots before the Central Powers surrendered on Nov. 11, 1918.

The interwar years were spotted with success and failure for Truman. Once the war concluded, Truman desperately wanted to marry his Missouri sweetheart, Bess Wallace, and for a brief time he was a partner in a thriving clothing store with a veteran from his unit. While he had good sense, the business closed and Truman refused to file for bankruptcy protection. Some 20 years later, right before he became president, he finally paid off those debts.

President Truman was a talented piano player. According to the Harry S. Truman Library and Museum, as a child he woke up at 5 a.m. to practice for two hours, and music was one of his passions throughout his lifetime.

Truman got his political start as a county judge, with help from Kansas City Democratic political boss Thomas J. Pendergast. While he probably favored Pendergast on municipal building projects in return, he was seen as a clean politician and later won a spot in the U.S. Senate. Truman was a key advocate of Roosevelt’s New Deal as well as measures to supply American allies with military necessities early during World War II. He used a common-sense approach to leadership, stemming from his time as a farmer, a captain in the Army and a businessman, and it was an approach small-town Americans understood.

As Roosevelt ran for his fourth and final term, he picked an originally reluctant Truman as his vice president. But shortly after the victory, Roosevelt’s health declined. After four months in office, Truman was commander-in-chief. Americans, saddened over the trusted Roosevelt’s death and in the midst of war, knew little about the make-up of Truman. During World War I, he was a junior officer under future Gens. George C. Marshall, George S. Patton and Douglas R. MacArthur, but he was now their boss. And the stakes were higher — the Manhattan Project gave the U.S. the atomic bomb. Truman had a tough call to make.

It was 70 years ago this month that Truman authorized the military to drop the bombs on Hiroshima and Nagasaki. It was a strategy to end the war, save American lives and demonstrate the nation’s immense power to the Soviets. About his controversial decision, the plainspoken Truman said he could not have looked into the eyes of American mothers who lost a son in combat knowing that he could have defeated the Japanese earlier but chose not to.

The presidency was a difficult chore to handle, but Truman never wavered from his responsibilities. Though he faced criticism during the postwar recession and the earliest moments of the Cold War, he was the underdog figure with a bullish sense of honesty that helped win World War II and set a precedent for American dealings with the Soviet Union for decades to come.

‘Bronx’ 2015 by Ruben Natal-San Miguel

Born in Puerto Rico and currently residing in New York City, photographer, writer and art critic Ruben Natal-San Miguel knows what it is like to experience life in vastly different places. With photography exhibited in New York City, Los Angeles, Seattle, Chicago and Mexico City (among other national and international locations), he has a knack for capturing images that display the human spirit in unique and varied settings.

His visionary eye for capturing people and life has been brought to Long Island’s own Ripe Art Gallery in Huntington. An artist reception was held on Aug. 8. The Rights of Summer  photography exhibit, juried by himself and Sean Corcoran (curator of photography and prints for the Museum of the City of New York), showcases his original photography alongside the work of over 25 other photographers from Long Island to Japan (to Portugal, to Canada, to Missouri, to California).

“Everybody’s summer looks different depending on where and how they live,” said Cherie Via Rexer, owner of Ripe Art Gallery, who has worked with Natal-San Miguel during past exhibitions.

This statement uncovers the main controlling idea of the exhibit, that different people of different socioeconomic classes, cultures, lifestyles and locations experience and celebrate summer differently.  “We wanted to see what summer looked like for the 99 percent as well as the 1 percent,” said Via Rexer, who noted that the Ripe Art Gallery is the perfect place to showcase this theme, based on its location between New York City and the Hamptons.

The result of sorting through over 300 submissions is a final set of 57 images that each convey summer living in a diverse way and showcase “a little bit of everything,” according to Via Rexer.  The styles of the photographs range from portraits to landscapes to abstract, but they all illustrate the Rights of Summer.

A particularly striking photograph that Via Rexer believes embodies the theme of the exhibit is “Bronx,” by Natal-San Miguel, in which a man stands in front of the ocean with the iconic word visibly tattooed across his back. “It shows a beautiful beach that is surrounded by projects and all kinds of living situations,” she said.  “It shows the ocean but visibly zeroes in on a location.”

Also notable are the six established fine art photographers whose work will be on display at the exhibit: Richard Misrach, Christopher Rauschenberg (related to photographer Robert Rauschenberg), Karine Laval, Gillian Laub, Amy Arbus (related to photographer Diane Arbus) and Arlene Gottfried.   

