Panera Bread, makers of bread items, soups, salads, sandwiches and more, celebrated the grand opening of its new café at Stony Brook University Hospital, 101 Nicolls Road, Stony Brook on March 11. Owned and operated by franchisee Doherty Enterprises, the restaurant will employ about 60 people, according to a company statement.

Prior to its opening, the café and hospital personnel hosted a fundraiser for the Stony Brook University Cancer Center where employees donated directly to the Cancer Center, raising a total of $1,500.

The café is open daily from 6 a.m. to 10 p.m. and is located on the fifth floor of the hospital in a newly constructed wing named The Brook.

Priscilla Antunez is a scientist with some unusual expertise. No, she doesn’t run experiments using a rare or expensive piece of equipment; and no, she hasn’t developed a way to understand the properties of unimaginably small particles that assemble themselves and may one day help run future technology.

What Antunez brings to the Center for Functional Nanomaterials, or CFN, at Brookhaven National Laboratory is a background in business. That puts her in a position to help the scientists who run experiments at the CFN or the researchers at BNL, or elsewhere, who study the properties of catalysts or self-assembling small materials.

“This opportunity for me is a maximization of my impact on science,” said Antunez, who joined BNL from Illinois’ Argonne National Laboratory in December. If she were to run her own lab, she would be involved in a project or a handful of projects. “[At BNL] I have the opportunity to help many scientists with their work,” she said.

Her assistance will take numerous forms, from acknowledging and celebrating the science the 30 researchers at the CFN and the 600 scientists from around the world who visit the center perform, to developing broader and deeper partnerships with industry.

Her long-term goal is to build a strategy around specific projects and establish partnerships to advance the science and technology, which might include industry.

“We are trying to make [the information] widely available to everyone,” Antunez said. “We are proud of what they’re doing and proud of how we’re helping them accomplish their goals. We’re ultimately getting their science out there, helping them with viewership and readership.”

She is already writing the highlights of scientific papers, which she hopes to share widely.

In addition to sending research updates to the Department of Energy, which sponsors the BNL facility, Antunez will also try to broaden the audience for the research by sharing it on LinkedIn, posting it on the website, and, in some cases, sending out email updates. Antunez takes over for James Dickerson, who has become the first chief scientific officer at Consumer Reports, where he leads the technical and scientific aspects of all activities related to CR’s testing and research, including food and product safety programs. Antunez and Charles Black, the director of the CFN, decided to expand Antunez’s role as assistant director.

Her job is “to help the CFN develop its overall strategy for making partnerships and nurturing them to be successful and have impact,” Black explained in an email.

“For the CFN to thrive in its second 10 years of operations will require us to form deeper relationships with scientific partners, including CFN users, research groups around the world, industries and other national labs,” he said.

Indeed, Black, Oleg Gang, who is the group leader for Soft and Bio Nanomaterials, Dario Stacchiola, the group leader for the Interface Science and Catalysis team, and Antunez recently met with Norbert and Patrick Huber, from Hamburg’s Centre for Advanced Materials.

“We had group and individual discussions to explore complementary areas of research,” said Antunez.

After scientists from the centers meet again to develop research plans, she can “help as much and as early as the CFN scientists need.” She can also coordinate between the CFN and the Contracts Office if the center needs a Cooperative Research and Development Agreement.

The scientist encourages CFN scientists to visit whenever they believe they have an idea that might have an application. She’s had meetings with the Tech Transfer Office and CFN groups and is hoping to put more such gatherings on the calendar.

The CFN is continuing to grow and will be adding five or six new scientific staff positions, Black said. Antunez will “oversee a strategy that helps all CFN staff form deep, productive partnerships that produce new nanoscience breakthroughs.

Black explained that it was an “exciting, challenging, important job and we’re thrilled to have someone as talented and energetic as [Antunez] to take it on.”

Indeed, Antunez was such an effective researcher prior to venturing into the business world that the CFN had tried to hire her once before, to be a postdoctoral researcher in the area of self-assembly. At that time, Antunez had decided to move toward business and took a job at Argonne National Laboratory. “In the end it has worked out well for CFN, because [Antunez] gained valuable experience at Argonne that she has brought to BNL and is using every day,” said Black.

The CFN has divided the work into five groups, each of which has a team leader. Antunez is working on their current partnerships and recruiting needs. She meets with the group leaders during regular management meetings to discuss overall plans, work and safety and the required reports to the DOE.

