Vegetarian stuffed peppers

These weeknight-friendly vegetarian stuffed peppers are packed with protein in the form of black beans and brown rice and loaded with sautéed onions, corn, and tomatoes. Loved by meat-eaters and vegetarians alike, this easy, healthy dinner is sure to spice up your week. Serve with garlic bread and an arugula salad.

Vegetarian stuffed peppers

YIELD: Makes 6 servings

INGREDIENTS: 

6 large sweet bell peppers

1 tablespoon butter

1/2 cup diced sweet onion

1 cup cherry tomatoes, sliced in half

1 cup frozen corn, thawed

1 1/2 cups canned black beans, drained   and rinsed

2 cups cooked brown rice

1 large egg

1/2 teaspoon chipotle chili powder

1/2 teaspoon dried oregano

1/2 teaspoon ground cumin

1/2 teaspoon kosher salt

1/2 teaspoon black pepper

1 1/2 + 1/2 cups shredded sharp cheddar cheese, divided

DIRECTIONS:

Preheat the oven to 350º F. Line a rimmed half sheet pan with non-stick aluminum foil.

Slice the tops off of the sweet bell peppers. Use a spoon to scoop the seeds and white membranes from the insides of the peppers. Discard the pepper tops and seeds. Place the peppers onto the prepared half sheet pan; briefly set aside. In a large skillet, melt the butter over medium heat. Add onions and cook until translucent (about 5 minutes). Stir in tomatoes, corn, black beans and brown rice until combined. Remove from heat and set aside.

In a large bowl, beat the egg, then add in chili powder, oregano, salt, and pepper. Add veggie mixture to bowl and mix well. Add 1 1/2 cups of the cheddar cheese into the filling bowl and mix until well combined. Stuff the open cavities of the sweet bell peppers tightly with filling, mounding a bit of the filling over the top edge of the peppers. Sprinkle the remaining cheddar cheese over top of the filling.

Bake the stuffed peppers for 30 to 35 minutes or until filling is heated through, the peppers soften, and the exteriors begin to wrinkle. Serve immediately.

Simple Arugula Salad

YIELD: Makes 6 servings

INGREDIENTS: 

¾ cup Parmesan cheese shavings (about 1.5 ounces)*

1 small shallot

8 cups (5 ounces) baby arugula (do not use standard arugula, usually sold in bunches)

2 tablespoons extra virgin olive oil

¼ teaspoon kosher salt, plus more to taste

1 ½ tablespoons lemon juice + zest of ½ lemon

DIRECTIONS:

If necessary, shave the Parmesan cheese with a vegetable peeler. Thinly slice shallot. In large bowl, place the baby arugula, olive oil, lemon zest (optional), lemon juice, and kosher salt. Use your hands to toss everything so it’s evenly coated. Add the Parmesan shavings and shallot and toss for a few seconds until combined. Taste and add additional salt if desired.

INGREDIENTS:

Stuffed Peppers

6  bell peppers, halved lengthwise and deseeded

1  tablespoon avocado oil

1  teaspoon sea salt

16 ounces Fresh Cravings Chunky Style Salsa

2  cups riced cauliflower (fresh or frozen)

2  cups shredded cheddar cheese, divided

2  pounds 80% lean ground beef, cooked, lightly seasoned and drained

1  bunch cilantro, chopped

DIRECTIONS:

Heat grill to medium-high heat. Brush both sides of bell peppers with avocado oil and season with salt. Grill peppers on each side 2-3 minutes, or until grill marks appear. Remove from heat and allow to cool slightly.

Add salsa, riced cauliflower and 1 cup cheddar cheese to cooked ground beef. Stir and return to heat until cheese begins to melt.

Place bell peppers on sheet pan or casserole dish. Use large spoon to fill peppers with ground beef mixture. Top stuffed peppers with remaining cheese.

Return to grill and grill approximately 15-20 minutes, or until cheese begins to caramelize.