Eleonora Ronconi captured Best in Show with “Corn Stand,” first runner up was “Girl from Palm Springs” by Dolly Faibyshev, second runner up was Robert Herman’s “Heat Wave NYC NY” and third runner up was Luis Carle’s “Abanicos.” Honorable mentions went to Lauren Welles for “Coney Island 1,” Jennifer McClure for “Untitled,” Nancy Oliveri for “Coney Island Venus” and Russ Rowland’s “Brighton Beached 3.”

All are encouraged to view the artwork on display until Sept. 5. This event is sure to excite photography and fine art enthusiasts alike and offers a great opportunity for Long Islanders to view art by both internationally recognized and local photographers.

Just about every time there’s any significant rainfall on the North Shore, our newsroom gets an advisory against swimming in our local waters — mostly embayments off the Long Island Sound.

As it issues the advisories, the Suffolk County Department of Health Services always explains that stormwater runoff increases bacteria levels in waterways, and because these little nooks and crannies of water along the North Shore do not flush out as quickly as other places, it can be unhealthy to go for a dip.

Stormwater runoff is an environmental issue we talk about a lot, but it seems we are not actually addressing the problem. There’s so much pavement in our residential and commercial developments that rainwater has nowhere to go but toward the sea, and it carries with it all the dirt, chemicals and trash it passes along the way.

The ideal solution is increasing the amount of permeable surface in our neighborhoods so the runoff goes into the ground instead, where it is naturally filtered. We can do that by taking note of the locations we see to be in the most need of improvement and calling on our elected officials to install more catch basins, which absorb and help filter the runoff.

We can also lobby for our municipalities — and even our businesses as well — to use permeable surfaces in parking lots or driveways. These absorbent pavements are not just fantasy; they exist and, though they are more expensive than asphalt, would save us a ton of money on stormwater and environmental maintenance costs in the future. And most importantly, no matter the cost, they would help protect the only home planet we have.

On a personal level, we can help our local bodies of water by planting rain gardens on our properties, as they help absorb stormwater runoff, and by refusing to use harmful chemicals to treat our lawns.

Everyone can do something to ease the burden of bacteria on our waterways. Protecting the environment is a group effort, so we all need to step up to the plate.

While surfing on Long Island is not extremely common, stand up paddleboarding is more popular than ever in the warmer months — and the good news is that you don’t need to be experienced to get started.

Long Island SUP is just one of the local companies with introductory classes featuring certified instructors, rentals, tours and even fitness classes on the paddleboard. In operation for the last 10 years, LISUP offers paddle boarding on Fire Island and in Smithtown and Patchogue.

Owner and instructor Joe Funaro was a surfer and a life guard, and also does windsurfing and kitesurfing — so getting into paddle boarding was a natural progression for him, he said.

“Surfing on Long Island is very difficult because the weather conditions have to be perfect to surf – it has to be a north wind at low tide,” said Funaro. “Stand up paddleboard surfing, because there is a paddle, enables you to surf smaller waves.”

At LISUP, first-timers typically start with the introduction to stand up paddle boarding class before coming back to rent boards and venture out on their own. In addition, like many other paddleboarding companies, LISUP also offers yoga/paddle fitness classes. More and more yogis are taking their practice to the paddleboard and the water because it creates more instability, making your core work harder.

“We call it yoga fusion because we are fusing both disciplines… so there are a lot of Pilates moves in it, there’s a lot of yoga in it, and then there’s core strength,” said Funaro.

Paddleboarding itself is not too difficult to learn – it’s harder to understand the wind direction, said Funaro. On the North Shore, for example, the wind is pushing you away from the beach toward Connecticut, while on the South Shore, the wind is pushing you in toward shore.

And while injuries are not too common, it’s important to be aware of your environment when paddleboarding and to look out for boats. If a boat creates a wake, “that wake is similar to somebody running through a stop sign; you’re not expecting that,” he said.

Plus, another way to ensure a safer paddleboarding experience is to simply go to a place like LISUP that has certified instructors and areas they already use for paddle boarding, rather than attempting to go out by yourself. “We have our locations to rent the boards because those areas we know best as far as what’s under the water,” he said.

The popularity of paddleboarding continues to grow, and there are also more long-distance races popping up, said Funaro, who has done a race around Manhattan. He has also paddled to Connecticut and Fire Island among others, and also offers paddling tours to those places as well, in addition to sunset paddling.