Antunez lives in Mineola with her husband, Jordan S. Birnbaum, who is the chief behavioral economist at ADP. When she was in college at Universidad de Sonora, Antunez wanted to double major in science and contemporary dance. At the public university in Mexico at the time, she had to choose one or the other, despite an invitation from one of the founding professors of the school of dance to major in dance.

Nowadays, Antunez, who earned her doctorate in chemistry from the University of Southern California, goes to the gym and takes yoga and dance classes, but doesn’t study the art form anymore.

With her science background, Antunez anticipated becoming a teacher. Her current work allows her to share her expertise with scientists. She has also been able to work with some postdoctoral researchers at BNL.

As for her work, Antunez appreciates the opportunity to build connections between scientists and industry. “Most of our technologies are on the basic research side and so the partnerships are much more fluid, which gives us a lot more flexibility in terms of our strategic partners,” she said.

THE FACTS: My father purchased long-term care (LTC) insurance decades ago. Since he had been widowed at a relatively early age, he felt it was important that he have coverage in the event he ever needed skilled nursing care or in-home care.

Recently it has become obvious that my father’s ability to handle his affairs is somewhat impaired. In addition, his health is failing and I believe he needs help with activities of daily living.

Since I am not in a position to assist my father on a daily basis, I decided that the time had come to file a claim for benefits under my father’s LTC policy to cover the cost of his care. When I filed a claim, I was shocked to learn that my father’s policy had lapsed two years ago based upon failure to pay the premium.

THE QUESTION: What are our options with respect to coverage for my father’s LTC insurance?

THE ANSWER: Unfortunately you don’t have any options when it comes to your father’s LTC insurance. When a payment is missed on such policies, companies sometimes give the insured a grace period during which the policy can be reinstated if payment is received. However, if your father failed to pay premiums for two years, I seriously doubt that reinstatement is an option.

Although it is too late to address the non-payment of the LTC insurance premium, you and your father should go through all of the paperwork relating to other insurance he may have, as well as accounts, contracts and recurring obligations, to be sure he has not missed any payments or failed to take whatever action may be needed to avoid penalties.

Most insurance companies allow customers to name a third party who will automatically receive notification if a premium is not paid. If your father had designated you as the person to receive notification of any nonpayment, you could have taken the necessary steps to pay the premium in a timely manner and his LTC policy would not have lapsed. Like insurance carriers, utility companies generally offer customers the option to name a third party to receive important notices regarding nonpayment. Your father should take advantage of these arrangements.

If he has recurring bills that need to be paid and is not able to designate a third party to receive late notices, he may want to consider arranging with his bank to automatically make those payments directly from his checking account. If automatic payments are set up, he will not have to worry about missing a payment because he misplaces the bill, is away when the payment is supposed to be made or simply forgets to send the check.

In addition to working out a system to ensure that your father’s bills are timely paid, you may want to talk to him about an arrangement to ensure that he takes the necessary steps each year to receive his minimum required distributions from any qualified retirement accounts he may have. If your father is unsure of whether he has accounts that require minimum distributions, you may want to ask him if you can speak with his financial adviser and/or accountant. These individuals should be able to assist you.

Assuming such accounts exist, you can ensure that the necessary steps are taken each year by simply making a notation on your own calendar of your father’s obligation to notify his plan administrator. Even if your father does not need the money, it is important that he take the minimum distribution every year since failing to do so can result in significant penalties.

When discussing with your father the lapse of his LTC insurance and suggestions for avoiding similar problems in the future, you may want to suggest to him that he retain an attorney with experience in estate planning to prepare for him a comprehensive power of attorney. The agent named in such a power of attorney will have the authority to handle your father’s affairs and will be in a position to ensure that he does not experience the types of problems discussed above.

In her sophomore outing of the Lickety Splits Ice Cream Shoppe mysteries, author Cynthia Baxter once again returns to the fictional Wolfert’s Roost, a small town nestled in the Hudson Valley where Kate McKay has opened up an artisan ice cream parlor. A former public relations director and transplanted New Yorker, she has returned to her hometown to help care for her feisty grandmother, the woman who raised her.

Picking up immediately after the end of the delightful “Murder With a Cherry on Top,” Kate becomes embroiled in the murder of a beloved fashion designer, Omar DeVane. The page-turner focuses on a quartet of suspects that orbit Omar’s world. Secrets and deception intersect with the world of high fashion. Kay, along with her “Three Musketeers”— childhood friend, Willow; niece Emma; and Emma’s boyfriend, Ethan — embark on an inquiry.