Remove from heat and let cool slightly. Garnish with cilantro.

 

Bran Muffins

Sometimes when I really want to know how to cook something, I go to the store-bought container the main ingredient comes in. I figure the producer isn’t going to steer me wrong and give me a recipe that doesn’t work or isn’t any good because then their product will look bad. 

That being said, I usually can’t help fiddling around a little bit with the recipe and seeing if I can give another dimension or slightly different taste. It might just be the addition of nuts to a muffin recipe or garlic or onion to a stew recipe or maybe even just a pinch of an additional spice or herb, and because it’s never anything radical, so far this habit hasn’t caused disaster. 

So here are a couple of recipes I’ve tweaked successfully. The featured product or ingredient bears an asterisk. My addition or substitution bears a double asterisk.

Bran Muffins

Bran Muffins

YIELD: Makes 12 muffins

INGREDIENTS: 

12 paper baking cups or cooking spray 

*1 1/2 cups Original Fiber One cereal

1 1/2 cups milk

1/2 cup raisins, if desired

**1 teaspoon vanilla (instead of 1/2 teaspoon)

1/4 cup vegetable oil

1 large egg

1 1/2 cups all-purpose flour

1/2 cup packed brown sugar

3 teaspoons baking powder

1/4 teaspoon salt

1/2 teaspoon ground cinnamon, if desired

**1/2 teaspoon ground nutmeg

**1/2 cup chopped walnuts

DIRECTIONS: 

Heat oven to 400 F. Place a paper baking cup in each of 12 regular-size muffin cups or spray just the bottoms of the cups with cooking spray. Place the bran is a resealable food storage plastic bag; seal the bag, and roll over it with a rolling pin or bottle, or press with bottom of small saucepan to crush cereal into fine crumbs. 

In a medium bowl, stir the crushed cereal, milk, raisins and vanilla until well mixed.  Let stand about 5 minutes or until cereal has softened. Beat in the oil and egg with a fork.  In another bowl, stir the flour, brown sugar, baking powder, salt, cinnamon, nutmeg and walnuts until well mixed. Stir flour mixture into cereal mixture just until flour is moistened (batter will be lumpy). Spoon the batter into the cups, dividing batter evenly.  

Bake 20 to 25 minutes or until a toothpick inserted in the center comes out clean. If muffins were baked in paper baking cups, immediately remove from pan to a cooling rack. If muffins were baked in a sprayed pan, leave in pan 5 minutes, then remove from pan to cooling rack. Serve warm.

INGREDIENTS: 

3 large bell peppers, cut in half lengthwise and seeds removed

2 tablespoons unsalted butter

1 cup chopped onion

1 cup chopped celery

1/2 cup sliced scallion

1 garlic clove

**1 cup frozen peas, thawed (instead of corn)

One 14-ounce can chopped tomatoes, drained

1/4 cup chopped parsley

**1 tablespoon fresh thyme leaves (instead of dried rosemary)

*1 cup Ben’s Original Long Grain White Rice, cooked

1 teaspoon salt

**Freshly ground pepper to taste

**1/4 cup unflavored breadcrumbs (instead of cornflake crumbs)

**1 tablespoon olive oil

DIRECTIONS: 

Preheat oven to 350 F. Grease a 9″ x 13″ x 5″ rectangular baking dish and place pepper, cut side down, in the oven while it preheats. Meanwhile, in a large skillet over medium heat, melt butter; add onion, celery, scallion and garlic and sauté until tender, about 5 minutes; remove and discard garlic. Add peas, tomatoes, parsley, thyme, rice, salt and pepper and stir frequently until heated through, about two minutes. Remove dish with peppers from oven, turn peppers over so cut side is up and fill each one with rice mixture. Sprinkle breadcrumbs on top and drizzle 1/2 teaspoon olive oil over crumbs. Bake uncovered 12 to 15 minutes until heated through. **Serve with a bean salad.