As we move into late summer, fishing has hit peak strides throughout the entirety of the Long Island Sound. Despite the sweltering heat that often accompanies August, the eighth month of the year contains National Smile Week, and if you play your fishing cards right you just might smile broadly while finding some of the best local fish of the year.

August brings many surprises along the North Shore of Long Island. Many anglers take time off during the often scorching days of late summer, relenting to the call of the beach and BBQs. But succumbing to the myth of the dog days is a big mistake. August brings with it numerous and exciting fishing opportunities. The cool depths of the Long Island Sound and abundant bait can keep fishing vibrant and at times hectic. This is especially true of the central regions of the Sound where, striped bass, bluefish, fluke, porgies and seas bass can be caught with a high degree of regularity.

Water quality in the Long Island Sound is at its finest along the central portions of the North Shore. The month, named in honor of Augustus Caesar, also brings with it the strong possibility of visitations by some highly anticipated pelagic species: Atlantic bonito, little tunny and Spanish mackerel. With conducive bait and water conditions, those highly coveted light tackle gamesters should show in numbers sufficient to warrant expanded time on the water. All significant recreational species are in season and several ocean-roaming species visit local waters.

Summer flounder, also called fluke, have been in abundance and will continue to be caught through to the season’s end on Sept.  21.  Although it appears at times that anglers need to weed through dozens upon dozens of undersized fluke and sea robins to be rewarded with a limit of keeper summer flounder, bigger fish are still around and patience pays dividends. August usually also witnesses some of the largest striped bass catches of the season. Nighttime moon tides and drifted eels will typically relinquish some of the finer specimens of bass. While some of the largest bass will succumb to large natural baits, casting artificial lures early and late in the day will yield bass.

All the other popular summer game fish species will also continue to remain along the North Shore: bluefish, scup and sea bass. Bluefish have been prolific, but beginning in July, larger pods of marauding “choppers” began moving inshore to feast on snappers. That predation pattern should continue through August and into the fall. This is a great time to cast large top-water plugs to snag what just might be the largest bluefish of the year. Porgy, aka scup, fishing is now as hot as the weather. There are lots of these tasty scup around, but finding the jumbo porgies will take some searching in deeper water. At this time of year, smaller scup can be found well inshore and often well within reach of shore anglers fishing around jetties, rock groins, boulders and other structures. Porgies are the most democratic fish that swim in the Sound, and they can be caught by just about anyone who fishes for them. If you’d like a little different kind of fun with porgies, try feeding them small artificial baits. Scent-infused plastic lures work wonders on porgies, as do small flies. Sea bass will also present themselves this month.  To date, there have been some impressive catches of quality sea bass, and those results should continue for the remainder of the season. Deep water structure is the key to this form of bass fishing. So get out there and have a great, safe month on the water. The fish will be waiting.

Northport Historical Society’s latest exhibit gets personal

This year marks the 150th anniversary of the end of the American Civil War, and to commemorate the sesquicentennial, the Northport Historical Society is hosting the exhibit Northport and the Civil War: A Few Good Men. Visitors to the historical society’s museum can follow the lives of 12 Northport men from when they mustered in until the war ended for them.

The historical society joins other organizations in the township of Huntington hosting Civil War events. Both historical society Director Heather Johnson and Terry Reid, consultant to the collections and member of the exhibit’s committee, said when town representatives first approached the organization about hosting an exhibit they were a bit hesitant. They admitted they weren’t confident if they could pull together a full exhibit since they weren’t aware of many Civil War artifacts in their collection. However, Reid said once the committee started culling through items, they found muster rolls with very detailed information about young men from Northport who fought in the war.

The consultant said the muster rolls not only include information about what battles the young men fought in but also if they were injured, their eye color and hair color, names of their parents and occupations. With the discovery of the muster rolls, Reid said the exhibit became a possibility as the committee began writing the stories of each man.

“I thought that here are these men we can focus on, telling their specific stories. So we did it as more of a storybook as opposed to here’s a bullet,” Reid said.

The committee, which in addition to Reid includes Candy Hamilton, Christine Doll-Wagner, Rhoda Wright and Darcy Little, then set out to find the artifacts to complement the stories. An email was sent out to members of the historical society asking if anyone owned memorabilia. Chris Cierski and Ben Meyburg, Civil War enthusiasts, stepped forward to lend some of the pieces from their collections, including a uniform Meyburg has used in reenactments.