What is unique is Kay’s motivation? She’s not just another amateur sleuth involved where she shouldn’t be; instead, her concern is that the murder has made the area notorious and has negatively affected the town’s businesses. Her drive is to solve the crime to put Wolfert Roost back on track.

There’s also a nice romantic triangle that plays out in the background, creating additional conflict for Kay, but never interfering with the rapid progress of the mystery. In addition, Baxter shows her literary skill in a portrait of Omar’s brother, Arthur. Touching and dimensional, it provides a whole different shade in the fast-paced narrative. It is a sympathetic and unusual portrait of a man who has found satisfaction in the simplicity of his life.

With appropriate tension and intrigue, the story builds to a satisfying resolution. And, of course, like in the premiere outing, the entire tale is told against the world of the ice cream parlor, complete with the traditional flavors (Classic Tahitian Vanilla) as well as a host of unusual confections Kay dreams up (Honey Lavender, the sorbet Peach Basil Bliss!). 

“Hot Fudge Murder” is a great second helping of cozy mystery. Looking forward to a third.

It’s back! The Town of Brookhaven will present its annual Home & Garden Show at the Holtsville Ecology Site, 249 Buckley Road, Holtsville on March 23 and 24 and March 30 and 31 from 11 a.m. to 5 p.m..

The indoor event will feature dozens of vendor exhibits including landscaping, garden centers, stonework, garden structures, siding and windows, interior décor, gutters and more.

In addition, with paid admission, visitors can participate in free educational workshops and hands-on classes for children, as well as photos with the Easter Bunny. Classes and workshops are subject to change; a comprehensive schedule of seminars is available at www.brookhavenny.gov.

“The Home and Garden Show is an excellent opportunity for residents to support local businesses and reinvest in our local economy, while getting some unique ideas from our vendors’ displays,” said Brookhaven Highway Superintendent Daniel P. Losquadro.

From “The Snow Queen” to “The Princess and the Pea,” Hans Christian Andersen’s fairy tales have touched the hearts of millions. A bronze statue in Copenhagen, Denmark, pays homage to his most popular story, “The Little Mermaid.” A major tourist attraction since its unveiling in 1913, it depicts a mermaid sitting on a rock looking longingly toward land.

Now Andersen’s beloved tale, or should I say tail, heads to the Smithtown Center for the Performing Arts in the form of Disney’s “The Little Mermaid Jr.,” a colorful musical production based on the animated film.

The timing is perfect. Along with running during spring break, the Disney film is celebrating its 30th anniversary this year and a live-action remake is currently in development.

In a magical underwater kingdom, the beautiful young mermaid princess, Ariel, longs to leave her ocean home — and her fins — behind and live in the world above, much to her father King Triton’s dismay.

In exchange for her voice, Ariel bargains with the sea witch, Ursula, to become human and have the chance to win the love of Prince Eric, who she recently saved from a terrible storm. With her friends, Scuttle, Sebastien and Flounder, Ariel must fulfill her bargain with Ursula, but things do not always go as planned.

With music by Alan Menken, book by Doug Wright and lyrics by Howard Ashman and Glenn Slater, the musical is an enchanting look at the sacrifices we all make for love and acceptance.

Christine Boehm directs a cast of young actors ages 11 to 18 through an absolutely divine production. From the shimmering costumes to the seaworthy set accented with huge pieces of coral, to the fantastic lighting and special effects, every scene is perfectly executed.

The big ensemble numbers, “Under the Sea” and “Kiss the Girl,” showcase the incredible choreography by Courtney Braun.

Courtney Sullivan is lovely in the title role, effectively portraying a girl who is torn between obeying her father and following her dreams. And just wait until you hear her sing! Sullivan’s rendition of “Part of Your World” during last Saturday’s performance was mesmerizing.

Speaking of singing, the very handsome Hunter Pszybylski brings a whole new dimension to Prince Eric with his amazing solos, “Her Voice” and “One Step Closer,” and captures the hearts of the audience from the get go.

Supporting characters are also given the opportunity to shine. Raquel Sciacca is just adorable as Flounder, a role she shares with Gabby Blum, and Ari Spiegel is terrific as the crabby crustacean Sebastian who is tasked with keeping an eye on Ariel. Hailey Elberg as Scuttle the Seagull also deserves accolades for her number “Human Stuff” — squawk!

However, it is Erika Hinson as the meanie Ursula who steals the show. Her rendition of “Poor Unfortunate Souls” during last Saturday’s show brought the house down.

Take it from someone who has reviewed a lot of plays — make SPAC’s “The Little Mermaid Jr.” a part of your world. Running time is 90 minutes with one 15-minute intermission. Booster seats are available. Stay after to meet Princess Ariel and Prince Eric in the lobby for photographs.