Reid said once the society had artifacts to illustrate the men’s stories the exhibit really came together. Visitors to the museum will not only find photos and letters but also equipment the soldiers would have received such as canteens, belt buckles and guns.

Once the artifacts were in place, knowing that the men belonged to the 48th and 127th infantries, the consultant said the committee members were able to create maps for each cabinet to show the troops’ movements.

“One of our main goals in this whole exhibit was to get people to really stop and think what these men, these boys, did at their young age of 18, 19. They all enlisted and ran off to war immediately to help the cause. Unfortunately it didn’t end well for most of them,” Reid said.   

The consultant said there are arrows on the floor to help visitors view the cases in order so that they can follow each soldiers’ journey in chronological order, and at the end, find out their fate.

“It was a very bloody, awful war, and the things they went through. . . . So, my heart was just breaking when I would read what happened to each one of them. I got emotionally attached to these boys. It was heartbreaking really to imagine what they must have gone through,” Reid said.

The exhibit also touches on the contributions the survivors made to Northport after their discharges such as Alfred C. Tillotson who owned a dry goods store on Main Street in the village.

The subject of whether a soldier will return from war is one that Johnson said she believes still strongly resonates with people.

“The idea of coming home, or unfortunately not coming home, it’s been going on since war began and continues to go on, unfortunately. I think because of that though it’s a universal theme. It’s something that  we can all relate to even if you haven’t anyone really close to you or in your family who has fought in a war, you probably know someone who has or at least feel for those who are currently fighting,” Johnson said.

The director said visitors will find many interesting items on display including a metal heel plate with a shamrock cutout that Irish soldiers would use on their boots. Johnson said when she saw it she was touched by the fact that despite the horrors they faced, the soldiers still enjoyed some whimsy.

Johnson said visitors will also find letters from Francis Sammis to a friend in Northport. The solider wrote about his memories of the girls in Northport and the get-togethers the young people would have.

“He’s still a young man. He may be a soldier and he may be fighting in a horrible, horrible war, but he’s still thinking about those good times. Similar to what a young man might do today,” the director said.   

Both Johnson and Reid hope visitors will take the time out to experience each of the soldiers’ stories and that it will have the same impact on guests as it did on them. Johnson said while everyone at the historical society learned a lot, she said she noticed the biggest impact on Reid.

“Terry in particular became very connected to those soldiers. She had read enough about them and it took on a different meaning for her,” Johnson said.

Reid said she found herself feeling protective in a motherly way of the young men as the committee discovered more about each of them.

“I hope that other people will come away the same way, will have the same sort of change as well. How could you not after you see these men’s faces,” she said.

Thousands of years ago, mankind crawled out of its primordial origins, stood upright and decided to quit choking down chunks of raw flesh. These prehistoric freethinkers put meat to heat, creating a ritual that continues to compel the carnivore spirit in an endless quest for the slow-smoked supernatural.

The ritual is barbecue and it goes well beyond hot dogs and hamburgers hastily seared on a dirty backyard grill. It is a culinary style reserved for the meticulously obsessive chef, as cooking times can range from several hours to more than half a day and doneness is measured in burnt ends and smoke rings.

Meat, time, heat and smoke; there are no secrets in barbecue, just obsession.

And the obsession is heating up on Long Island. A decade or so in the past, the number of barbecue joints on the Island could be counted on one sauce-stained hand. Now, slabs of brisket, piles of pork, racks of ribs and links of sausage are readily available in napkin-destroying glory in a growing number of eateries.

To travel the Island seeking out these restaurants is to explore the diverse nature of barbecue itself.

Barbecue is a fundamental element in America’s cooking culture; it is the only truly American cuisine, and like everything else purely American, its form is contingent on its regional influences.

There’s Memphis-style pit barbecue, which is high on the hog in rib and pulled form, served in a tangy, thin tomato-based sauce. The Carolinas offer two distinct forms of ‘cue, with North giving us spice and vinegar basted pork and the South opting a sauce that is more mustard based. Kansas City style cooks its meats super slow and super low over hickory wood, served with a thick and sweet molasses sauce. In Texas, meat is king, as dinosaur-sized beef ribs are served alongside a heaping portion of brisket and sauce is usually an afterthought.

St. Louis Spare Ribs
Ingredients: 4-5 pounds pork back “spare” ribs; Your favorite dry rub; Mustard; Your favorite barbecue sauce; Wood chunks or chips for added smoke (optional)
Directions: To start, choose some fresh pork spare ribs. Preheat your grill to 225-250 F. Wash and dry ribs, then trim and remove the membrane. Now rub in mustard on all sides. Lightly apply dry rub seasoning to both sides of the slab. Let stand for 15-30 minutes. Allow ribs to come to room temperature just before placing on the grill. Place a water or basting pan on the grill or within the coals for added moisture (optional). Barbecue at 225-250 F opposite coals with closed grill lid for 3-4 hours. Mop the ribs several times. To keep from overcooking, remove the racks when they pull apart easily, with meat still attached to the bone. Serve with your favorite barbecue sauce.

Barbecue on Long Island is trending toward an amalgamation of styles, with professionally trained chefs taming fire to give the public what it wants.

Bobbique in Patchogue (70 W. Main St.) specializes in Memphis-style pit barbecue. For chef Eric Rifkin, it all started with an inspirational trip to Memphis, Tennessee. With a menu that includes such staples as St. Louis-style ribs, brisket and pulled pork, as well as barbecued salmon and shrimp, Rifkin’s slow-cooking technique utilizes an authentic, soulful southern charm that acts as a great equalizer at mealtime.

“Barbecue is a communal experience,” says Rifkin. “People come together, roll up their sleeves, feel, touch the meat. It’s become a comfort thing. It’s a ‘talk to the table next to you’ kind of meal.”

Rifkin is a classically trained chef with an impressive resume. In transferring his refined talents to the decidedly less polished cooking style of the pit, Rifkin developed his own art of smoke, one of barbecue’s essential elements.

“Smoking is such an important cooking technique. In barbecue, it might be the most important,” he says. “The smoke imparts flavor into cuts of meat that were at one time less desirable. The right kind of smoke used the correct way changes everything.”

Another chef blurring the lines between barbecue boundaries is Jonathan Levine, whose restaurant Smoke Shack Blues opens in Port Jefferson this September. A chef with an origin story that includes fancy cuisine of the French-Italian lineage, Levine’s career trajectory was altered by traveling through the Carolinas and Texas during a family vacation.

It was during that trip he experienced the powerful effects of low-temp cooking combined with smoke. The science of low and slow with smoke melts the fat within, and that translucent succulence bastes the meat from the inside while the outer bark encases the juices until it’s ready for the cutting board.

“Everything is kept inside the meat,” says Levine. “The same cut of meat that is unremarkable cooked one way is made incredible when cooked in true barbecue style. All of those juices rendering inside for 14 hours or so makes for a completely different eating experience.”

Levine recently gave locals a taste of what to expect from his forthcoming restaurant at multiple events at Benner’s Farm in East Setauket. He offered pork shoulder for Western Carolina style pulled pork, smoked barbecue chicken, pork ribs and even tins of his own barbecue dry rub.

“It’s so easy for a chef to toss his meat in a sauce,” he says. “But with a dry rub, there is really nowhere to hide. It is all about the meat.”

Molasses BBQ Chicken
Ingredients for glaze: Cider vinegar — 1⁄4 cup (4 tablespoons); Brown mustard — 1⁄2 cup (8 tablespoons); Molasses — 1 cup (16 tablespoons); Salt — 4 teaspoons; Fresh black pepper — 2 teaspoons
Other Ingredients: Chicken — 6 pounds; Salt — to taste; Pepper — to taste
Directions: Preheat grill. In a pan pour in cider vinegar, add mustard and mix. Add in the molasses, mix well, season with salt and pepper. Place the pan on hot coals and allow to simmer. Place the chicken pieces over indirect heat on grill and season with salt and pepper. Cover and grill at 350 F and cook for about 1 hour. After 20 minutes of cooking, brush the chicken with the glaze after every 15 minutes. When about to be done, sear over direct heat for few minutes.

The nature of Long Island’s cross-cultural barbecue style has even influenced a man who didn’t require an illuminating trip to America’s smoked-meat meccas. Lloyd Adams is a Texan through and through. A marriage brought him to Long Island in 1995 and by 2003 he started Laura’s BBQ Shack, a traveling Texas-style barbecue smoker that rolls into events like a traveling carnival of meat.

After a few years of struggling to find a foothold in the Island’s barbecue scene, Adams’ big break came at an event hosted by the Holbrook Chamber of Commerce. Long before many of the Island’s barbecue restaurants were even a gleam in a chef’s eye, Adams was schooling locals on true barbecue.

“I spent a lot of time explaining it as a cooking method,” says Adams. “I had to explain that the meat might be pink, but it is not raw. That pink you see is from the authentic smoke and the low-temperature cooking.”