‘Fall Day at Stony Brook Harbor’

Susan Trawick of Setauket devoted more than 20 years to helping Sachem East High School students develop their art skills. All the while, she continued to create her own artwork, primarily in watercolors and oil.

Following her retirement from teaching in 2008, Trawick sought to keep her art skills sharp and maybe even make some new friends. She joined several local art classes, including one taught by her neighbor Mary Jane van Zeijts, owner of Studio 268 on Main Street in Setauket.

‘West Meadow Gates’

Van Zeijts taught Trawick how to use a set of pastels she received from friends as a gift, and she immediately fell in love. “Pastels are definitely my new favorite medium to work with,” Trawick said in a recent interview. “The colors are so vibrant and intense.”

Van Zeijts was so impressed with Trawick’s skills that she invited her to create an art exhibit for the studio. That show, aptly titled Land and Sea Pastel Images, will open on March 24.

Trawick’s passion for art is hereditary, she said — her father loved to draw, and she picked up the hobby in early childhood. She married young and was a stay-at-home mother before attending Dowling College for a bachelor’s degree in fine art and Stony Brook University for a master’s in education. Without hesitation, she cites impressionists as her favorite artists, including Vincent van Gogh, Andrew Wyeth and Joseph Reboli.

While Trawick’s work has appeared throughout the area in various exhibits, this show is the first she’s done solo. It will be almost entirely comprised of pastel art, with one watercolor and one oil painting to give a taste of her other skills.

“Setauket is the best place for an artist to live — the landscapes are so beautiful,” Trawick said. “I love the water, the wetlands, the trees, even the little hills here on the North Shore that the South Shore doesn’t have.”

‘Hidden Stream’

Trawick explained that inspiration for a new piece will strike as she’s out driving or enjoying time outside, especially in the light of early morning or at sunset. When she sees something she wants to paint, she’ll take photos to preserve the memory for later. She also enjoys occasional plein air painting. 

Trawick will display more than 30 pieces of varied sizes at the show. Most pieces feature recognizable Long Island scenes, while others show off the beauty of Central Park, Yellowstone National Park and Higgins Beach in Maine, all with brilliant color.

“Susan is an incredibly strong, skilled and prolific artist,” van Zeijts said. “She has used and taught other mediums, but she is so expressive with pastels. It speaks of who she is. We can all relate to her work because a lot of it is local. You can see a picture of Maine and acknowledge it as beautiful, but her Long Island work will be recognizable and enjoyable for people from this area.”

Every piece at Trawick’s show is for sale, with paintings ranging from $50 to $850 and prints for less than $10. Twenty percent of the proceeds from the show will benefit Kent Animal Shelter, a no-kill nonprofit haven for dogs and cats in Calverton, where Trawick has served as a board member for 32 years. Her two dogs and “too many” cats at home are all rescues.

The shelter also offers low-cost and sometimes free spay/neuter services for more than 3,500 animals each year. This critical work helps address excessive breeding, overpopulation and animals left homeless.

“I’ve seen so much suffering of animals in my time doing work with the shelter, so I want to do anything I can to alleviate that suffering,” said Trawick.

Reached by phone, Pam Green, executive director of the shelter, said that Trawick is the quintessential animal lover. “Susan is so devoted and has done a lot of work with helping support our spay/neuter efforts in the area. She also provides a lot of advice for people that come across homeless or sick animals,” Green said.

Studio 268, located at 268 Main St., Setauket will present Land and Sea Pastel Images from March 24 to April 14. The studio is open on Saturdays and Sundays from 1 to 4 p.m.

Roasted Lemon Chicken

There’s been a new development in our kitchen. It used to be that I did the dishes and cleaned up the kitchen and my husband did the pots and pans. But lately I find myself doing the pots, or most of them, too. I think it’s because we recently got new cookware and, the control freak that I am, I want to keep them looking new and shiny, so I do them myself. That has led to another interesting development, though. In the interest of self-preservation, I’ve started to lean toward one-pot recipes, and of course I’ve gravitated toward the most obvious ones … those with chicken. Here are two I’ve tried that I think you’ll like too. They both go nicely with a tossed salad, but then, of course, there’s that bowl to wash.

Chicken with Black Beans and Corn

Chicken with Black Beans and Corn

YIELD: Makes 4 servings

INGREDIENTS:

½ tablespoon ground cumin

½ tablespoon ground coriander

Salt and freshly ground black pepper to taste

2 boneless skinless chicken breast halves, pounded thin

3 tablespoons olive oil

½ medium red onion, chopped

1 jalapeno pepper, seeded and finely chopped

1 frying pepper, seeded and diced

Two 14-ounce cans black beans, rinsed and drained

2 cups thawed frozen corn kernels

One 14-ounce can diced tomatoes, lightly drained

2 tablespoons wine vinegar

3 tablespoons chopped cilantro

4 scallions, trimmed, washed and sliced

DIRECTIONS:

Combine the cumin, coriander, salt and pepper and rub into both sides of chicken. Heat oil in a large skillet over medium heat; brown the chicken, turning once, until golden, about 4 minutes per side. Remove from skillet; set aside to keep warm. In same pan, stirring constantly, cook onion and peppers over medium heat, about 2 minutes. Add beans, corn, and tomatoes and cook over medium heat until liquid is evaporated. Place in serving bowl and toss with vinegar, cilantro and scallions; add more salt and pepper to taste. Slice chicken and place over mixture. Serve hot or warm with green salad and rustic bread, if desired.

YIELD: Makes 4 servings

INGREDIENTS:

2 large lemons

One 3½- to 4-pound chicken, cut up

2 pounds carrots, peeled and cut into 2-inch diagonal slices

4 medium potatoes, scrubbed and quartered

1 large onion, cut into 8 wedges

¼ cup olive oil

2 tablespoons fresh oregano or 2 teaspoons dried

Coarse salt and freshly ground pepper to taste

DIRECTIONS:

Preheat oven to 425 F. Squeeze the juice and scrape the pulp from one lemon. Cut the other lemon into 8 slices. In a shallow roasting or baking pan, toss together the chicken, carrots, potatoes, onion, oil, lemon juice and pulp, oregano, salt and pepper until thoroughly coated. Place a lemon slice on each chicken piece. Roast, turning the veggies once or twice, until carrots and potatoes are tender and chicken is golden, about 45 to 50 minutes.  Serve hot with a green salad, if desired.

Entrepreneurship is not for the faint of heart. Entrepreneurs face many challenges when starting a new business. The challenges are even greater for women entrepreneurs.

While the U.S. Census Bureau shows that the number of women-owned businesses increased by 45 percent from 2007 to 2016, a faster rate than the national average, research shows there is still a significant gap between women-owned and male-owned businesses.

A report by SCORE, “The Megaphone of Main Street: Women’s Entrepreneurship,” published in spring 2018, shows that women-owned businesses still fall behind in revenue and financing. However, the same report shows that mentorship increases a business’s chances of opening and staying open. Networking and connecting with other women entrepreneurs can yield the same results. These outside perspectives help refine a business’s practices and decision-making.

Connections with other business women and entrepreneurs is invaluable and can really make a difference in the success of a business venture.

Linda Johnson of Chocology Unlimited knows the value of these connections. When first starting her business, she met a kindred spirit in Maria Camassa of Lucky Lou’s Gourmet Rice Pudding. Both were starting new businesses after previous careers and quickly realized that they had very similar philosophies. “Even though we have very different directions for our businesses we still bounce ideas off of each other. Sometimes all you need is a different perspective,” says Johnson. The two became business supports for each other.

As successful women entrepreneurs, the two are often too busy to physically meet, but they do keep in touch. Both women are early birds who spend a lot of time driving so phone calls from the car are their main way of communicating. And communicate they do. Johnson says these calls are often for sharing thoughts and getting input on new business ideas. “We laugh … a lot. Mostly at ourselves.” With the laughter comes true, honest and valuable feedback. Johnson says her connection with Camassa is so important, not only for her business but for herself. It is great to not only get an outside opinion but also encouragement and understanding.

Mentors, partners and role models are beneficial to the success of women-owned small businesses but not always easy to find. Women entrepreneurs should reach out to other women entrepreneurs and professionals.

Not sure where to find them? Join your local chamber of commerce. Or visit one of the many business networking organizations on Long Island. Some even focus on the success of women. SCWBEC, the Suffolk County Women’s Business Enterprise Coalition, is an organization whose mission is to support their members through networking with other women business professionals.

Each fall, the Middle Country Public Library’s Miller Business Center hosts the Women’s EXPO, a venue for women entrepreneurs on Long Island to market their products. But more importantly, this event strives to connect its participants with other women entrepreneurs and business professionals.

Women entrepreneurs have come a long way, but there is still a ways to go toward complete equity. Partnering and mentoring between women entrepreneurs is a good way to get there.