But as barbecue continues to marinate and mature on the Island, people are becoming savvier; they are learning to embrace those pink smoke rings and burnt ends, according to Adams.

“People are much more educated about barbecue these days,” he says. “People aren’t going for it multiple times a week like they might Chinese or Italian, but it is growing.”

The ever-evolving Long Island barbecue scene will likely continue to expand to new flavor territories as each new generation cuts through the smoke and slides up to flames. Even in Adams’ own enterprise, the Texas-strong style has morphed to include much more pork than is usually found on slabs in the Lone Star state.

That’s merely one example of the ever-changing story of barbecue culture. And on Long Island, this quintessentially American style of making meat better will continue to raise its flavor profile.

“Whether you are cooking beef or pork or using one style or another, it is important to take pride in your barbecue and always be your own worst critic,” says Adams. “People here are willing to listen and to learn and I suppose that’s a good sign.”

Town officials recently toured the newly reconstructed boardwalk at the Marine Environmental Stewardship Center at Cedar Beach.

The 500-foot-long loop begins and ends at the center, which is located off of the nature trail at the beach, and offers visitors two resting off shoots with benches. Visitors can stroll along the walkway to see a variety of wildlife and watch the sunset.

The boardwalk isn’t the only thing residents can see at the center. The center is open until Labor Day, Sept. 7, Thursday through Sunday from 10 a.m. until 4 p.m.  In addition, the center is hosting a variety of summer programs open to people of all ages throughout the month of August:

When photographer Holly Gordon was asked to describe her relationship with painter Ward Hooper, she relayed a Hopi Native American tale about a paralyzed clown and a blind mudhead who are only able to flee their village when disaster strikes by individually compensating for what the other lacks: the mudhead provides mobility by carrying the clown on his back and the clown provides direction by acting as a set of eyes for the mudhead. “[Ward] was opening up my eyes, and I was using my camera to bring him the visions,” said Gordon. “There’s really such a synergy between us.”

For Hooper and Gordon, who met on Facebook through a mutual friend and typically get together once a week, the term “synergy” applies to both life and art, realms which, according to Gordon, are often indistinguishable from one another. Hooper plays the role of navigator for Gordon, who drives them both to diverse locations along the north shore of Long Island, including Huntington, Northport, Centerport, Kings Park and Cold Spring Harbor, some of which Hooper “hasn’t been to in 20 years.” The result is individual reinterpretations of the same settings made more complete by access to each others pre-existing work.

Sometimes Hooper’s paintings provide the initial inspiration, and other times Gordon’s photographs play this role. “That’s the beauty of our collaboration,” said Hooper. “Holly would show me something and challenge me to create something compatible with what she selected.”

“[When using Ward’s painting as the initial artistic reference] I knew that I was going to have to stretch my vision and stretch my technical skills to make my work even more fluid than it was previously,” said Gordon. “Art is usually a solitary thing, and among some artists you find a certain competition, but Ward and I have just been so supportive in sharing and helping each other grow and evolve and develop and create. It’s been an absolutely magical experience.”

52 of the artistic results of this experience — pairing the new photographic art of Gordon with the watercolor paintings of Hooper — will be on display at the Art League of Long Island’s Jeanie Tengelsen Gallery, from Aug. 8 to 23, in an exhibit appropriately titled The Brush/Lens Project.

“We’re hoping that viewers will be inspired,” said Gordon, “that they will come to see and appreciate the beauty that is right here on Long Island [by viewing art that was largely created in and inspired by Long Island].”

The exhibit will highlight versatile pieces of art, arranged in 26 sets, which encompass all four seasons and a variety of subjects. “We overestimated the number of pieces [that we would be able to include in the exhibit],” said Hooper. “Between the two of us, we have nearly 100 years of art,” continued Gordon, “there’s a book here.”

Both Hooper and Gordon are grateful that they have been afforded the opportunity to work with one another and plan to continue to do so in the future: “When you put yourself out there and you’re not afraid to share and interact, there’s so much beneath the surface to discover,” said Gordon, on her rewarding decision to reach out to Hooper. “Art brought [Holly and me] together,” Hooper emphasized. “We think, on many levels, the same way.”

With Gordon in the driver’s seat and Hooper as navigator, there’s no telling where their artistic visions will lead them next. “There’s no end to this journey. There’s no road map,” said Hooper. “We’ll just see where it takes us.”
